As you might have seen, I have started experimenting with Homemade Recipes made from a fresh Coconuts.
I have bought 7 of the desiccated Coconuts in our local market just because I loved the shells.
Well, actually I wanted my husband to bring me coconut shells bowls from Sri Lanka. They sell them almost everywhere and he kept sending me pictures for me to choose. But. They were all beautifully decorated and each one of them was layered with a shiny coating. And that is exactly what I did not
So after a bit of researching and seeing, that you can actually just make them yourself, I have decided to start the process.
The second inspiration was the image I have seen with Ice cream placed inside the coconut shells. That made me really wanted to make one myself. And what would be the best Ice to put into the coconut shells? Of Course Coconut ice cream.
After I have broken the coconuts into halves, I have realized, I have bought a bit too much. So what to do? Since I have them, I can as well make some recipe. And there was born our post on How to make Coconut Milk from scratch. I had no idea how tasty and so different the texture will be. Till now we have always bought Coconut Milk in a box. But from now on, I guess I will be making homemade Coconut Milk more often.

This has been immediately changed and declined by my daughter. She loves when the Ice cream is creamy and soft and she did not want any shreds inside. I mean you can add it if you like and prefer. But in this recipe, I have left them aside.

How to make Keto Coconut Ice Cream from scratch?
Step One: Coconut Milk
In this step, you can either use a store bought Coconut Milk, or make your own. If you would like to learn how to make your own Coconut Milk from scratch, have a look at our post, where I have described complete steps from a real scratch. Starting with breaking the actual coconut up to making the actual milk. It is very informative and I would suggest you try it at least ones. You will realize the lovely creamy taste, which is incomparable to the store bought milk.
Step Two: Mix Whipping Cream
Together with your choice of sugar substitute mix whipping cream until stiff peak. As you can see in the video, I use my old Kenwood machine, which I have for the last 20 years and love it. Well, I would already buy a new one. I am waiting for years, that it will stop working. 20 years later – works still perfectly.
Step Three: Add Glycerin
Step Four: Add Xanthan
Adding Xanthan into the Keto Ice Creams will make the texture much creamier. If you do not have one of the ingredients at home, that is also not a big problem. You will still achieve great results and your Keto Coconut Ice cream will be as tasty as it should be. This is just a tiny bit better.
Step Five: Add Coconut milk
Add half of the coconut milk into the whipping cream and slowly mix it together. Once mixed, add the rest of the milk and mix until all of the ingredients are combined.
Step Six: Make Ice
In this step you have few choices:
- You can keep the mixture in the fridge for a few hours to cool down. This will also thicken the consistency even more, and Ice cream will be done a bit faster.
- You can pour the mixture straight into your Ice Cream Maschine and let it run as per instruction.
- No ice machine: You can pour the mixture into a container, cover it with cling fillm and place it into the freezer. Make sure, you mix the mixture every 20-40 minutes if you would like to get the fluffy like consistency.
Step Seven: Serve

How to make No Churn Keto Ice Cream?
If you have a problem with your ice cream getting too icy or churny, you can add Glycerin as I have.
Second option is also adding alcohol. Vodka is one of the best
B adding alcohol, your ice cream will not freeze completely and will be completely churn-free as well.
But as all of those recipes are made especially for my daughter, I have always gone with the choice of glycerol.
How to make creamy Ice Cream?
Using an ice
Adding Xanthan helps greatly as well. Especially when you do not have an Ice Cream machine and have decided to do it just by placing the ice cream into the freezer to freeze.
As mentioned above, if you are not going to use Ice cream machine, make sure you cover the bowl with a clingfilm, so no air gets into it while freezing. Also, make sure you mix the Ice Cream regularly at least every 20 – 40 minutes until you are satisfied with the texture.

How to store Keto Ice Cream?
Storing this Keto Coconut Ice Cream is pretty easy. Pick an air-tight container and place it into the freezer. There you can keep it for up to 6 months.
I normally suggest using everything after 6
Just bare in mind, that it takes a while for the ice cream to unfreeze for serving. So if you do want to serve it, take it out at least 30 – 40 minutes beforehand.
How to unfreeze Keto Ice Cream?
When you will take your Coconut Keto Ice Cream from the Freezer, you will realize, it is stone rock hard. Do not panic. This is normal.
The ice cream needs to warm up for quite a while until it gets the right consistency.
I normally take it out at least 40 minutes before planning to serve. Once it start melting you can try and mix it gently so the creaminess comes back.
