Let us start with our super easy and perfect keto recipe for homemade coconut ice cream, which is not only egg-free, gluten-free, and sugar-free but also made with our homemade coconut milk and is no churn and creamy like no other.

STEP-BY-STEP INSTRUCTIONS FOR MAKING A HOMEMADE KETO ICE CREAM RECIPE
Step One: Make Coconut Milk
You can use store-bought coconut milk or make your own in this step. If you want to learn how to make coconut milk from scratch, look at our post, where I have described complete steps from absolute scratch. Starting with breaking the actual coconut up to making the natural milk. You will realize the lovely creamy taste, incomparable to the store-bought milk. It is very informative, and I suggest you try it at least once.
Step Two: Whisk Heavy Cream
With your choice of sugar substitute, whisk 2 cups of heavy cream until stiff peaks.
Step Three: Add Glycerin
Adding glycerin makes it churn-free while freezing. Glycerin is often used in low-carb lifestyles, especially when making ice creams. It is a simple Polyol used as a thickening agent. It has a slightly sweet flavor.
Step Four: Add Xanthan
This is a little bit better. Adding xanthan to the low-carb ice creams will make the texture much creamier. If you do not have one of the ingredients at home, that is also not a big problem. You will still achieve great results, and it will be as tasty as it should be.
Step Five: Add Coconut Milk
Add half the coconut milk to the whipping cream and slowly mix it. Once mixed, add the rest of the milk and mix until all of the ingredients are combined.
Step Six: Make Ice
In this step, you have a few choices:
- You can keep the ice cream mixture in the fridge for a few hours to cool down. It will thicken the ice cream consistency even more and be done faster.
- You can pour the mix straight into your machine or a Cuisinart ice cream maker and let it run as instructed.
- Don’t own an ice cream machine: You can pour the mixture into a container, cover it with cling film and place it into the freezer. Mix the mixture every 20-40 minutes if you want to get a fluffy consistency.
Step Seven: Serve
Serve this best ice cream right away and enjoy.

How To Make No Churn Easy Keto Ice Cream?
If you have a problem with your ice cream getting too icy or churning, you can add glycerin, as I have.
The second option is also adding alcohol. Vodka is one of the best suggestions since it has a mild flavor.
By adding alcohol, it will not freeze completely and will be completely churn-free as well.
But as all of those recipes are made especially for my daughter, I have always chosen glycerol.
Can I Add Vanilla Beans to Keto Vanilla Ice Cream Recipe?
You can add our vanilla extract and swap coconut milk with almond milk for a more neutral taste. Those two replacement gives you a vanilla keto ice cream base with the pure vanilla flavor you have been dreaming of, even better, like regular ice cream.
You can have it as a base and make a different batch of ice cream at home every day, adding fruits or other ingredients.
How To Make Creamy Homemade Low Carb Ice Cream?
An ice machine will help significantly achieve the best creaminess you can have. By mixing it continuously while freezing, the air gets into the ice cream and makes it fluffier and creamier.
Adding xanthan helps greatly, especially if you do not have an ice cream machine and have decided to do it by placing it into the freezer to freeze.
As mentioned above, if you are not going to use a machine, cover the bowl with a clingfilm so no air gets into it while freezing. Also, mix it regularly, at least every 20 – 40 minutes, until you are satisfied with the texture.
Can I Make Keto Ice Cream in a Mason Jar?
This is a question lots of people ask. I am sure you have already seen images on the internet with simple instructions for placing ingredients into the mason jar, mixing it, and freezing it.
You can do the same with our recipe. Mix heavy cream properly before adding other ingredients to get the perfect consistency.
Mixing it again and again while in the freezer will help you achieve better creaminess.
When you have more strawberries left, this strawberry mint smoothie is also the perfect base for Mason jar ice cream.
Can I Make Low Carb Ice Cream Without an Ice Cream Maker?
Yes, you can, and it is pretty easy, even if you don’t have an ice cream machine. Just follow all the steps until placing it into the ice cream machine. Instead, place the mixture into a container, which you cover with clingfilm to avoid getting air into it while freezing.
Mix every 20-40 minutes until you are happy with the consistency and serve.
Keep the mixture in the fridge for a few hours. This will thicken the consistency even more, and your ice cream will be much fluffier at the end. Also, you save freezing time.
Storing this keto coconut ice cream is straightforward. Pick an air-tight container and place it into the freezer. There you can keep it for up to 6 months.
How to Unfreeze Low Carb Ice Cream?
When you take your coconut keto ice cream from the freezer, you will realize it is stone rock hard. Do not panic. This is normal.
The ice cream must warm up for quite a while until it gets the right consistency.
I usually take it out at least 40 minutes before planning to serve. Once it starts melting, try and mix it gently so the creaminess comes back.
And just in case it has melted more than you would expect, place it back into the freezer for a few minutes, and it will be frozen again.
