  • The first thing to do is wash and pat dry the blueberries. Make sure they are completely dry to help the chocolate combine properly. Prepare your sugar-free chocolate. If you are using a chocolate bar, slice them into small pieces so they will melt quicker. Instead of chopped chocolate, you can also use dark chocolate chips for easy melting.
  • Switch your instant pot on sauté, add water and let it simmer. Place the bowl that fits on top. Place the chocolate and coconut oil together in a glass bowl and start melting the chocolates. Stir the chocolate with a stick or spoon until the chocolate is completely melted, smooth, and well combined. 
  • After a few minutes, dip each blueberry into the melted chocolate using long tweezers or tongs, ensuring it is evenly coated. Place each on a tray with parchment paper.
  • If you do not have enough time to dip each blueberry, you can drop them all together. Place 1 cup of blueberries into the melted chocolate, ensuring they are all evenly coated. Use a sieve to get the blueberries from the bottom of the bowl and transfer each to a parchment-lined tray. Make sure to make a space in between the berries so they won't stick together. Pop the tray into the fridge and let the chocolate-covered blueberries chill until the chocolate hardens.
