Instructions

  • Prepare all ingredients together. For a more crunchy version, skip honey replacement. 
  • Heat the cooking pan and pour in the honey-like sweetener and brown sugar. Using a spatula, stir everything together lightly on low heat. 
  • On a heated pan, make sure both sweeteners are fully melted and mixed. Let them boil slightly, letting the water dissolve and evaporate slightly from the honey-like sweetener for a thicker and crunchier option. You can also add vanilla extract, which is optional.
  • Once you melt both of the sweeteners, add sesame seeds. Stir constantly and combine sugar with seeds. Make sure the seeds are fully coated with sweeteners.
  • Once all the seeds and the sweeteners are thoroughly mixed, transfer them onto a lightly greased parchment paper. Let them cool for 2-3 minutes. Using a rolling pin, start rolling the mixture into the thinnest possible. You can place another piece of parchment paper on top for an easier spread. Check the video for a better understanding. I have used wet hands and a silicone spatula to shape the corners.
  • Once the mixture is spread fully and made to your desired thickness, slice the sheet into your desired shapes and sizes with a wet knife. It is easier to cut it while the mixture is still soft, as once it hardens, it will take double the time. Let it cool thoroughly.
  • Once everything is cooled, using scissors, cut the sugar-free sesame bars into the shapes, leaving the paper on it. It will help you with storage, and it’s perfect for packaging later on. Once ready to eat, peel and enjoy.
