They are trendy in our kitchen because of the minimal carb intake, and I add them to almost everything possible.
They are always in our pantry in bulk, so I never run out.
Sesame Snaps
This delicious, sweet snack, primarily popular in the Mediterranean, Indian and Asian cuisines, is a little snack everyone loves.
It is similar to a dessert in Greece called Pasteli, made and sold all across the country and favored by all.
I first saw those treats when I flew for Emirates Airlines. I used to buy them in little Indian shops, which I discovered on our regular layovers in the UK.
Then, years passed, and I completely forgot about them.
While living in Europe, I would occasionally see something similar made from peanuts or other nuts or seeds, and I would buy it for my daughter’s school lunches.
Then came March 2020 and weeks everyone will remember for years to come. That made me think of making snacks and dishes using the ingredients in our pantry.
Of course, four boxes were inside.
I have made our famous raw seed crackers bread four times, but I needed something sweet. And then my brain woke up.
How to Make Sesame Snaps Recipe
Super chewy and easy to make sugar-free sesame bars made of natural ingredients are perfect as your candy whenever you have a sweet tooth. Those “honey” sesame snaps are fully nut-free, gluten-free, and grain-free, made in no time and perfect for a lunch box option or as a meal prep mini dessert. Filled with healthy fat and fiber, that is what we are all looking for.

STEP-BY-STEP INSTRUCTIONS ON HOW TO MAKE SUGAR-FREE SESAME BRITTLE BARS
First step: Ingredients
Prepare all ingredients together. For a more crunchy version, skip honey replacement.
Second Step: Add Sweeteners
Heat the cooking pan and pour in the honey-like sweetener and brown sugar. Using a spatula, stir everything together lightly on low heat.
Third Step: Melt Sweeteners
On a heated pan, make sure both sweeteners are fully melted and mixed. Let them boil slightly, letting the water dissolve and evaporate slightly from the honey-like sweetener for a thicker and crunchier option.
Once you melt both of the sweeteners, add sesame seeds. Stir constantly and combine sugar with seeds.
Make sure the seeds are fully coated with sweeteners.
Fifth Step: Pour and Spread
Once all the seeds and the sweeteners are thoroughly mixed, transfer them onto a lightly greased parchment paper. Let them cool for 2-3 minutes. Using a rolling pin, start rolling the mixture into the thinnest possible. You can place another piece of parchment paper on top for an easier spread. Check the video for a better understanding.
I have used wet hands and a silicone spatula to shape the corners.
Sixth Step: Cut and Cool
Once the mixture is spread fully and made to your desired thickness, slice the sheet into your desired shapes and sizes with a wet knife. It is easier to cut it while the mixture is still soft, as once it hardens, it will take double the time.
Let it cool thoroughly.
Seventh Step: Cut into shapes
Once everything is cooled, using scissors, cut the sugar-free sesame bars into the shapes, leaving the paper on it.
It will help you with storage, and it’s perfect for packaging later on. Once ready to eat, peel and enjoy.

You can for sure bake those little treats in the oven. A great idea is to use toasted sesame seeds. Toast them before making this recipe and store them in a separate bowl. Mix them with brown sugar sweetener and spread a thin layer onto a baking tray. The thinner the sheet, the crunchier it gets.
Bake in the oven for 10 minutes at 150 Celsius or 300 Fahrenheit.
Before they cool down, cut them into rectangular or square shapes.
What Else Can I Make Sugar-Free Brittle From?
You can use any of the seeds or nuts to make a sugar-free brittle.
You can use almonds, coconuts, walnuts, hazelnuts, pecans, sunflower seeds, pumpkin seeds, chia seeds, hemp seeds, black sesame seeds and more.
How Can I Store Sesame Snaps?
Storing those sesame seeds snaps is pretty straightforward.
I keep them on the kitchen counter, and they last for weeks to come without any issues.
If you like, you can place them in an airtight container and store them in the kitchen pantry or refrigerator for up to a month.
Can I Freeze Sugar-Free Sesame Seeds Snaps?
You can quickly freeze those brittles. Place them into a container or cover them with parchment paper for easier handling later. Once you need a few, take a few pieces from the freezer and let it thaw naturally.

They are known to cause blood sugar spikes in most people. Their granular sweeteners do not do it, just the syrups. I would substitute ChocZero syrup in its place. ChocZero does not spike blood sugar, and they have syrups in a number of different flavors, so you could even play around with the flavors in this brittle by using different syrups. I have used Sugar-Free Honey, which has got a thick consistency. Depending on the Brand and ingredients in, Mapple syrup should work as well.
What about 100% liquid monkfruit sweetner? I just got a tiny bottle (though haven’t tried yet)… looks a lot like a similar viscosity of honey
