Sesame seeds are very popular in our kitchen and I add them to almost anything possible. 

I have already made Sesame Keto Crackers, having them as a big part of our Raw Seed Keto Crackers Bread. I sprinkle them on top of our Avocado Burger

They are in our Keto Pantry at all times in kilos, so I never ever run out of them. 

Sesame Seeds

Sesame Seeds with its rich nutty and oily flavor is a big part of various cuisines around the world. 

They can be added to sweet as well as savory dishes for its neutral taste. 

Filled with Vitamin B, iron, magnesium, zinc and calcium with its oil containing up to 50% of protein Sesame Seeds are a big part of anyone Healthy Kitchen Pantry and diet.

This delicious sweet snack,  mostly popular in the Mediterranean, Indian and Asian cuisines is a little snack everyone loves.

It is also similar to a Greek dessert called Pasteli, made and sold all across the country and favored by all.

Story of my Sesame Seeds Bars

The first time I have come across those Sesame Brittle Snaps was when I used to fly for Emirates Airlines. Our regular layovers in the UK, let me buy them in Little Indian Shops, I have discovered once with one of our colleagues.

I do not really remember the brand, I used to buy, and even though living in Dubai at that time and having Asian shops all over, this brand was only available in the UK.  In every single shop. 

So what did I do?

Every layover I had, I filled my suitcase with those lovely little single-serving Sesame Seeds Brittle Bars. 

I would then eat them every time I had a taste for something sweet as I have never ever actually baked at that time. 

Then years have passed and I have completely forgotten about them. 

Living back in Europe, I would occasionally see something similar made out of Peanuts or other nuts or seeds and I would buy it for my daughter’s lunches to school.

Then came March 2020 and weeks everyone will remember for years to come. 

Due to a Worldwide Pandemic, the whole world has become still and we were all advised to stay at home. 

And that made me start thinking of making Keto Snacks and dishes out of our Pantry and ingredients I had available at home.

And of course one of the shelves was filled with 4 boxed of Sesame Seeds.

So I have made our famous Raw Seed Keto Crackers Bread already 4 times, but I needed something sweet. 

And then my brain woke up.

Let us make Keto Sesame Brittle Bars

I always have lots of Seeds, my pantry is filled with various Sugar Sweeteners and Sukrin Gold and Clear Sweetener Liquids are always in here as well. 

And there I went to experiment.

And now I can share our quick and easy Sugar-Free Sesame Brittle Bars Recipes with all of you.

How to make Keto Sesame Brittle bars?

Kitchen Gadgets you might need:

  • Cooking Pan
  • Silicone Spatula
  • Parchment Paper

Ingredients needed:

  • Sesame Seeds
  • Sugar-Free Honey
  • Brown Sugar Substitute
  • Vanilla Extract – Optional

STEP BY STEP INSTRUCTIONS ON HOW TO MAKE SUGAR-FREE SESAME BRITTLE BARS

First step: Add Sweeteners

In this recipe, I have purely used Sukrin Brand for both of the sweeteners.

If you do not have Sukrin,  you could use any of the sugar-free honey as well as a brown-sugar replacement. I have personally not tried it but I do believe most of the brands are very similar and would work for this recipe. I am going to try it with Lakanto brown sweetener since I have them as well in my next batch.

Heat up the cooking pan and pour honey-like sweetener as well as brown sugar replacement.

Second Step: Melt Sweeteners

On a heated pan, make sure both of the sweeteners are fully melted and mixed together. At this time you can let the water evaporate a little bit from the honey-like sweetener for a thicker and crunchier option.

You can also add Vanilla Extract which is totally optional.

Third Step: Add Sesame Seeds

Once both of the sweeteners are fully melted add sesame seeds and fully mix everything.

Make sure the sesame seeds are fully coated with sweeteners.

Fourth Step: Pour and Spread

Once all of the sesame seeds and the sweeteners are fully mixed pour them over a parchment paper and start rolling the mixture into the thinnest possible. You can use a rolling pin and parchment paper on top for an easier spread. Check the video for a better understanding.

To shape the corners I have used wet hands together with a silicone spatula.

Fifth Step: Cut and Cool

Once the mixture is spread fully and made into your desired thickness cut the Keto Sesame Seeds Brittlewith with a wet knife into your desired shapes and sizes. It is easier to cut it while the mixture is still soft as once it hardens it will take double the time.

Let all of the Keto Sesame Brittle Bars cool fully.

Sixth Step: Cut into shapes

Once everything is fully cooled using scissors cut all of the Sugar-Free Sesame Brittle Bars into the shapes leaving the parchment paper on it.

Leaving the parchment paper on the bars will help you with storage and it’s perfect for packaging later on.

Tips and Tricks

Use of Parchment Paper – using parchment paper over the silicone baking sheet for two reasons.

First, I can cut that sugar-free sesame brittle into the shapes without worrying that I will cut the whole sheets.

2. once hardened, I just cut the shapes with s, leaving the parchment paper on for an easy storage

Sweetener – If you do not have Sukrin,  you could use any of the sugar-free honey as well as a brown sugar replacement. As a definition, any sugar-free candy is considered Keto, because it does not contain any of the real sugar but sugar replacements.

The real difference is what type of sugar replacement is used for a particular sugar-free candy.

The best advantage of homemade Keto Desserts, Candies or Sweets is that you know exactly what kind of sweetener you have put inside.

There are lots of store-bought sugar-free candies filled with artificial sweeteners, which in lots of cases could be disturbing to your gut and you might have problems if eaten in larger quantities. 
Therefore make sure you read all the labels and nutritional information when buying any sugar-free, keto or low-carb dessert sweeteners candies or meals.

How to make Sugar-Free Sesame Brittle Crunchy?

To make this Sugar-Free Sesame Brittle fully crunchy you can entirely skip the honey and stay only with the brown sugar replacement. I have made those little brittle snaps already with peanuts on top for our Keto Peanut Butter Cheesecake Recipe.

What else can you make Sugar-Free Brittle from?

To make a Sugar-Free Brittle, you can use any of the low-carb and keto seeds or nuts.

The same applies to Sugar-Free Brittle options. 
You can use almonds, coconuts, walnuts, hazelnuts, pecans, sunflower seeds, pumpkin seeds, Chia seeds, hemp seeds and more. 

How can you store Keto Sesame Snaps?

To store those Keto Sesame Seeds Snaps is pretty easy.

I just keep them on the kitchen counter and they last for weeks to come without any issue. 

If you would like, you can place them on to an airtight container and keep them either in the kitchen pantry or the refrigerator for up to a month.

Can you freeze Sugar-Free Sesame Seeds Brittle?

You can easily freeze those Sugar-Free Sesame Seeds Brittles. 
Just place them into a container or cover them with parchment paper for easier handling later on. 
Once you need a few, take a few pieces from the freezer and let it thaw naturally.

  1. These look amazing! For those who are following low carb to lose weight or control blood sugar, I would like to suggest you not use Sukrin syrups. They are known to cause blood sugar spikes in most people. Their granular sweeteners do not do it, just the syrups. I would substitute ChocZero syrup in its place. ChocZero does not spike blood sugar, and they have syrups in a number of different flavors, so you could even play around with the flavors in this brittle by using different syrups. Just a suggestion. Thank you for all of your amazing recipes!

      Thanks a lot, this Roxana. It is a great suggestion I am sure would be useful for readers. I live in Europe and ChocZero is not available here.
      Till now I have always used Sukrin since it does not spike my daughters’ blood sugar at all. But I for sure need to get that Choczero as well somehow.

  2. What about 100% liquid monkfruit sweetner? I just got a tiny bottle (though haven’t tried yet)… looks a lot like a similar viscosity of honey
