Homemade Sugar-Free Maple Syrup is made of a sweetener of your choice, Xanthan Gum and Maple Extract. 

What Sweetener is best to use for Keto Syrup?

Preferred sweeteners to make any Keto Syrups are Allulose, Monk Fruit Sweetener, or Xylitol.

Xylitol has a tiny bit of carbs, which you should consider when counting your macros.

It is also poisonous to the dogs, so be careful if you have some pets at home.

Erythritol is my least favorite as it tends to crystalize after cooling. 

But if you do not have any other sweetener at home, Erythritol is also a great suggestion. 

To avoid excessive crystalizing, I suggest using distilled water and graining your crystalized Erythritol beforehand. 

And just in case it still does crystalize, no worries.

By warming, this Keto Maple Syrup tiny bit will melt all of the crystals again, and you will get a beautiful smooth consistency.

Can You Use Sugar Free Maple Syrup in Baking?

To use homemade Keto Maple Syrup in baking depends on what type of sweetener you have used and how thick or how much of a Xanthan Gum you have used. 

If you would like to use this Keto Maple Syrup for baking, I suggest reducing the water-sugar mixture to a minimum, so you are left with primarily thick melted sugar. 

What can I use Keto Syrup with?

One great ide is to add it into dressings or make healthy coleslaw with it.

STEP BY STEP INSTRUCTIONS ON MAKING THE BEST EVER KETO MAPLE SYRUP RECIPE

First Step: Prepare Ingredients for Keto Maple Syrup

Prepare all the ingredients you are going to use.

Regarding a sweetener, I would suggest using Allulose, Monk Fruit Sweetener, or Xylitol.

It is best to have either of them in a powdered version to dissolve quickly.

Xanthan Gum is optional, but it allows you to have a more significant volume of this fantastic Low Carb Maple Syrup. 

For whisking, please do use a metal whisk, as plastic spatula might melt while sugar is thickening (my own experience)

Second Step: Start with Water and Sugar Substitute

Start by switching your stovetop on.

Add water and sweetener into a cooking pot and whisk until all melts.

Third Step: Cook

Let the whole mixture cook for approximately ten to fifteen minutes total time. 

The minutes depend on how thick you wish your maple syrup to be.

Fourth Step: Xanthan Gum

Once you see a part of the water has evaporated, it is time to start whisking in Xanthan Gum. 

As Xanthan gum might form into small clumps, it is essential to mix vigorously. 

Also, keep adding Xanthan gum bit by bit, which will prevent clumping. 

Whisk until you see that all of the Xanthan Gum has been dissolved.

Fifth Step: Maple Extract

Switch the heat off and add your Maple Extract.

I have experienced that every brand of Maple extract has a different consistency.

Mine, for example, is dark brown and thick.

Depending on the consistency and how much color you would like to add to your maple syrup, add one to two tablespoons of Maple Extract.

Sixth Step: Let cool and wait for the thickening process.

Once all is mixed, you can let it cool in the pot to see your desired consistency.

You will realize the cooler it gets, the thicker your keto maple-flavored Syrup becomes. 

Once satisfied, pour it into a pourable jar or simple Mason jar for storage.

Tips and Tricks

  • Only Crystallized Sweetener – simple blend it in your Magic Bullet, Blender, or a Coffee Grinder 
  • Metal Whisk – please do not use a plastic spatula, as this might melt while sugar is thickening (my own experience) 
  • Not sweet enough – add a few drops of stevia
  • Only Erythritol at home – use powdered Erythritol, which can easily be achieved by simply blending it in your Magic Bullet. Use distilled water, which can lessen the crystallization afterward, and do not store in the fridge as it will recrystallize much easier. 
  • No Xanthan Gum – use Guar Gum as a replacement.

What can I use instead of Xanthan Gum?

There are two additional choices for thickening in our Low Carb lifestyle apart from Xanthan Gum. 

  • Guar Gum – does not have to be cooked like Xanthan Gum to start the process of thickening, but you might need to double the amount compared to a Xanthan Gum. 

            Guar Gum will also continue thickening as it cools down. 

  • Glucomannan – is another healthy option for a natural thickener.

How to get rid of clumps from Xanthan Gum?

Sometimes you might have realized that your Xanthan Gums do not fully dissolve and leave tiny clumps in the mixture. 

Tiny clumps can appear when you do not vigorously whisk while adding the Xanthan Gum into your Syrup or that the Syrup is not hot enough for the Xanthan Gum to start the process of thickening. 

No worries if that happens. Simply place the whole mixture into your blender, and the problem is solved. 

Does Sugar-Free Maple Syrup go bad?

This Homemade Keto Maple Syrup should not go bad for at least a month. Stored properly and following all the cooking steps, you should not have problems with it going bad.

How do you store Sugar-Free Maple Syrup?

Pour it into your glass pouring jar or a mason jar and close properly. 

This Maple Syrup can be stored on your kitchen counter or a refrigerator and will last for at least a month.
