What Sweetener is best to use for Keto Syrup?
Preferred sweeteners to make any Keto Syrups are Allulose, Monk Fruit Sweetener, or Xylitol.
Xylitol has a tiny bit of carbs, which you should consider when counting your macros.
It is also poisonous to the dogs, so be careful if you have some pets at home.
Erythritol is my least favorite as it tends to crystalize after cooling.
But if you do not have any other sweetener at home, Erythritol is also a great suggestion.
To avoid excessive crystalizing, I suggest using distilled water and graining your crystalized Erythritol beforehand.
And just in case it still does crystalize, no worries.
By warming, this Keto Maple Syrup tiny bit will melt all of the crystals again, and you will get a beautiful smooth consistency.

To use homemade Keto Maple Syrup in baking depends on what type of sweetener you have used and how thick or how much of a Xanthan Gum you have used.

First Step: Prepare Ingredients for Keto Maple Syrup
Prepare all the ingredients you are going to use.
Regarding a sweetener, I would suggest using Allulose, Monk Fruit Sweetener, or Xylitol.
It is best to have either of them in a powdered version to dissolve quickly.
Xanthan Gum is optional, but it allows you to have a more significant volume of this fantastic Low Carb Maple Syrup.
For whisking, please do use a metal whisk, as plastic spatula might melt while sugar is thickening (my own experience)
Second Step: Start with Water and Sugar Substitute
Start by switching your stovetop on.
Add water and sweetener into a cooking pot and whisk until all melts.
Third Step: Cook
Let the whole mixture cook for approximately ten to fifteen minutes total time.
The minutes depend on how thick you wish your maple syrup to be.
Fourth Step: Xanthan Gum
Once you see a part of the water has evaporated, it is time to start whisking in Xanthan Gum.
As Xanthan gum might form into small clumps, it is essential to mix vigorously.
Also, keep adding Xanthan gum bit by bit, which will prevent clumping.
Whisk until you see that all of the Xanthan Gum has been dissolved.
Fifth Step: Maple Extract
Switch the heat off and add your Maple Extract.
I have experienced that every brand of Maple extract has a different consistency.
Mine, for example, is dark brown and thick.
Depending on the consistency and how much color you would like to add to your maple syrup, add one to two tablespoons of Maple Extract.
Sixth Step: Let cool and wait for the thickening process.
Once all is mixed, you can let it cool in the pot to see your desired consistency.
You will realize the cooler it gets, the thicker your keto maple-flavored Syrup becomes.
Once satisfied, pour it into a pourable jar or simple Mason jar for storage.
Tips and Tricks
