  • Preheat your oven to 175 Celsius or 350 Fahrenheit. First, you have to melt your sugar-free dark chocolate with butter in a double boiler. You can see on the video exactly how I prepared it. All you have to do is switch your Instant Pot to the sauté function and add boiling water. On top of the Instant Pot, place a glass bowl that fits and let the bowl warm up.
  • Once you see the water inside an Instant Pot boiling and your glass bowl has been warmed up, add sugar-free dark chocolate broken into smaller pieces together with butter. Keep melting until both chocolate and butter are fully incorporated and liquid. Once melted, switch off your Instant Pot and let the mixture cool down.
  • Using your kitchen machine, start mixing the egg whites first. Keep mixing until fully stiff and place aside for later.
  • Use another bowl where you mix your egg yolks with the sweetener of your choice.
  • Once your egg yolks are thoroughly mixed and incorporated into the sugar sweetener, start adding all other ingredients. Start with melted chocolate and pour slowly while the egg yolks are mixing. Ensure the chocolate is cool. Add almond flour, baking powder, vanilla essence, and a cup of coffee and mix thoroughly.
  • Add a tablespoon of Tabasco.
  • Slowly add fluffy egg whites and fully blend in.
  • Pour the whole mixture onto your baking tray. Bake for 20 minutes. Let the brownies cool thoroughly before serving.

Notes

  • Eggs at room temperature – keeping eggs at room temperature is advised since you were mixing the warm chocolate afterward. 
  • Chocolate not so hot – make sure the chocolate is not hot while pouring. Otherwise, your whole brownie mixture will crumble.
  • Decaf for kids – Make these brownies with decaffeinated coffee if you have kids in the house.
  • Add Tabasco for adults – if you’re going to serve those brownies only to adults who like spicy food, I suggest adding one more tablespoon of Tabasco.
  • Let keto brownies fully cool to set – try not to cut or move brownies before they’re fully cold. Those keto brownies need to be set fully. Otherwise, they will crumble while cutting.
  • Chocolate toppings – pour sugar-free magic shell on top and scoop of whipped cream for a new experience.
  •  Fridge - I would advise placing them in the refrigerator for an hour or so or keeping them on the counter for several hours to ensure they’re fully set and cooled.
