Extra Fudgy Keto Brownies
Have you ever wondered what makes brownies to be fudgy and how to achieve that?
What makes any brownies fudgy is the fat they contain. More fat you add, the more fudginess and gooeyness you get. I have decided on this recipe to use plain butter we all have at home. And not a spoon, or quarter or half. Immediately the whole Block. 200g to be precise.
So we have them double extra fudgy.
Another reason those Keto Brownies are super fudgy is chocolate. Pure Cocoa powder will never give you that fudginess, even if you add 2 blocks of butter.

Instant Pot as Double Boiler
One additional discovery I have made while making this superb Fudgy Spicy Keto Brownie.
It is not my invention, and I have seen it already a few times but never tried it. Melting chocolate with the Instant Pot is the best ever tip I can give you.

You not only have much less mess around your stove, but you can move your Instant Pot exactly where you need it to be.
That is the most important if your working desk is not exactly right next to the stove.
All you have to do is boil the water, switch the Instant Pot on saute and find a glass bowl that fits on top of the Instant Pot. You can have a look at the video for the exact steps I have made.
I do hope once you will try it yourself, you will fall in love as I did and you will never ever use your double boiler any other way.
Tabasco for Keto Brownies
The beautiful addition you would have not expected or guessed.
I love chocolates with a spicy touch. Especially the ones that have chili peppers in.
And that made me think.
I could either add the crushed chili directly into melted chocolate but I was not sure if that would spice up all of the brownies at the same rate.
Also what stopped me, was that one piece not fully crushed, that will get onto your tongue unexpectedly as I usually find while eating my Bone Broth.

Personally I do not mind that, but I did not want my daughter to experience that.
Then I thought of Tabasco.
Tabasco gives you the spiciness you choose and spreads it evenly all over the cake.
And because Tabasco contains a bit of salt as well, I did not have to add another ingredient in.
How to make the Spicy and extra Fudgy Keto Brownies
Kitchen gadgets you might need
- Instant Pot for double Boiling
- Glass Bowl
- Kitchen mixer
- Baking tray
- Adjustable Baking Cake Mold
- Parchment Paper
Ingredients needed

STEP BY STEP INSTRUCTIONS ON HOW TO MAKE THE BEST SPICY KETO BROWNIE RECIPE
First Step: Double Boiler
As a first step you have to melt your sugar-free dark chocolate together with butter in a double boiler.
This is the first recipe I have used an Instant Pot as a double boiler and have been surprised how perfectly easy it is compared to the stove top.
You can see on the video exactly how I prepared it.
All you have to do is switch your Instant Pot to Sauté function and add boiling water.
On top of Instant Pot, place a glass bowl which fits and let the bowl warm up a bit.

Second Step: Chocolate Melting
Once you see the water inside an Instant Pot boiling and your glass bowl has been warmed up, add sugar-free dark chocolate broken into smaller pieces together with butter.
Keep melting until both chocolate and butter is fully incorporated and liquid.
Once melted, switch off your Instant Pot and let the mixture cool down a little bit.

Third Step: Egg Whites
Using your kitchen machine start mixing the egg whites first.
Keep mixing until fully stiff and place aside for later.

Fourth Step: Yolks & Sweetener
If possible use another bowl where you mix your egg yolks together with sweetener of your choice.
As you see I have used Besti Brand which has got powdered Monk Fruit – Erythritol mixture. Just in case you do not have this exact brand you can use sugar replacement you have available.

Fifth Step: Additional Ingredients
Once your egg yolks are fully mixed and incorporated into the sugar sweetener start adding all other ingredients.
Start with melted chocolate and pour very slowly while the egg yolks are mixing. Make sure the chocolate is not hot, otherwise the egg yolks and the whole mixture will crumble.
Keep adding almond flour baking powder, vanilla essence, cup of coffee and mix fully.
With regards to the coffee, you can use a Decaffeinated version as I did because of my daughter.

Sixth Step: Tabasco
Adding Tabasco into the mixture will give those fudgy keto brownies the best end aftertaste you can imagine.
In this recipe I have added only 1 tablespoon of Tabasco which I believe is more than enough if you would like to serve those keto brownies for the kids.
1 tablespoon will give you that slight spiciness at the end of the bite.
But if you do like spicy food and would like to add a bit more an additional tablespoon is perfect.

Seventh Step: Egg Whites
Once all of the ingredients are mixed fully, slowly add fluffy egg whites and fully mix in.
I normally add a few spoons and mix it and continue those steps until everything is fully incorporated.

Eighth Step: Pour and Bake
The last step is to pour the whole mixture onto your baking tray.
As you see, I have used a tray which could be sized as per my request but if you do have a full baking dish large enough please use this.
Do not worry that the mixture is liquid it will harden a bit and therefore your brownies will stay super fudgy.

Tips and Tricks:
Eggs at a room temperature – keeping ex at the room temperature is advised since you were mixing the warm chocolate afterwards.
Chocolate not so hot – Make sure the chocolate is not hot while pouring, otherwise your whole brownie mixture will crumble.
Decaf for kids – if you have kids in the house and are planning to serve them Those brownies make sure you use a decaffeinated coffee.
Add Tabasco for adults – if you’re going to serve those brownies only to the adults who like spicy food I would suggest adding one more tablespoon of Tabasco in.
Let Keto Brownies fully cool to set – try not to cut or move brownies before they’re fully cold. Those keto brownies need to set fully, otherwise, they will crumble while cutting.
I would advise to place them in the fridge for an hour or so or keep them on the counter for several hours to make sure they’re fully set and cooled.

FREQUENTLY ASKED QUESTIONS AND ANSWERS
I have personally not tried baking those keto brownies with coconut flour.
If you do not have any other choice and only have coconut flour at home, you can try and make this recipe, bearing in mind that coconut flour texture is completely different to an almond flour.
Coconut flour is much more dryer and dense and therefore I would suggest to use only 1/4 of the amount of the almond flour.
As I have already mentioned I have used
If you do not have this brand on hand that is not a problem at all.
Use any of the sweeteners you have, making sure it is in a powdered version.
I use only powdered sweeteners in all of my baking as I feel this will give me the best texture of any desserts I bake.
If you do not have a powdered version an easy way is to use a coffee grinder.
You can use Cocoa instead of chocolate in this recipe bearing in mind that you would have to add much more sugar sweetener into the mixture while melting it together with butter. Bear in mind also, that not using chocolate for the recipe your brownies might not become as fudgy as you would like to.
These Fudgy Spicy Keto Brownies are best eaten fresh.
They could also be left on the kitchen counter for 1 to 2 days or placed into the fridge in an airtight container for 3 to 4 days.
You can certainly freeze those Spicy Fudgy Keto Brownies in an airtight container. Make sure each layer is covered with parchment paper for easier removal afterwards.

Ingredients

- 200g Butter
- 250g Dark Chocolate (Sugar-Free)
- 6 Eggs
- 150g Almond Flour
- 1 Cup of Coffee (decaf)
- 1 Tsp Vanilla Extract
- 130g (3/4 Cup) Sugar Substitute
- 1 Tbsp Tabasco
- 1 Tsp Baking Powder
Instructions
- Preheat the oven to 175C or 350F
- Melt your sugar-free dark chocolate together with butter in a double boiler.
If using the Instant Pot I have explained steps above together with images.
Once melted, let the mixture cool down a little bit. - Using your kitchen machine start mixing the egg whites first. Keep mixing until fully stiff and place aside for later.
- In you Kitchen Mixer, combine egg yolks together with sweetener and mix fully until combined and fluffy.
- Once your egg yolks are fully mixed and incorporated into the sugar sweetener start adding all other ingredients.
Start with melted chocolate and pour very slowly while the egg yolks are mixing. Make sure the chocolate is not hot, otherwise the egg yolks and the whole mixture will crumble. - Keep adding almond flour baking powder, vanilla essence, cup of coffee, tabasco and mix fully.

- The last step is to pour the whole mixture onto your baking tray.
- Bake at 175C or 350F for 20 Min.
