Out of all the brownie recipes I’ve tried being keto for years, my family love these brownies the most. They are better than regular brownies.

They are super moist, sweetened to perfection with that tiny hint of spiciness after your last piece melts in your mouth.

What is an easy keto brownie made of?

Our recipe is a combination of flavors. Our keto brownies are made with almond flour as a base. Pure chocolate, coffee, tabasco, and vanilla are added combination everyone loves. Our sugar replacement does not rise on carbs but gives you the same sweetness you need.

Tabasco sauce is the one beautiful addition you would not have expected or guessed.

I love chocolates with a spicy touch. Especially the ones that have chili peppers in them. 

And that made me think. 

I could add the crushed chili directly into melted chocolate, but I was not sure if that would spice up all of the brownies at the same rate. 

Then I thought of Tabasco.

Tabasco gives you the spiciness you choose and spreads it evenly all over the cake. 

And because Tabasco also contains a bit of salt, I did not have to add another ingredient.

The best sweeteners in keto baking

I have prepared the whole post with all of the possible sweeteners you can use in keto baking.

You can pick your favorite from the suggestions or use the one you have in your house.

At the moment, I am a big fan of monk fruit and allulose. Most of the time, I use the mixture, which I have also picked for our recipe.

I use powdered sweeteners in all of my baking as this will give me the best texture for any desserts I bake. 

If you still need to get a powdered version, an effortless way is to use a coffee grinder.

STEP-BY-STEP INSTRUCTIONS TO MAKE THE BEST BEST BROWNIES IN KETO DIET

First step: Double boiler

Preheat your oven to 175 Celsius or 350 Fahrenheit.

First, you have to melt your sugar-free dark chocolate with butter in a double boiler. 

This is the first recipe I have used an Instant Pot as a double boiler, and I have been surprised by how perfectly easy it is compared to the stovetop.

You can see on the video exactly how I prepared it.

All you have to do is switch your Instant Pot to the sauté function and add boiling water. 

On top of the Instant Pot, place a glass bowl that fits and let the bowl warm up.

Second step: Chocolate melting

Once you see the water inside an Instant Pot boiling and your glass bowl has been warmed up, add sugar-free dark chocolate broken into smaller pieces together with butter. 

Keep melting until both chocolate and butter are fully incorporated and liquid. 

Once melted, switch off your Instant Pot and let the mixture cool down.

Third step: Egg whites

Using your kitchen machine, start mixing the egg whites first.

Keep mixing until fully stiff and place aside for later.

Fourth step: Yolks & sweetener

Use another bowl where you mix your egg yolks with the sweetener of your choice.

As you see, I have used the Besti brand, which has powdered Monk fruit sweetener with an allulose mixture. If you do not have this exact brand, you can use the available sugar replacement.

Fifth step: Additional ingredients

Once your egg yolks are thoroughly mixed and incorporated into the sugar sweetener, start adding all other ingredients. 

Start with melted chocolate and pour slowly while the egg yolks are mixing. Ensure the chocolate is cool. Otherwise, the egg yolks and the whole mixture will crumble.

Add almond flour, baking powder, vanilla essence, and a cup of coffee and mix thoroughly.

Regarding the coffee, you can use a decaffeinated version, as I did because of my daughter.

Sixth step: Tabasco

Adding Tabasco into the mixture will give those really fudgy brownies the best end aftertaste you can imagine. 

I have added only one tablespoon of Tabasco to this recipe, which is more than enough if you want to serve those keto friendly brownies for the kids. 

One tablespoon will give you slight spiciness at the end of the bite.

But if you like spicy food and want to add a bit more, an additional tablespoon is perfect.

Seventh step: Egg whites

Once all the ingredients are mixed thoroughly, slowly add fluffy egg whites and fully blend in.

I usually add a few spoons, mix them, and continue those steps until everything is fully incorporated.

Eighth step: Pour and bake

The last step is to pour the whole mixture onto your baking tray.

As you see, I have used a tray that could be sized as per my request, but if you have an entire baking dish large enough, please use this. 

Do not worry that the mixture is liquid. It will harden a bit, for your super fudgy keto brownies. Bake for 20 minutes.Take out the brownies after 20 minutes from the oven and let set. Let the brownies cool thoroughly before serving.

Tips to make the best keto brownies with almond flour

  • Eggs at room temperature – keeping eggs at room temperature is advised since you were mixing the warm chocolate afterward. 
  • Chocolate not so hot – make sure the chocolate is not hot while pouring. Otherwise, your whole brownie mixture will crumble.
  • Decaf for kids – Make these brownies with decaffeinated coffee if you have kids in the house.
  • Add Tabasco for adults – if you’re going to serve those brownies only to adults who like spicy food, I suggest adding one more tablespoon of Tabasco.
  • Let keto brownies fully cool to set – try not to cut or move brownies before they’re fully cold. Those keto brownies need to be set fully. Otherwise, they will crumble while cutting.
  • Chocolate toppings – pour sugar-free magic shell on top and scoop of whipped cream for a new experience.
  •  Fridge – I would advise placing them in the refrigerator for an hour or so or keeping them on the counter for several hours to ensure they’re fully set and cooled.

How to serve keto chocolate brownies?

I have made another discovery while making this fantastic fudgy spicy keto brownie.

It is not my invention though. Melting chocolate with the Instant Pot is the best tip I can give you. 

You not only have much less mess around your stove, but you can move your Instant Pot exactly where you need it to be. 

All you have to do is boil the water, switch the Instant Pot on sauté and find a glass bowl that fits on top of the Instant Pot. You can look at the video for the exact steps I have taken.

Once you try it yourself, you will fall in love as I did and never use your double boiler any other way.

Can I use coconut flour instead of almond flour?

I have personally not tried baking those keto brownies with coconut flour. 

If you do not have any other choice and only have coconut flour at home, you can try and make a coconut flour brownies recipe, bearing in mind that coconut flour texture is entirely different from almond flour. 

Coconut flour is much dryer and dense, so I suggest using only 1/4 of the almond flour.

Can you use cocoa instead of chocolate for keto brownies?

You can use cocoa instead of chocolate in this recipe, bearing in mind that you would have to add more sugar sweetener to the mixture while melting it together with butter. By not using chocolate for the recipe, your brownies might not become as fudgy as you would like.

How to store delicious keto brownies?

These fudgy spicy keto brownies are best eaten fresh. 
They could also be left on the kitchen counter for 1 to 2 days. Placed in the fridge in an airtight container for 3 to 4 days.

Can I freeze keto brownies?

You can undoubtedly freeze those in an airtight container. Make sure each layer is covered with parchment paper for easier removal afterward.

Instructions
