Instructions

  • Prepare all of the ingredients for Peanut Butter Mousse as well as Chocolate Chaffles
  • Whisk all of the ingredients for Chocolate Chaffles in a glass bowl or jug.
  • Heat your Dash mini waffle maker.
  • Once heated, spray lightly with oil to prevent chaffles from sticking.
  • Pour 1 to 1 1/2 tablespoons of the mixture onto your Chaffle maker and using the back of the spoon gently spread the mixture throughout the whole Chaffle maker. Gently close the lid and let it cook for approximately 4 to 5 minutes until the light goes off or you can easily open the Chaffle maker without sticking.
    Place Chocolate Chaffles aside and let them fully cool.
  • Using your Electric Hand Blender, whisk Heavy Cream with sweetener until stiff peak.
    Add Peanut Butter and on a medium speed, gently whisk all together into a perfect fluffy Peanut Butter Mousse.
  • Fill your piping bag with the mousse for easier assembly.
  • Start by choosing your Cake stand or a plate you will be serving your Chaffle Cake in.
    Place one Chocolate Chaffle in the middle.
  • Take your peanut butter and cut the end of the piping bag.
  • Gently push the mousse onto the chocolate chaffle.
  • Using the back of the spoon, spread the mousse evenly to cover the whole Chaffle.
  • Top with a second Chaffle and repeat the process until you are satisfied with the height of the Chaffle Cake.
  • Place the whole Chocolate Chaffle Cake with Peanut Butter Mousse into the fridge until you are ready to serve. Few hours is the best solution. This will help the mousse to settle and thicken and it will be much easier to cut.
  • Top up the Chaffle cake with your favorite decoration. Be it a few berries, Keto Sprinkles, candles for a birthday cake, cinnamon powder, crushed nuts, or simple powdered sweetener.

Cool - Let Chocolate Chaffles fully cool. It will prevent your peanut butter mousse melt once assembling all together.
Fridge - once you have assembled your chaffle cake, I suggest placing it into the refrigerator. Take it out and finish decorating only once you are ready to serve. This step will help for the Chaffle cake to settle and it will be easier to cut.
Decorate - Once you are ready to serve, decorate your Chaffle Cake with berries, Keto Sprinkles, candles for a birthday cake, cinnamon powder, crushed nuts, or simple powdered sweetener.
