  • Prepare all the ingredients for your low-carb bites, including fresh cauliflower, keto breadcrumbs, eggs, salt, turmeric, and garlic powder. Ensure you have everything ready before starting the recipe. Wash and cut the cauliflower into your preferred sizes. If you use a whole head of cauliflower, double the ingredients. At the same time, preheat your oven to 180 Celsius or 350 Fahrenheit.
  • Whisk the eggs with salt, garlic powder, and turmeric in a mixing bowl to create an egg wash. In a separate bowl, place your keto breadcrumbs. This mixture will be used as the coating for the cauliflower. You can also thin out the batter using a few drops of milk. 
  • Take a floret and dip the cauliflower into the egg wash, ensuring it is fully coated. Coat the cauliflower with the breadcrumbs, pressing gently to ensure they stick well. Place the battered cauliflower florets on the prepared baking sheet in a single layer, leaving space between each. Depending on the size, bake the cauliflower for 20 to 25 minutes until golden brown and crispy.

Notes

  • Dry: To ensure a crispy texture, thoroughly dry the cauliflower florets before dipping them in the egg wash. Excess moisture can prevent the breadcrumbs from sticking to the cauliflower properly.
  • Breading: If you are not following low carb, you can use your breadcrumbs or panko. 
  • Seasoning: Experiment with different herbs and spices to customize the flavor of your bites. Apart from salt and pepper, add a pinch of cayenne pepper for some heat, or sprinkle some grated Parmesan cheese and smoked paprika for extra savory goodness. You can also mix in our enchiladatacosausage seasoning, or Indian spices before dredging. 
  • Extra Crispy: If you prefer an even crispier result, use an air fryer instead of baking. Follow the same coating process and air fry the cauliflower florets in batches until they are baked until crispy.
