This is one of the reasons I have started making my aromatic seasoning blends for various needs. It’s super easy, most of the spices at home anyway, and I know exactly what I put inside. 

Our Taco Seasoning, substitute for curry powder or enchilada spice mix is so great that I have it on top of my shell to use at all times.For some Asian feel, I have made the famous Chinese five spice powder. Everything Bagel Seasoning is another favorite blend of mine. Topped up on salads, dips, or sandwiches, the flavors intensify immediately.

And when I decided to make my sausages, I had to prepare the seasoning for sausage the exact way I wanted. Of course, sharing it with you makes me even happier as I do not want to keep anything secret. There is seasoning for every type of meat. Whenever I use lamb seasoning for our dinner, the flavors just mesmerize me.

Combining spices in sausage before filling the casing with the ground meat will help dearly. Whatever you use that sausage for, whether it is Sausage Sauerkraut, Sausage Balls, or Sausage Gravy, no additional spices will be needed.

It is best to make sausage using minced meat, which you buy in the stores, or mince it yourself.

Ingredients needed:

  • Fennel 
  • Smoked Paprika
  • Salt
  • Parsley
  • Rosemary 
  • Thyme 
  • Garlic 
  • Black Pepper
  • Onion
  • Dill
  • Mustard Seeds

STEP BY STEP INSTRUCTIONS TO MAKING SAUSAGE SEASONING

First Step: Ingredients needed for sausage seasoning

Prepare all of the spices and herbs you will use to mix the sausage seasoning. 

If you can, use all of the herbs from your garden, which you can quickly dry in a  few days naturally spread on newspapers or kitchen tissues. I have done that with Dill, and you see what a lovely color it stayed.

Second Step: Start layering.

If you plan to prepare this spice mix as a gift for your loved ones, pick the colors carefully for the bottle to look as vibrant as possible. I have tried to layer the seeds with the color scheme I had in mind. 

But in general, it doesn’t matter what spices go first if you are going to mix them all. 

I have started with Fennel, smoked paprika, salt, and parsley.

Third Step: Pick the right colors

Continue with adding Rosemary, thyme, garlic, and black pepper.

You can even layer them like a rainbow, starting with salt and working towards the darkest spice, which is Dill in our case.

Fourth Step: Finish the layering

As of last go Onion, dill and mustard seeds.

Fifth Step: Mix all together

Using a spoon or a fork, gently mix all of the spices before filling your container for storing.

Tips and Tricks:

  • Fresh – make sure all of the spices are as fresh as possible for your homemade seasoning to last the longest
  • Home Drying – if you can, pick your herbs from the garden and let them dry freely in a cool place spread over the newspapers or kitchen tissues. 
  • Dry – before mixing all of the spices, be sure that all of them are fully dry to avoid the whole blend going bad
  • Gift Wrap – If you plan to give this blend as a present, choose the colors layering carefully for the bottle to look as vibrant as possible. You can even layer them like a rainbow, starting with salt and working towards the darkest spice, which is Dill in our case.
  • Nutritional Data – for this recipe I have split the whole recipe into 11 portions. Each portion contains 2 tablespoons of the blend and is perfect for approximately one pound or half kilogram of minced meat.
