Prime Rib Steak with Asparagus

This prime rib steak gets the kind of sear and juicy center that most people think only a grill can deliver. Good marble in a USDA prime boneless ribeye steak means the fat does the flavor work while the heat does everything else. This is what a ribeye steak looks like when it is treated right.

I used to think a proper steak dinner at home meant a lot of moving parts and careful timing across multiple pans. The cast-iron method changed that completely because the sear happens over indirect heat, and everything else finishes in the same oven at the same time. This is the recipe I put on when I want a restaurant-quality plate without the restaurant-level effort.

Why the Cast Iron Goes Into the Oven Before the Steak Does

The cast iron skillet heats in the oven during the full preheating time so the entire surface reaches broiler temperature before any beef touches it, which gives you a contact sear rather than a slow warm-up with the steak sitting in an increasingly hot pan. Asparagus Cooks Separately

The asparagus goes on its own baking sheet rather than into the skillet with the steaks, so it roasts dry and develops light crispy edges rather than steaming in the beef juices. Both the skillet and the baking sheet go into the oven at the same time and come out together, so the whole meal finishes at the same time without any extra management.

How To Make Boneless Prime Rib Steak

This prime rib steak recipe uses two juicy steaks seared in a preheated cast iron skillet under the broiler with bella mushrooms on top, served alongside asparagus roasted in the same oven at the same time. Four steps, two pans, done in under 20 minutes once the oven is hot.

  • Cast Iron Skillet: The only pan that holds heat evenly enough at broiler temperature to give you a proper sear the moment the steak hits it.
  • Baking Sheet: Lined with foil or parchment and lightly greased for the asparagus.
  • Tongs: Flip the steaks safely without piercing the surface and releasing the juice mid-cook.

Ingredients Needed:

  • Prime Rib Steaks: Two prime rib steaks brought to room temperature before cooking.
  • Bella Mushrooms: One cup roughly chopped into bite-sized pieces.
  • Olive Oil: The oil heats in the skillet and creates the searing surface for the beef.
  • Salt: Season the blend rather than sprinkling plain salt directly.
  • Black Pepper: Half a teaspoon adds the background heat that cuts through the richness of the prime rib.
  • Garlic Powder: Gives the garlic flavor without fresh garlic.
  • Fresh Thyme Sprigs: They sit in olive oil and beef juices, releasing their flavor into the pan without any chopping required.
  • Asparagus: One bundle with the woody ends snapped or cut off.
  • Butter: A pat is placed on each steak the moment it comes out of the oven.
  • Fresh Parsley: Scattered over the finished dish as a garnish.

STEP-BY-STEP INSTRUCTIONS FOR COOKING JUICY BONELESS RIBEYE STEAKS

First Step: Set Everything Out

Set the oven to broil, pour the olive oil into a large cast iron skillet, and slide it inside to heat up with the oven. Mix the salt, black pepper, and garlic powder in a small bowl, roughly chop the bella mushrooms, and snap the woody ends off the asparagus. Line a separate baking sheet with foil or parchment, give it a light coat of non-stick spray, and lay the asparagus spears on it.

Second Step: Season Asparagus and Steaks

Drizzle the asparagus with a little olive oil and dust with two pinches of the spice blend. Press the remaining spice blend firmly into both sides of each prime rib steak. Set the seasoned steaks close to the oven so you can move quickly once the skillet comes out.

Third Step: Sear Steaks and Add the Mushrooms

Carefully pull the hot skillet from the oven and lay the steaks in straight away, it will sizzle aggressively, so work with caution. Scatter the chopped bella mushrooms evenly over the top of each steak. Return the skillet to the oven and slide the asparagus sheet in at the same time, then cook both for 5 minutes.

Fourth Step: Flip and Finish

Pull the skillet out, flip the steaks using tongs, and tuck the thyme sprigs in alongside them. Return to the oven for another 5 minutes until the steaks reach your preferred internal temperature. Serve immediately with a pat of butter and a sprinkle of fresh parsley.

Zuzana’s Take and Tips:

The step most people skip in a home kitchen is preheating the pan before the beef goes in, and it is the step that determines whether the steak builds a proper crust or just sits in a warm skillet slowly losing juice. I tested this directly with a cold skillet versus a cast iron that had been in the oven at broil for five minutes, and the sear on the preheated pan was noticeably darker, more even, and produced a much better crust in the same cook time. If you want a side that can come out of the oven at the same time as the steaks without competing for space, my keto mashed cauliflower can be made ahead and reheated separately, so the steaks get full oven priority.

  • Take the prime rib steaks out of the fridge 20 to 30 minutes before cooking so they reach room temperature. Cold beef sears unevenly, and the interior stays cool while the surface cooks, making it nearly impossible to reach your target internal temperature without overcooking the crust.
  • A meat thermometer is the only reliable way to hit your preferred doneness without cutting into the steak.
  • A garlic butter or thyme butter pressed onto the steak the moment it comes out of the oven delivers more flavor than plain butter. The residual heat melts it into the surface as the steak rests, and the garlic or herb note becomes part of every bite rather than sitting on top.

Substitute with USDA Prime Boneless Ribeye

Prime ribeye steak with marble is the most direct substitute at the same weight and thickness; both cuts come from the same section of beef and cook at the same rate under the broiler. Boneless pork chops work with the same method and spice blend if you want a different protein, though they need slightly longer cooking at a lower broiler temperature to cook through safely. Bella mushrooms can be replaced with cremini, button, or shiitake mushrooms at the same quantity with no changes to the method.

What To Serve With Prime Rib?

The asparagus in this recipe already handles the vegetable element, but a fresh, cold side alongside the steak adds contrast to the richness of the beef. Cold green bean salad with Dijon vinaigrette brings a bright flavor that cuts cleanly through the butter and steak fat. How Do I Store Cooked Beef?

Let the steak cool completely before placing it in an airtight container in the fridge for up to 2 days. Can I Freeze Prime Ribeye with Marble?

Yes. Cool the steaks completely, wrap each one tightly in plastic wrap, and place in a freezer-safe bag with the air pressed out. They keep for up to 2 months and thaw best overnight in the fridge before reheating gently in the oven. The asparagus does not freeze well; the texture becomes soft after thawing, so it is best made fresh each time.

  • 2 Pieces Prime Rib Steaks 16 oz each, brought to room temperature
  • 1 Cup Bella Mushrooms roughly chopped
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Salt

  • 4 Sprigs Fresh Thyme

Instructions
