Sheet Pan Chicken

This post may contain affiliate links. Read my disclosure policy.

Sheet pan chicken is the dinner recipe I rely on most when I want something that looks like effort but takes almost none. Skinless chicken breasts seasoned with garlic, black pepper, and cayenne go on a single baking sheet and come out juicy, golden, and ready to serve in under 25 minutes. An easy sheet pan chicken recipe that saves me on most days.

I make this on a weeknight when I have chicken on hand and no interest in washing more than one pan. Twenty-five minutes later, it comes out golden and juicy, and I genuinely can’t believe something that simple tastes that good. Sheet pan chicken is now my answer whenever anyone asks what I make most during the week.

A Seasoning Blend That Does the Work

The garlic, black pepper, and cayenne combination in this sheet pan recipe seasons the chicken deeply on both sides and builds a slightly spiced crust as it roasts. No marinade, no overnight prep, and no lemon juice or lemon zest required to get a result that tastes genuinely seasoned rather than plain. For more chicken dinners that use a similar bold seasoning approach, my spinach-stuffed chicken breast and Italian baked chicken both build flavor in the same direct way.

Use It All Week

This sheet pan chicken recipe makes three large chicken breasts at once, so you always have enough left over for lunches, salads, or a quick dinner the next night without extra cooking. Slice it cold over a broccoli salad, shred it into a bowl with cauliflower rice, or reheat it alongside whatever veggies you have on hand for a full sheet pan dinner.

How To Make Sheet Pan Chicken Dinner

A baking sheet, five pantry ingredients, and twenty minutes is all it takes to have juicy, well-seasoned sheet pan chicken breasts ready to serve or store for the week.

Kitchen Gadgets Needed:

  • Oven: Roasts the chicken at high heat until fully cooked through and lightly golden on the outside.
  • Large Sheet Pan: Holds the chicken pieces in a single layer so each one cooks evenly without steaming.
  • Parchment Paper or Foil: Lines the baking sheet so the chicken releases cleanly and cleanup takes seconds.
  • Small Bowl: Mixes the garlic, salt, black pepper, and cayenne into an even seasoning blend before it goes onto the chicken.
  • Pastry Brush: Brushes the olive oil evenly over each piece so the seasoning sticks and the outside crisps up properly.
  • Sharp Knife: Slices each chicken breast horizontally into thinner pieces for even cooking all the way through.

Ingredients Needed:

  • Chicken Breasts: Slice horizontally into thinner pieces and place on the lined sheet pan in a single layer before seasoning.
  • Olive Oil: Brush lightly over each piece of chicken so the seasoning sticks evenly before roasting.
  • Garlic: Finely minced and mixed into the seasoning blend to coat both sides of the chicken before it goes into the oven.
  • Salt: Combine with the garlic, black pepper, and cayenne in the small bowl, then sprinkle evenly over both sides.
  • Black Pepper: Mixed into the seasoning blend to add depth and a mild heat that builds on the cayenne.
  • Cayenne Pepper: Added to the seasoning mix to impart a gentle heat to the finished chicken, balanced with the garlic and black pepper.
  • Fresh Parsley and Dill: Scattered over the finished chicken just before serving for a fresh, bright finish.

STEP-BY-STEP INSTRUCTIONS FOR CREATING EASY SHEET PAN CHICKEN DINNER RECIPE

First Step: Ingredients and Equipment Ready

Preheat your oven to 400°Fahrenheit (200°Celsius) and line a large sheet pan with parchment paper or foil before you do anything else. Mince the garlic and measure out the olive oil, salt, black pepper, and cayenne so everything is ready before the chicken goes into the pan. Having everything prepped and within reach keeps the whole process under ten minutes from start to oven.

Second Step: Prepare the Chicken

Pat the chicken breasts dry thoroughly with paper towels, as removing surface moisture allows the outside to roast rather than steam in the oven. Slice each breast horizontally into thinner pieces so they cook evenly through without the outside drying out before the center is done. Place the pieces on the prepared sheet pan in a single layer, with no overlap.

Third Step: Season and Coat

Brush each piece of chicken lightly with olive oil so the seasoning has something to grip onto across the whole surface. Mix the minced garlic, salt, black pepper, and cayenne together in a small bowl, then sprinkle the blend evenly over both sides of each piece, pressing it in gently so it stays on during roasting. Make sure every piece is coated on both sides before the pan goes into the oven.

Fourth Step: Roast, Rest and Serve

Transfer the sheet pan to the oven and roast for 15 to 20 minutes, flipping the chicken halfway through so both sides cook and color evenly. Check for doneness by cutting into the thickest part and return to the oven for a few more minutes if needed. Let the chicken rest for a few minutes before serving, then scatter fresh parsley and dill over the top if desired.

Zuzana’s Take and Tips:

I skipped patting the chicken dry, and the surface moisture steamed the chicken instead of roasting it, leaving it pale and rubbery on the outside. Drying the chicken thoroughly with paper towels before adding the olive oil and seasoning is what gives you a properly roasted finish rather than a steamed one. For another chicken recipe with the same simple technique, my chicken and veggie bake uses the same sheet pan method and is worth making when you want veggies roasting alongside the chicken.

  • If you prefer chicken thighs over chicken breasts, use boneless skinless chicken thighs at the same temperature and add 5 minutes to the roast time.
  • Add broccoli or other veggies directly onto the sheet pan alongside the chicken for a complete one-pan dinner with no extra dishes.
  • Do not skip the resting time after taking the oven out. Even two minutes off the heat lets the juices redistribute and keeps the chicken moist when you cut into it.
  • Store leftovers sliced rather than whole so they reheat faster and more evenly the next day.

FREQUENTLY ASKED QUESTIONS AND ANSWERS

Substitute For Sheet Pan Chicken Ingredients

Chicken thighs substitute for chicken breasts at the same seasoning ratio and give a juicier result at this roasting temperature. Avocado oil can substitute for olive oil in the same quantity, if preferred. Garlic powder substitutes for fresh minced garlic: Use 1 teaspoon in place of 3 teaspoons of fresh.

What To Serve With This Sheet Pan Dinner?

This chicken pairs perfectly alongside a bowl of cheesy cauliflower rice. It also works well served over a plate of mashed cauliflower when you want something heartier on the side. For a lighter pairing, a serving of broccoli cauliflower casserole alongside this chicken covers both protein and vegetables in one easy dinner.

How Do I Store Pan Meals?

Store cooled chicken in an airtight container in the fridge for up to 4 days. Slice before storing for faster, more even reheating throughout the week.

Can I Freeze One Pan Meals?

Yes. Place cooled chicken pieces in a freezer-safe container or bag and freeze for up to 3 months. Thaw overnight in the fridge, then reheat in the oven for 10 minutes, until warmed through.
