It is typically made with layers of tortillas, cheese, and your choice of meat, beans, or vegetables. It is usually topped off with a red enchilada sauce or tomato sauce and plenty of gooey melted cheese.

Our steps for making enchiladas are super easy. As I have made everything from complete scratch, including seasoning, meat, sauce, and tortillas, you can prepare those in advance following our recipes.

I am not including all the steps on making the enchilada sauce recipe, sauce ingredients, and others above because every single recipe is entirely written on the site.

  • Cooked chicken breasts shredded
  • Enchilada sauce
  • Keto tortillas
  • Shredded white cheese
  • Shredded cheddar cheese

STEP-BY-STEP INSTRUCTIONS TO MAKE KETO CHICKEN ENCHILADA CASSEROLE

First Step: Prepare Ingredients

Prepare all of the ingredients for building enchiladas casserole.

As I have already mentioned, I made this recipe from scratch, and you can do the same.

Enchilada seasoning is already inside the sauce, so there is no need to add more.

Cheese should be shredded at home to avoid unnecessary starches.

Cooked chicken breasts could be shredded with a fork or pull apart using your hand.

Regarding the pan, it is best to pick a rectangle size where the rolled tortilla fits into the shorter width of the dish.

At the same time, heat your oven to 350 degrees Fahrenheit or 180 degrees Celsius.

Second Step: Base of the Casserole

Start by placing one to two big scoops of keto enchilada sauce to the bottom of the skillet. Spread it all over, so the sauce in the bottom covers the base.

Third Step: Roll Tortillas

Prepare your large bowl of shredded cheese, chicken, and tortillas.

As you see in the video, take one tortilla, and in one corner, place a bit of shredded chicken.

Layer white and cheddar shredded cheese and a dollop of sauce on top of the chicken. Roll and place filled tortillas onto the baking dish, ensuring they do not open up.

Keep repeating this step until you have used all of the tortillas or the casserole is filled.

Fourth Step: Top Up

Once all of the tortillas are placed in the baking dish, pour the remaining enchilada sauce on the top middle of the tortillas.

Top up with the remaining cheese and bake.

Fifth Step: Bake and Garnish

Place into the preheated oven and bake at 350 degrees Fahrenheit or 180 Celsius for 20 minutes.

Bake in the oven until the cheese melts and the edges of the tortillas brown. 

Once ready to serve, sprinkle cilantro and serve with sliced avocado, sour cream, and lemon.

Tips to Make the Best Low Carb Enchiladas

  • Extra spicy – add more chili
  • Protein – can be replaced with ground beef, fish, turkey, or any of your favorite meat.
  • Prevent sogginess – the best way to keep your enchiladas from becoming too soft is to fry the tortillas in hot oil for a short time before stuffing and rolling them. This will form a protective layer, preventing the tortillas from absorbing an excessive amount of sauce and thus losing their shape.
  • The cheese type – could be any you prefer, like jack cheese, Emmenthaler, gouda, Mexican cheese, etc.
  • Canned enchilada sauce – make sure you read the labels, so sugar is not involved.

What Should I Serve With Keto Enchiladas?

To accompany the enchiladas, add a side of sautéed vegetables such as bell peppers and onions. You could also serve a salad with mixed greens, tomatoes, avocado, and olives. green goddess salad or tabbouleh are great examples. 

For added flavor, you can dress the salad with a keto-friendly dressing such as olive oil and lemon juice. A bowl of cauliflower rice will make an excellent side dish if you want something more substantial. Finally, do not forget to add some freshly made guacamole as an extra topping for the enchiladas – it will bring out the flavor even further.

Can I Make Keto Enchiladas Recipe Without Tortillas?

Yes, you can make a keto enchiladas recipe without tortillas. All you need is to replace traditional tortillas with a low-carb alternative such as lettuce, cabbage leaves, or even slices of eggplant, zucchini, or portobello mushrooms. To construct your enchiladas without tortillas, lay a layer of the low-carb base on the bottom of your baking dish, layer on your filling ingredients, and top it off with shredded cheese. Bake in the oven until heated through and melted cheese is bubbly.
