Low Carb Mexican Recipes

Who does not like taco Tuesdays?

With our whole taco collection and some additional Mexican goodies, you can have a table filled like for a wedding.

Homemade taco shells filled with taco seasoning, meat, veggies, mini taco cups, a big salad with an edible bowl sprinkled with salsa dressing, and an almost unrealistic colorful taco casserole.

Let us not forget taco soup, guacamole, and salsa.

If we add today’s enchiladas, where our cooked chicken together with cheese is rolled into homemade tortillas and soaked in enchilada sauce made with enchilada seasoning and broth, it will be a dream come true for anyone loving Mexican dishes.

What is Enchiladas Casserole?

Enchiladas is classic Mexican dish that is simple to make and very tasty. Enchilada casserole is a Mexican dish that combines enchiladas’ flavors with one dish’s convenience. It is typically made with layers of tortillas, cheese, and your choice of meat, beans, or vegetables. It is usually topped off with a red enchilada sauce or tomato sauce and plenty of gooey melted cheese.

The skillet version takes those flavors to the next level by combining them into one delicious dish. Not only does it look great, but it tastes fantastic as well. You can customize it however you would like – add more chicken and cheese, switch up the proteins, etc.

Are Enchiladas Keto Friendly?

Traditional enchiladas are often considered delicious, indulgent, but can they fit into a keto diet?

The answer is yes. Enchiladas can be keto-friendly if you make some simple modifications. Start with using low carb tortillas for the enchilada shells. Instead of white flour tortillas, choose almond flour or coconut flour. You could also opt for lettuce wraps or low carb veggies as your enchilada shells.

How Many Net Carbs Are in Enchiladas?

Considering everything our pan contains, the carb count is pretty impressive.

For a portion, which is a whole filled-up tortilla with chicken, cheese, enchilada sauce, and spices, you get a perfect 6 grams of carbs and 3 grams of fiber.

Total net carbs of 3 grams per person is more than outstanding.

How Do You Make Keto Chicken Enchiladas?

Fill your enchiladas with lean proteins like chicken, pork, or beef, along with plenty of healthy keto-friendly veggies such as bell peppers and onions. Lastly, top your enchiladas with sugar-free salsa to add flavor without adding carbs. And when you sprinkle with the remaining cheese, those loaded enchiladas will have no comparison.

What is Gluten Free Keto Mexican Enchiladas?

Gluten-free keto Mexican enchiladas is a nutritious meal sure to please even the pickiest eaters. The main ingredients in these enchiladas are protein, seasonings, sauce, and cheese. The meat is usually cooked with spices such as chili powder or cumin before being combined with the other ingredients.

STEP-BY-STEP INSTRUCTIONS TO MAKE KETO CHICKEN ENCHILADA CASSEROLE

First Step: Prepare Ingredients

Prepare all of the ingredients for building enchiladas casserole.

As I have already mentioned, I made this recipe from scratch, and you can do the same.

Enchilada seasoning is already inside the sauce, so there is no need to add more.

Cheese should be shredded at home to avoid unnecessary starches.

Cooked chicken breasts could be shredded with a fork or pull apart using your hand.

Regarding the pan, it is best to pick a rectangle size where the rolled tortilla fits into the shorter width of the dish.

At the same time, heat your oven to 350 degrees Fahrenheit or 180 degrees Celsius.

Second Step: Base of the Casserole

Start by placing one to two big scoops of keto enchilada sauce to the bottom of the skillet. Spread it all over, so the sauce in the bottom covers the base.

Third Step: Roll Tortillas

Prepare your large bowl of shredded cheese, chicken, and tortillas.

As you see in the video, take one tortilla, and in one corner, place a bit of shredded chicken.

Layer white and cheddar shredded cheese and a dollop of sauce on top of the chicken. Roll and place filled tortillas onto the baking dish, ensuring they do not open up.

Keep repeating this step until you have used all of the tortillas or the casserole is filled.

Tips to Make the Best Low Carb Enchiladas

  • Extra spicy – add more chili
  • Protein – can be replaced with ground beef, fish, turkey, or any of your favorite meat.
  • Prevent sogginess – the best way to keep your enchiladas from becoming too soft is to fry the tortillas in hot oil for a short time before stuffing and rolling them. This will form a protective layer, preventing the tortillas from absorbing an excessive amount of sauce and thus losing their shape.
  • The cheese type – could be any you prefer, like jack cheese, Emmenthaler, gouda, Mexican cheese, etc.
  • Canned enchilada sauce – make sure you read the labels, so sugar is not involved.

What Should I Serve With Keto Enchiladas?

To accompany the enchiladas, add a side of sautéed vegetables such as bell peppers and onions. You could also serve a salad with mixed greens, tomatoes, avocado, and olives. green goddess salad or tabbouleh are great examples.

For added flavor, you can dress the salad with a keto-friendly dressing such as olive oil and lemon juice. A bowl of cauliflower rice will make an excellent side dish if you want something more substantial. Finally, do not forget to add some freshly made guacamole as an extra topping for the enchiladas – it will bring out the flavor even further.

Can I Make Keto Enchiladas Recipe Without Tortillas?

Yes, you can make a keto enchiladas recipe without tortillas. All you need is to replace traditional tortillas with a low-carb alternative such as lettuce, cabbage leaves, or even slices of eggplant, zucchini, or portobello mushrooms. You can also use cheese slices like cheddar or mozzarella as an alternative to the traditional flour tortilla.

The filling remains the same – chicken and vegetables – but you will need additional ingredients such as oil, garlic, onion powder, and chili powder for flavoring. To construct your enchiladas without tortillas, lay a layer of the low-carb base on the bottom of your baking dish, layer on your filling ingredients, and top it off with shredded cheese. Bake in the oven until heated through and melted cheese is bubbly.

Can I Use Sour Cream in Mexican Food?

Yes, you can use sour cream in Mexican food. Sour cream is a common ingredient in Mexican cuisine, and it adds a creamy, tangy flavor to dishes like tacos, burritos, enchiladas, and quesadillas. It’s also used as a topping for many Mexican dishes, such as tostadas and chilaquiles. Sour cream is also a great way to add extra richness and flavor to soups, stews, and sauces.

Sour cream can be used as an alternative to cheese or mayonnaise when making guacamole or other dips for chips or vegetables. With its creamy texture and tangy flavor, sour cream is an excellent addition to any Mexican dish.

Can I Use Rotisserie Chicken for Enchiladas?

You can use rotisserie chicken, deli chicken, chicken thighs, leftover chicken, ground chicken, or grilled chicken for enchiladas. This is a great way to save time and effort while making a delicious meal. Rotisserie chicken is already cooked, so all you need to do is shred it and add it to your enchilada filling. It adds a wonderful smoky flavor and requires no extra seasoning. Plus, the convenience of store-bought chicken means less time prepping and more time eating.

To make enchiladas with rotisserie chicken, simply shred the meat into small pieces. Combine the shredded chicken with cheese, cream cheese, or even vegetables. Layer chicken filling and roll it up in your favorite tortilla. Top with enchilada sauce and cheese, bake until golden brown, and enjoy.

How to Store Easy Keto Enchilada?

Storing easy keto enchiladas is simple. Let the enchiladas cool down completely before storing them. You can then place them in an airtight container or wrap them in plastic wrap. Leave space between each enchilada for the air to circulate.

Can I Freeze Chicken Enchiladas?

It is best to freeze them on a flat surface like a baking sheet before transferring them into an airtight bag or container. Be sure to label the bag with the date, so you know when they were made. When you are ready to eat the enchiladas, simply thaw the frozen ones in the refrigerator and reheat them in a 350-degree oven for about 10 minutes or until hot and bubbly. Enjoy.
