What is Hasselback?
Hasselback name comes from a very popular Swedish Hotel Restaurant based in Stockholm called Hasselbacken, where their favorite Potato recipe has been served on a daily menu since 1953. The famous Hasselback potato was created by Leif Elisson from Värmland who was one of the restaurant’s trainee chefs at that time.
It has become so popular, that people started experimenting with this recipe at home and most of the international chefs have created their own version of Hasselback, using various ingredients instead of potatoes. One of them is a chicken, which we will be making today.

How to prepare Stuffed Caprese Chicken Hasselback?

Ingredients you need to make this Stuffed Caprese Chicken Hasselback:
- Chicken Breasts
- Sliced Tomatoes
- Sliced mozarella Cheese
- Basil Leaves
- Virgin Olive Oil
- Salt & Pepper
First Step: Prepare the Chicken Breasts
Using a sharp knife, make 4-5 slits on the top side of chicken breasts. Make sure it is not fully cut, so your chicken breast will stay compact. I normally cut it into 3/4 of the breast, to be able to fill them in.

Second Step: Fill the Chicken Breasts
Fill each slit with one piece of tomato, mozzarella and one bigger leave of Basil. Continue, until you have filled all the chicken breasts prepared.

Third Step: Baking Tray
At this point, heat up the oven to 200C or 400F.
Line a baking tray with parchement paper and gently place the chicken breassts with filling on top of the tray.

Fourth Step: Olive Oil
Once your chicken breasts are nicely spread all over the tray, sprinkle the generously with Extra Virgin Olive Oil.

Fifth Step: Salt & Pepper
As the last step, sprinkle salt and pepper. At this point, you can add more flavor by using your favourite seasoning, probably some additional herbs like Marjoram or oregano. If you do have to be lucky to have an Italian seasoning at home, use this as well.

Since this lovely Stuffed chicken is already filled with flavor, a simple salad will just do fine. As you see on the photos, I have used our Avocado Egg Salad, which has worked perfectly well also. Low Carb Tabbouleh Salad could be another alternative as a side dish as well as Creamed Spinach.

Can you freeze Hasselback chicken?
Once it is fully baked and you have some leftover, then yes. You can Freeze it.

Very popular is to use bacon and cheese or Ham and cheese. But you can add almost anything you come up with like broccoli, jalapeno peppers, spinach, and goat cheese, zucchinis, peppers and onion, different pesto, artichokes, ricotta, fetta cheese, mushrooms, sundried tomatoes. Think out of the box.
