This cranberry lemon loaf is a low carb bread recipe with a tart cranberry lemon jam layer. I wanted a loaf that could work on regular days but still look intentional enough for something a little more special. I chose the cranberry lemon combination intentionally because the tartness cuts through the richness of the batter in exactly the right way. Watching it flip out of the pan with that glossy jam layer sitting right on top is one of those moments that makes the whole process feel genuinely rewarding.

Creaming the butter with the erythritol and stevia powder for a full two minutes before anything else touches the bowl determines the final crumb.   • Loaf Pan: The correct size for this batter volume.
  • Small Pot: Cooks the cranberry jam down to the right thick consistency before it goes into the pan.
  • Large Bowl: Holds the pound cake batter through all the mixing stages.
  • Hand Mixer: Creams the butter and sweetener properly and beats in the cream cheese until completely smooth.
  • Spatula: Smooths the cranberry jam across the base of each pan and levels the batter on top before baking.
  • Wire Rack: Supports the loaf pans during the full cooling period before flipping.

  • Cranberries: Fresh or frozen cranberries both work here.

  • Stevia Powder: Sweetens the jam without adding weight or changing its texture.
  • Xanthan Gum: Stirred in at the end to thicken the jam to a set, glossy layer that holds its shape during baking.

Pound Cake

  • Unsalted Butter: Must be at room temperature before creaming. 
  • Sweetener: Sweetens the batter.
  • Stevia Powder: Add a small amount alongside the erythritol to balance the batter’s sweetness.
  • Cream Cheese: Softened to room temperature before adding to the mixer.
  • Lemon Zest: Grated from one whole lemon.
  • Lemon Juice: Three tablespoons of fresh lemon juice add the citrus sharpness that pairs with the cranberry layer.
  • Eggs: Added and beaten for a full minute after the cream cheese stage.
  • Almond Flour: The dry base of the batter.
  • Baking Powder: Gives the loaf a gentle lift, keeping the crumb from being too flat or too dense.

STEP-BY-STEP INSTRUCTIONS FOR BAKING GLAZED LEMON CRANBERRY LOAF

First Step: Lay Out and Preheat

Take the butter and cream cheese out of the fridge at least one hour before you start, so both reach room temperature fully. Preheat the oven to 350°Fahrenheit (180°Celsius) and line loaf pans with parchment paper across the base and up the sides, leaving a slight overhang on the long sides. Set out the cranberry jam ingredients separately from the batter ingredients so each stage stays organized before you turn on the heat.

Second Step: Make the Cranberry Jam

Add the cranberries, lemon juice, water, and stevia powder to a small pot over medium heat and bring to a boil, stirring frequently as the cranberries soften and release their liquid. Continue simmering and stirring until roughly half the water has evaporated and the mixture thickens noticeably, then lower the heat. Add the xanthan gum and stir continuously until the jam thickens to a glossy, spreadable consistency, then remove from the heat and let cool slightly before pouring into the pans.

Third Step: Cream the Butter and Build the Batter

Add the room-temperature butter, sweetener, and stevia powder to a large bowl and beat with a hand mixer for a full two minutes, until the mixture is light and fluffy. Add the cream cheese and beat again for another two minutes until completely smooth with no lumps. Add the lemon zest and fresh lemon juice and mix through, then add all five eggs and beat for one minute until fully incorporated.

Fourth Step: Add Almond Flour and Assemble

Add the almond flour and baking powder to the batter and mix until the batter is smooth and fully combined, with no dry pockets remaining. Divide the cranberry jam evenly between the two prepared loaf pans and spread it across the base in an even layer using a spatula. Pour the almond flour batter over the cranberry jam in each prepared loaf pan, dividing it equally, and smooth the surface of each loaf before placing it in the oven.

Fifth Step: Bake, Cool Completely, Then Flip

Place both loaf pans on the middle rack and bake for 1 hour, until the tops are lightly golden and each loaf feels firm and springy when gently pressed at the center. Insert a toothpick into the center of each loaf at the one-hour mark. It should come out clean when done, and if not, continue baking in five-minute intervals. Let both loaves cool completely in their pans on a wire rack before flipping. Then carefully invert each loaf onto a serving plate and slowly peel away the parchment paper to reveal the cranberry topping.

TIPS AND TRICKS:

Most people rush the flip step, and it determines whether the cranberry topping releases cleanly or slides to one side. I turned the loaf out after about 20 minutes of cooling on the first attempt, and the jam was still too warm and loose to hold its shape on the plate.   • Both the butter and cream cheese need to be genuinely at room temperature before the mixer starts. Cold butter will not cream properly even after two full minutes of beating, and the batter will look curdled rather than smooth and fluffy.
  • Add the xanthan gum to the jam only after the water has reduced significantly. Adding it too early prevents the jam from reducing properly because the xanthan gum thickens the liquid before the water has had time to evaporate.
  • A toothpick inserted into the center of each loaf at the one hour mark tells you exactly where you are. If there is wet batter on the toothpick, return them to the oven for five minute intervals rather than guessing.
  • Add frozen cranberries directly to the pot without thawing. They release more liquid as they heat which actually helps the jam base come together, and the finished flavor is just as sharp and tart as it would be with fresh ones.

If fresh cranberries aren’t available, frozen cranberries work directly from frozen and give the same tart, bright flavor. For the sweetener and stevia combination, Brown sweetener, three-quarters of a cup, is the closest swap in terms of sweetness level and baking behavior.

Yes. Let both loaves cool completely before freezing. Slice first, then wrap each slice individually in plastic wrap and place in a freezer-safe bag. They keep for up to two months. Thaw individual slices in the fridge overnight or at room temperature for a couple of hours. Do not thaw in the microwave, as the cranberry layer softens and loses its set texture.

  • 1.5 Cups Cranberries fresh or frozen
  • 2 Tablespoons Lemon Juice 30ml
  • 1.5 Cups Water 360ml
  • 1/2 teaspoon Stevia Powder
  • 1/2 teaspoon Xanthan Gum

Pound Cake

  • 1/2 Cup Butter unsalted room temperature
  • 1 Cup Erythritol
  • 1/2 teaspoon Stevia Powder
  • 6 Ounces Cream Cheese 3/4 of one Philly block
  • 1 teaspoon Lemon Zest
  • 3 Tablespoons Lemon Juice 45ml
  • 5 Eggs
  • 2.5 Cups Almond Flour
  • 1.5 teaspoon Baking Powder

Instructions
 

  • Bring the butter and cream cheese to room temperature, preheat the oven to 350°Fahrenheit (180°Celsius), and line the loaf pans.
