EASY KETO CUPCAKES
For the last four or five years, I have made those perfect Easy Keto Cupcakes. It is just about time to put it all in writing. For me it would be much easier next round I bake them. Don’t you think so?

Until now, I have always had to dig through 1K of little posted notes, where I write all of the recipes. I had one for a small portion, one recalculated for the whole party and so on. But the most important is, that it took me always 10 minutes to find it.
Whenever I wanted to make those Easy Keto Cupcakes, I had the struggle locating the recipe.
But not anymore
Now it is going to be here forever and not only you but me as well can with just one click get the whole recipe.
Those cupcakes or muffins are so extremely easy to make and could be used for really anything. I actually usually make only this recipe, every time my daughter asks for a cupcake. All you need to do is add a bit of spice into it to change the taste.
For Christmas for example, you can add either bit of Cinnamon or a nutmeg or cloves, or all of it together. Then your kitchen would have a lovely Christmas smell all over. All you have to do is mix all the ingredients together and place it into the oven for 10 minutes and those cupcakes are ready.
And for chocolate lovers, just add a bit of Cocoa and few pieces of chocolate chunks.

Transforming them is easy.
Intentionally I have not made this time any icing or anything extra because I wanted you to have the basic recipe of those Easy Keto Cupcakes and it’s then up to you, what additions you add.
Those are and always have been a proven Low Carb Cupcakes. Not only my daughter likes them, but as well all of her friends. Surprisingly also by the ones, which are fully loaded with sugar life.
None of them have realized, they are not real.
Well – real.
They are real and healthy. And that’s what we want our kids to become. Healthier and stronger and with food options we, as parents give them, will stay with them forever. And I do hope that once our kids will be adults, they will pass it on to their kids and husbands and so on.
And one day.
I bet, a healthy life will be promoted all over and there will be no more choice of products we disagree with today. And I do hope that all of the unprocessed healthy choices will be in every single shop. And we will have 1k products to choose from.
The Recipe I have made is exactly perfect for 6 Cupcakes, but you can either double it or just use half if you need only a few pieces and fresh every time.
My next challenge is to make some great Easter cupcakes. But as I know myself, all I will do is used this same recipe. The thing is, that once my daughter likes something, it is pretty dangerous to change it. You never know. But thanks god we still have few months to go for me to decide.
And it only takes a few minutes in the oven for them to be perfectly ready.
For those Easy Keto Cupcakes, you can use just a hand mixer to mix it all together. No need to take out your whole Kenwood (mine) machine. I have it always stored, so before I have to use it, I always think of some easier alternative.
My mother gifted me with this perfect Hand Mixer set, which contains almost anything you can imagine. But the best part of it, it has got also a bowl for graining, which has got double knives then usually others have. Those are perfect when I make some nut butter. Those get really properly grained. How to make Keto Cupcakes?

- 3 Eggs
- 1 Tbsp (16g) Butter
- 3 Tbsp (40g) Powdered Sugar
- 3/4 Cup (70g) of Almond Meal
- 1,5 Tsp (6g) Baking Powder
- Heat up the oven to 200C or 390F
- Mix eggs and powdered sugar substitute into a fluffy consistency using a hand mixer
- Add all of the dry ingredients plus butter and give it a final proper mix.
- Place it on a Cupcake baking tray or into a separate silicon cupcake molds.
- Bake in the oven for 10 minutes.
- Take it out and let it cool properly.
