STEP-BY-STEP INSTRUCTIONS FOR MAKING AN EASY RECIPE FOR LEMON CURD
First step: Prepare all ingredients
First, prepare all of your ingredients.
Make sure you use fresh lemon juice and lemon zest from the organic lemons.
Second step: Melt sweetener with butter
Add the butter with a sweetener – allulose in our case – into a saucepan over low heat.
Third step: Add the rest ingredients and cook
Once the sugar and butter are melted, add lemon zest, lemon juice, and 3 egg yolks. Whisk it all together and cook on low heat until it thickens.
Be aware that the thickening will intensify after cooling much more.
Remove from heat and let it cool. Pour into the glass container and mason jar, close and store in your fridge for up to a week.
Tips and Tricks for sugar-free keto lemon curd:
- Deeper color – use free range eggs
- Strain – in case any lumps
- Smooth – In case you would like to smooth lemon zest as well, use a hand mixer
- Thicker – cook longer to cook out the extra water content
