This homemade easy keto lemon curd is one delight and lasts for over a week in the fridge. Done in less than a few minutes, even if you have never loved lemon curd ever, now it is all going to change. Whip up one whenever you have an extensive amount of lemons in your kitchen. 

What is a lemon curd?

Regular Lemon curd recipe is a spread cooked from the mixture of eggs and lemons. Adding a small amount of sugar or sweetener together with butter will allow you to whip up a smooth, flavorful thick sweet sauce with a slight tingling taste from lemon zest. 

The combinations of zest, lemon, and sweetener compliment its flavor, so a good one will be surprised. 

Is lemon curd keto friendly?

Even though lemons are perfect in the keto lifestyle, original lemon curd is far from keto. Filled with sugar and sometimes even a fresh sweetened juice and starches, it would be challenging to even add a tiny bit into the low-carb lifestyle.

How many carbs are in sugar free lemon curd?

Taking our easy keto lemon curd recipe into the consideration, our entire recipe makes 4 portions. 

One portion, which is approximately a quarter of a cup contains only 1 gram of carbohydrates. Having no fiber, this comes to 1 gram of net carbs per portion. 

What sweetener is best for making low carb lemon curd?

As lemon curd is a smooth, creamy spread or a sauce, it is crucial to use suitable sweeteners. 

Some sugar substitutes, especially erythritol, melt perfectly while cooking but will recrystallize after cooling.

Allulose is the best sweetener for its smoothness and without grittiness after cooling.

If you do not have pure allulose on hand, a mixture of monk fruit sweetener and allulose would be my second choice.

A pinch of pure stevia will add a bit more sweetness if needed.

But if only other sweeteners are available, powdering them before cooking helps dearly.

When low carb lemon curd recipe is finished, it is perfect for spreading onto cakes or cheesecakes or drizzling over fresh fruit. It can also be used as a topping for waffles or pancakes. Homemade lemon curd is so versatile and adds an amazing flavor to any desserts or low carb meals.

First step: Prepare all ingredients

First, prepare all of your ingredients. 

Make sure you use fresh lemon juice and lemon zest from the organic lemons.

Second step: Melt sweetener with butter

Add the butter with a sweetener – allulose in our case – into a saucepan over low heat.

Third step: Add the rest ingredients and cook 

Once the sugar and butter are melted, add lemon zest, lemon juice, and 3 egg yolks. Whisk it all together and cook on low heat until it thickens. 

Be aware that the thickening will intensify after cooling much more. 

Remove from heat and let it cool. Pour into the glass container and mason jar, close and store in your fridge for up to a week.

  • Smooth – In case you would like to smooth lemon zest as well, use a hand mixer

  • Whole egg – even though I have not used whole egg, some recipes calls for both eggs and egg yolk for even thicker and extra gooey texture.

Once you make the curd, try to use it on the day to get the best lemon curd flavors. But if still some is left no worries.Our homemade keto lemon curd can be stored after it cools down in a glass container inside your fridge for up to a week.

Can you freeze lemon curd?

You can, of course, freeze your lemon curd. The best is to fill smaller mason jars, so you have it easier once needed. 

Take one or two jars out of your freezer the night before you need them and let them thaw naturally. Whisk it after it has melted if you see water separation.
