The other night, I was craving a warm, comforting clam chowder, but when I checked the kitchen, all I had were fresh vegetables. I decided to improvise and make a creamy vegetable chowder instead, using the veggies I had on hand. To my surprise, it turned out rich and hearty, almost like a seafood chowder, but using vegetables only.

Fourth Step: Combine Chowder Components

Pour the thickened coconut-flour mixture into the pot of simmering vegetables and stir thoroughly to blend everything together. Reduce the heat to low and let the chowder cook for another 10 minutes so the flavors can deepen. Finish by stirring in the shredded cheddar until melted and smooth, then taste and adjust seasoning before serving.

  • 6 Tablespoons Butter cubed
  • ¼ Cup Coconut Flour
  • 2 Cups Whole Milk
