This quick and easy to make Keto Beef Stew prepared in an Instant Pot can be served with our Keto Farmers Bread or Keto Bread Dumplings and a bit of Sugar-Free Cranberry Sauce to compliment the flavors.
Goulash is and has been one of my favorite childhood dishes, our mum used to make for us regularly. Actually, when I think about that, my whole Blog is filled with my childhood favorites, which I am slowly transforming into a Low Carb or keto lifestyle. Starting with Stuffed Peppers with Low Carb Rice, Homemade Farmers Cheese, through to Low Carb Sauerkraut Chicken up to my best ever Sugar-Free Meringue Cookies and Low Carb Crepes.
Those are the dishes, I can not live without. And continue to live within our lifestyle.

What is Goulash?
Goulash is a dish similar to a Stew or soup filled with meat, vegetables and lots of paprika spice.
The best meats to use for Goulash are shins or shoulder, which contains lots of collagen. Collagen, in the process of cooking converts to gelatin, which thickens this extraordinary soup or stew.
Originally goulash contains potatoes and those starches the Stew even more to the perfect thickness.
Goulash is very popular during the camping season.
Originally made in a Cauldron hung over the Campfire and prepared by a group of friends slowly throughout the day during the gathering.

What country is Goulash from?
Origins of Goulash come from Hungary, where during medieval times, herdsmen used to travel around Europe together with their troops of Cattles to make sure they always have enough to kill and cook goulash with. They have normally used almost all of the meat from Cattle to feed the whole troops.
As Slovakia, used to be a very important part of the Kingdom of Hungary for several centuries, they have adapted and Goulash has become a very fundamental part of Slovakian cuisine.
Slovak cuisine is very similar to Hungarian, Bohemian or Austrian due to the interconnection all of the countries were in.
And that is also an explanation, why this perfect Meat Stew is very dear to me and popular during my childhood.

How to make Keto Goulash?
My Keto Recipe for Goulash is filled with mushrooms as I believe they add extra flavor to our delicious Low Carb Beef Stew.

INGREDIENTS TO MAKE KETO BEEF STEW
- Extra Virgin Olive Oil
- Onion
- Garlic
- Beef
- Red Paprika spice
- Curcuma
- Mushrooms
- Carrot
- Parsley
- Bone Broth

STEP BY STEP INSTRUCTION ON HOW TO MAKE THE BEST KETO BEEF STEW
First Step: Instant Pot and oil
Switch you Instant Pot on Stew and let it heat up.
Once the heating process is finished, add olive oil.

Second Step: Onions and Garlic
First, add all of your chopped onions and let them cook until golden brown.
Once they are done add chopped garlic and let it simmer for a while.

Third Step: Beef
Cut your beef into similar sizes and add it into the pot. With a gentle and regular mixing, let the meat crust on the outside from all sides.

Fourth Step: Instant Pot OFF
Switch the Instant Pot Off.
Make sure your Instant Pot is switched off.
This step is very important, otherwise, your paprika spice will burn and get a bitter taste.

Fifth Step: Paprika and Curcuma
Once the Instant Pot is switched off and meat has cooled for about 3 minutes, add paprika and Curcuma.
Mix it fully making sure all of the meat gets coated with Paprika and Curcuma spices.

Sixth Step: Vegetables
Add all of the chopped mushrooms, carrot and parsley and mix fully.

Seventh Step: Bone Broth
Add Bone Broth. Depending on what you are planning to cook, add the amount accordingly.
- Keto Goulash Soup – 1 liter (4 Cups) of Bone Broth.
- Keto Goulash Stew – half a liter (2 Cups) of Bone Broth.

Eighth Step: Pressure Cook
Close the lid on an Instant Pot. Make sure the valve on the top is closed.
Switch the Instant Pot on Pressure Cook, on High for 25 Minutes.
Once it’s done, let the Instant Pot release the pressure gradually.

Cooking Tips
- Adding Paprika – make sure your Instant Pot is Switched OFF, otherwise, your paprika spice will burn and get a bitter taste.
- Add 4 cups of Bone Broth if you are planning to make a Keto Soup and only 2 Cups of Broth if you are planning to make a thick Keto Stew.
- Curcuma – is optional. I add it to almost all of our dishes because of healthy advantages and almost no taste.
- Thickenings – If you need to thicken the stew a bit more, use either Un-fattened Almond Flour, Coconut Flour, Xanthan Gum or Gelatine.
FREQUENTLY ASKED QUESTIONS AND ANSWERS
You certainly can. The process is a bit longer, but that is the exact way, I have been making it until purchasing our Instant Pot.
Follow the same instructions up to adding the spices.
After that, add a little bit of Bone broth and let the meat simmer for 2-3 hours.
Once the meat is tender, add the vegetables and additional Bone broth and let it simmer for another 30-40 minutes.
The best meats to use for Goulash are Chucks, shins or shoulder, which contains lots of collagen. Collagen, in the process of cooking converts to gelatin, which thickens this extraordinary soup or stew.
There are a few reasons why your meat is not tender enough.
1. You have used more Tender muscles. Here heat causes the protein in the meat to firm up and making your pieces tougher. If that is the case, let the Instant Pot pressurize for an hour.
2. Your meat is cut into big chunks. Either cut them smaller of letting the pressurizing for longer.
3 various options you can use
1. Un-fattened Almond Flour – this is the flour I have used at the beginning of our Low Carb journey a lot. The consistency is very similar to a coconut Flour being very dry and perfect for thickening. Because Almond flour does not have a very strong taste, I have used approximately 1 Tablespoon to all of my stews and sauces. Perfect thickening agent. If you do not have Un-fattened Almond Flour, coconut flour might help as well.
2. Xanthan Gum – A pinch of Xanthan gum sprinkle on top of the stew makes a big difference. Make sure you really use only a pinch, otherwise you will end up with a thick mess. You can always add extra later on if you feel that our Low Carb Beef Stew is not thick enough.
3. Gelatine – One of the options as well. Make sure you melt the gelatin in a small bowl with a bit of water, before adding it into the soup or stew.
This is slightly different from what you might be used to call American Goulash. Similarity are, that both calls for beef and paprika.
American Goulash is made out of minced meat, with added pasta and sometimes also a tomato sauce.
In my childhood, Goulas used to be served with Bread only. Our Keto Farmers Bread is a perfect choice.
You can also add Keto Bread Dumplings also called Steamed Bread, which is perfect side dishes to all of the stews or Low Carb
Additionally to that, a spoon of Sugar-Free Cranberry Sauce will perfectly compliment all of the flavors.
Normally Keto goulash could be stored in the refrigerator up to 4-5 days. Best is to store it in an Air-tight Glass Containers.
I love to use Mason Jars. After our dinner, I always separate the leftovers into mason jars and keep some in the refrigerator and some go straight into the freezer. In that way, my Keto Meal Planning gets much easier.
You certainly can and that is the exact process I make. After the food is cooked, I store it in a glass container and place it into the freezer. Whenever needed, I just take one of the containers our the night before and let it slowly thaw in the fridge.
The best process is if you could take the Jar out of the Freezer the night before. Place it into the refrigerator, where it will thaw automatically. The next day, place it into a small cooking pot and let it warm up. Done.
If not ad you are in the hurry, I normally let the open Jar thaw on a slow heat in the microwave until I am able to pour the liquid into the Pot for cooking.

- 500g (1,1 Pounds) Beef Meat

- 1 Small Carrot

- 05 L - 1 L (2 - 4 cups) Bone Broth
