An ordinary Chicken Soup, made with meat and vegetables, is on its own fully Low Carb and Keto. Adding extra thickening agents to make it a creamy soup will transform it into a soup with additional carbohydrates.
And if you pick Low-Carb Noodles from the choices above, this will still stay fully Low Carb.
It is advised to use as many root vegetables as you can get. They add extra nutrition to your broth or soup and are great for your health overall.
The amount depends on your liking. I try to fill the whole soup with as many vegetables as possible to get our soup fully nutritious.
To have a perfectly flavored chicken noodle soup will take approximately an hour or 1 hour and a half, depending on the size of the chicken.
You can also choose to cook our low-carb soup with chicken on very low heat for 8 hours, sometimes even 24 hours. This is similar to replicating your slow cooker, where the slower your soup will cook, the more nutrition it will save.
Adding just one tablespoon of vinegar into your Chicken Bone Broth or Soup will make a big difference at the end of the cooking process.
Acid from the vinegar will help with the extra formation of gelatin coming directly from the bones and cartilage of the chicken.
Vinegar also enhances the flavor of all the cooked vegetables.
Chicken soup or broth?
Once done, you can choose if you would like to serve it directly with all the vegetables and chicken or separate the liquid and have a perfect Chicken Broth ready for whenever needed.
I love to store the clear soup, also called chicken broth, into individual Mason Jars and have them ready in my freezer.
I follow the same steps whenever I make our Bone Broth made in an Instant Pot, so I am always equipped with enough broth to use.
How To Make Homemade Chicken Soup?

STEP-BY-STEP INSTRUCTIONS ON LOW-CARB CHICKEN SOUP WITH HOMEMADE EGG NOODLES
First Step: Ingredients for Low-Carb Chicken Soup Recipe
Prepare all the ingredients for the soup. All you need is half of a chicken and all, mostly root vegetables you can find. If you have a garden, you are one of the lucky ones, but if not, try to get root vegetables which you can cut into smaller pieces. Because the soup is cooking pretty long compared to the others, I keep the veggies as big as possible, so they do not cook immediately and do not stay mushy at the end.
Second Step: Start with Cooking the Chicken
Add half a chicken, salt, and pepper into a big cooking pot. Cover it with cold water just so the chicken is submerged. The soup might be very watery if you add more water, and the flavor will not be as intense. I have added approximately 1 ½ liter of water in.
An option is adding a tablespoon of apple cider vinegar. I have mentioned above in the post benefits of adding vinegar into the bone broth or a chicken soup.
Cook for a half-hour over medium heat.
Once you see a tiny bit of fluffy foam on top called scum, you can discard that with either a sieve or a spoon. Those are impurities coming from the bones and meat and can include toxins, so it is better to remove them.
Third Step: Add Vegetables and cook
In the meantime, you can clean all of your veggies and cut them so they do fit into the pot. Add all vegetables inside the soup and cook over medium heat for another 1 hour.
If you have time and would like to get more nutrients, you can choose to cook your chicken soup on low heat for 8-24 hours.
Fourth Step: Prepare and make Keto Soup Noodles

Have them prepared either beforehand, or you can also prepare them while your Chicken Soup is cooking as it only takes 8 minutes to bake.
Fifth Step: Strain
Using a strainer and cheesecloth, strain all soup into another pot to get the clear broth for you to use.
Sixth Step: Store
You can pour the clear chicken broth into the Mason Jar later on and leave only the amount you will use for serving.
Seventh Step: Prepare to serve
Cut vegetables and cooked chicken into smaller pieces and place them into your serving plates. Pour over with boiling Broth.
Eighth Step: Add Noodles
Here goes your choice of noodles. You can either use our Low-Carb Soup Noodles or pick one of the suggestions mentioned above in the article.

After the noodles are baked and are added to a sauce/soup, do they maintain their shape and consistency or do they soften as a result of the added heat in the sauce/soup. They might soften tiny bit, but I have not realized the consistency changing.
