This sugar free jello recipe is a clean, jewel-bright raspberry flavor with zero sugar, no artificial mix, and none of the additives that come in a box of store-bought Jell-O. Four simple ingredients and a few hours of chilling time give you a gelatin dessert that looks and tastes far better than anything pre-packed.

I started making this every summer when the raspberries are at their best, and I wanted something cold in the fridge without turning on the oven. Fifteen minutes on the stove, a few hours to chill, and I have a full container of set jello ready to pull out whenever the heat calls for something sweet and cold. It has become one of those summer staples I make when the season rolls in.

More Than Just a Snack

This jello works as a light dessert on its own, layered into a glass with a spoonful of whipped cream or cream cheese for a simple treat, or sliced into cubes and served alongside a slice of yogurt cheesecake, mini cheesecake bites, or  no-bake blueberry cheesecake for something refreshing on the side. One batch makes enough for several servings, which makes it an easy make-ahead option for the whole week.

Four Ingredients, No Box Required

Store-bought jello mixes rely on artificial flavor and a long list of additives to get the job done in a single packet. This version uses four simple ingredients and tastes cleaner, brighter, and more like real fruit than any box-mix ever could. My sugar free condensed milk uses the same minimal approach and delivers far better results than the canned version.

How To Make Homemade Sugar Free Jello

Four ingredients, one pot, and a few hours of chilling time are all it takes to have a container of vibrant, set raspberry jello ready to serve.

Kitchen Gadgets Needed:

  • Large Pot: Holds the raspberries and water while they simmer and later dissolves the gelatin into the strained liquid.
  • Blender: Blitzes the simmered raspberry mixture smooth before straining so every drop of flavor gets extracted cleanly.
  • Fine Mesh Sieve: Strains out all the raspberry seeds after blending for a smooth, clear jello with no texture interruptions.
  • Whisk or Spoon: Stir the gelatin continuously into the warm liquid until every granule dissolves completely.
  • Large Glass Container: Holds the finished jello liquid while it cools on the counter and sets in the fridge.

Ingredients Needed:

  • Fresh or Frozen Raspberries: Simmered in the water to release their juice and build the deep berry flavor.
  • Water: Combined with the raspberries in the pot to create the liquid base.
  • Sweetener: Stir into the pot before simmering to sweeten the jello evenly without adding sugar or artificial sweeteners.
  • Gelatin: Sprinkle into the warm, strained liquid and stir continuously until fully dissolved, to set the gelatin to a firm, sliceable texture.

STEP-BY-STEP INSTRUCTIONS FOR CREATING SUGAR-FREE HOMEMADE JELLO DESSERT

First Step: Prepare Your Ingredients

Measure out all four ingredients and have your pot, blender, fine mesh sieve, and glass container within reach before you start. If you are using frozen raspberries, there is no need to thaw them first, as they will soften quickly once the water heats up. Having everything ready before you turn on the heat makes the process run smoothly from start to finish.

Second Step: Simmer and Blend

Pour the water into the pot, add the sweetener and raspberries, and bring everything to a boil, then reduce the heat to medium. Let the mixture simmer for 10 minutes until the raspberries have fully broken down and released all their color and flavor into the liquid. Carefully transfer the hot mixture to a blender and blitz for about a minute until completely smooth.

Third Step: Strain and Dissolve the Gelatin

Pour the flavored mixture back through a fine mesh sieve into the pot, pressing gently to remove all the seeds and leave a clean, smooth liquid behind. Return the pot to medium heat, sprinkle 4 tablespoons of gelatin over the surface, and whisk continuously until all granules have completely dissolved, with no lumps remaining. Do not let the mixture boil at this stage, as high heat can affect how well the gelatin sets.

Fourth Step: Cool and Set

Pour the jello liquid into a large glass container and leave it to cool on the counter for 2 hours before moving it to the fridge. Chill for at least 3 hours until fully set, or leave it overnight for the firmest, cleanest slice. Once completely set, slice into portions or scoop directly from the container and serve as a cold pudding dessert, snack, or treat.

Zuzana’s Take and Tips:

When I was making this, I added the gelatin while the raspberry liquid was still boiling, and the jello never set properly, coming out soft and loose even after a full night in the fridge. Pulling the pot off the heat and letting the liquid cool to a warm temperature before adding the gelatin fixed it completely on the next batch, because gelatin needs warmth to dissolve, but loses its setting power when exposed to a rolling boil. If you skip the full 3-hour chill and try to serve it early, it will be too soft to slice cleanly, so the wait is worth it.   • Run a sharp knife under warm water before slicing for the cleanest cuts without the jello sticking or tearing.
  • If the gelatin starts to clump when you sprinkle it in, whisk immediately rather than waiting, as clumps that sit too long are harder to dissolve.
  • A wider, shallower container gives you more surface area and thinner slices that set faster than a deep, narrow one.

FREQUENTLY ASKED QUESTIONS AND ANSWERS

Substitute For Jello Ingredients

If you do not have stevia powder, monk fruit extract powder substitutes at the same ratio. Any berry works in place of raspberries, including strawberry, cherry, or blueberry, though the color and flavor will change with each swap. Do not substitute the gelatin with agar agar at the same quantity, as agar sets much firmer and requires a different ratio.

What To Serve With Low Carb Jello?

This jello works beautifully served in a cup layered with a spoonful of whipped cream on top for a simple, good-looking dessert. It also pairs well with a slice of ripple cheesecakelemon cheesecake, or peanut butter cheesecake when you want a light, cold contrast to something richer. How Do I Store Freshly Made Jello?

Store in a sealed container in the fridge for up to 5 days. Keep it covered at all times to prevent it from absorbing other flavors from the fridge and to maintain the clean raspberry taste through every serving.

Can I Freeze Jello Desserts?

Freezing is not recommended for this recipe as gelatin desserts lose their set texture after freezing and thawing, becoming watery and grainy rather than firm and smooth. Refrigerator storage for up to 5 days gives you the best texture and the cleanest flavor from every serving.
