This super easy and quick Keto Chia Pudding made with only 4 ingredients and done in less than 5 minutes will be your go-to keto Dessert anytime you need a quick fix.
After making our Keto Dalgona Coffee Chia Seed Pudding last week, I could not stop thinking of another variation of chia pudding we can have in our lifestyle.
As you can see, we really love our puddings. I have started with plain mixed almond milk with Chia seeds a few years ago and developed the love of Chia seeds from then on.
I have spent a few weeks playing with our Rainbow Low Carb Chia Pudding and have made it on several occasions for our barbecue parties.
Then I moved on to something really quick but coconut-y with our Chia Coco pudding which is quick and easy as well.
All of those being toped up with Keto Whipped Cream and you have a full meal.
And now after Dalgona coffee pudding comes to a perfect chocolatey mousse Chia pudding nobody will ever refuse.
Ground Chia seeds
The first time I have used Ground Chia Seeds was for our Dalgona Coffee Keto Chia Pudding just because I wanted to mimic the milk-white looking base for the Dalgona Coffee topping.
That pudding was not only good looking but so tasty, that I had to try another recipe with ground Chia seeds.
Ground Chia Seeds and not only great for making your pudding much faster but they’re perfect for extra smoothness and having mousse-like texture pudding.
Additionally to this, the omega-3 fatty acids which are a part of Chia seeds are much better absorbed once the Chia seeds are ground. This is the same case as with the flaxseed where it is always advised to use ground flax seeds instead of the whole seeds.
And then I thought of chocolate.
Keto Chia Seed Chocolate Pudding
Mixing a Chia seeds together with a bit of cacao and one of the nut milk will give you an unbelievable Keto Pudding in a few minutes. And the best part is that it’s so easy.
All you do is put all the ingredients together, blend it, pour and there you have it.
As you see on our video I use most of the time our Magic Bullet, which works pretty well for all of the recipes.
But I have realized, to get a really fluffy and mousse-like looking Chia Pudding, you need something much stronger.
After about a week of making this recipe (which do not get me wrong – the magic bullet is just perfect) as I thought.
I was on Instagram and somebody just dumped something similar to this recipe into the Vitamix Blender and blended it. And then when I saw the real mouse coming out of the blender I had to call my friend, who’s got a Vitamix and see if my recipe would do the same.
I gave her my whole recipe and my full instructions and asked her if she could make it in her Vitamix. I was not sure if it was a blender or the steps I made that I didn’t really get that fully fluffy chocolate mousse pudding.
And there you go, she made it. She sent me a picture and it was the best mousse looking pudding you can imagine.
So, if you have a really strong blender like Vitamix or a Ninja, you should get a double mousse pudding from this Keto Chia Seed Recipe.
And I have to tell you, I have just ordered a blender hopefully strong enough. It’s not Vitamix but it’s coming tomorrow and can’t wait to try all of the recipes on it.
Maybe I will even redo the pictures. Or maybe not.

Chia seeds are the perfect addition to a low-carb or keto lifestyle. Extra rich in antioxidants with a huge amount of fiber content without sugar unlike most of the fruits, Chia seeds are one of the best ingredients to use in our lifestyle.

You can even make your own milk like our Coconut Milk made from scratch.
You can also use a heavy cream mixed with water if it is too thick for you.
To make a perfectly thick but still on a soft side Chia Puddings, I always use the ratio of a quarter cup of Chia seeds to 1 cup of milk.
In this recipe I have used 2 cups of milk with half a cup of ground Chia seeds.
Remember that when you’re using ground Chia seeds for pudding, you do not really have to wait 20 or 30 minutes as usual with ground Chia seeds mixed with one of the nut milk.
The pudding comes thick in just a few minutes.
When making plain nut milk (mostly almond milk in our case), I never use a sweetener.
It should be enough to normally top it up with berries, add Sugar-Free Strawberry Jam, sprinkle it with nuts, or use cinnamon or Sugar-Free Keto Sprinkles on top.
That is more than enough for me and my family.
But it is really up to you.
If you use any of the sweeteners, I would suggest either mix Erythritol with Stevia or use already pre-mixed sweeteners such as Lakanto or Besti.
That will give you the exact sweetness you are looking for.

How to make Keto Chia Seed Chocolate Pudding?

- Chia Seeds
- Nut Milk
- Sugar Sweetener
- Raw Cacao
STEP BY STEP INSTRUCTIONS ON HOW TO MAKE KETO CHOCOLATE CHIA PUDDING
First Step: Prepare Ingredients
Prepare all of the ingredients for quick and easy maneuver.
All you need is your Chia seeds, sugar sweetener, raw cocoa and nut milk of your choice.
Second Step: Grind Chia Seeds
In the Magic Bullet or a Coffee Grinder, grind Chia seeds into a powder. This will give the Chocolate Chia Seed Pudding this Mousse looking and tasting feature.
Third Step: Add all together
Once your Chia seeds are grind, keep them aside and prepare a glass jar, in which you can hand mix all of the ingredients together.
One by one, start with mixing first the powdered sugar sweetener together with cacao.
Prepare your hand blender and start pouring the milk slowly into the glass jar, while mixing the pudding.
Once all of the milk is mixed, start adding the Chia seeds as the pudding will thicken immediately.
Fourth Step: Hand Mix all
Using your hand mixer, make sure all of the powdered chia seeds are mixed into the pudding and you do not have any crumbles.
Fifth Step: Pour
Once your mixture is fully combined pour pudding into the glass containers you are going to serve it in as this Keto Chocolate Chia Pudding will still thicken a bit and set.
Sixth Step: Top Up
Once you’re ready to serve top it up with either a Greek yogurt or a whipped cream.
You can also leave it as it is. All your choice.

Why is my Chia Pudding Runny?
The advantage of Chia seed pudding is that you can easily adjust the thickness.
If you feel that your Chia pudding is runny and not thick enough, just add a bit of extra Chia seeds and mix it.
When adding a whole Chia seeds, you might have to wait 15 to 20 minutes for the pudding to thicken up.
With Ground Chia powder, the thickening should happen immediately or within a few minutes.
On the other side, if your pudding is too thick, adding a bit of extra nut milk, should loosen it up and make the Chocolate Chia Seed pudding or any other Chia seeds pudding more liquid.
What can you serve Keto Chocolate Chia Seed Pudding with?

I normally make a big batch for the whole week and take the amount I need for the day – every day.
Can you freeze this Keto Chocolate Chia Pudding?
You can certainly freeze Keto Chocolate Chia Pudding in the freezer stored in the airtight container or a Mason Jar.
Once you want to unfreeze it just take it out of the freezer the night before and let it thaw naturally.
To tell you the truth, I have never frozen a Chia Pudding as it really lasts a long time in the refrigerator and until the end of the week is over, all of the Chia pudding is gone.

There is not really a big difference which one to use. I normally use whatever I have opened at that moment.
Oh my goodness, this is wonderful! I have made many a chia seed pudding in my 3 yr keto journey. This IS hands down the BEST EVER. Made exactly as recipe states. Up to this point I have NEVER repeated a chia seed pudding recipe. Where do I start. Chocolate Keto deserts never satisfy. However, The texture and flavor in this recipe is wonderful. I will experiment with an orange extract next time.
I really want a lemon or lime chia pudding but have no clue where to start. Please if you have any suggestions I would be great-full.
