Years ago, I have tried various recipes to make granola or Cornflakes for my daughter for Breakfast. Something she would like. But it never went in a positive way. Even though I thought they are perfect, she never really liked any of them.
Then came last Christmas, when we went for a skiing trip to a hotel, where all the kids from our friends have decided to eat different types of granolas for Breakfast. Every single day. And of course, my daughter seeing this, wanted to copy. So she kept asking for them more and more.
Once we came from the trip, my trials started. And because I just got fresh walnuts from my mum, those were the main base to try it with. After a few attempts and some inspirations, I think I found the right one.

At least I can see that those are really the best since my daughter eats them now on a daily basis already for the last 3 weeks. Yesterday I even tried to convince her to have something else for breakfast. Something she used to love before. Like those buns with bacon and eggs.
But NO WAY.
She wakes up every morning already talking about them and as I see it, it will take a while until I will convince her to give breakfast a bit of a change. The last time, I decided to double the recipe, because of how quickly they are gone. The best part is that they are really crunchy. That is something I have been missing before.
Once you try them, you will not go back to anything.

I have also added a few Freeze-Dried berries, just for the color and feeling or a real shop bought granola.
You certainly can, if you make it yourselves. Homemade Granola is, in any case, the best you can do. First of all, you do know exactly what goes in and you can control it fully. Also with our Keto Granola being able to store for weeks, there is no reason why would you buy one.

Using the same steps, you can make a perfect Keto Granola bar out of this. Just place them into a silicone mold before baking and you are good to go. Depending on the thickness of the bars, you might add up the baking time.
If you do not have the silicone mold, just spread the granola a bit thicker onto a sheet and bake the first round. Take it out of the oven, using a sharp knife gently cut through the sheet into logs. Place it into the oven for the second crunch and enjoy.
Various powdered sweeteners could be used for this recipe. I have already experimented with Sukrin, Swerve as well as Lakanto and they all worked fine. Make sure your sweetener is powdered, so it is easier for the mass to get combined fully.
Keeping the base of the recipe, which is egg, coconut oil and almond meal the same, you can add nuts of your choice. Add more cinnamon if you wish, cacao for chocolate flavor, nutmeg, chia seeds, flaxseeds, additional seeds you like. Your imagination here could be endless. Use your favorites and experiment. How to make Crunchy Keto Granola Cereal?

STEP BY STEP INSTRUCTION FOR LOW CARB GRANOLA MAKING
First Step: Prepare Ingredients
Cut all of the nuts into small pieces. Prepare all your ingredients for easy assembly.

Second Step: Mix Dry ingredients
Add all of the dry ingredients into a bowl and mix.

Third Step: Add Egg and Oil
Once all is fully mixed, take an egg and with your handheld Mixer mix it until fluffy. Add it into the mixing bowl with the dry mix. Add coconut oil and using your spatula, fully mix everything, making sure the eggs and coconut oil are spread fully and covering all of the nuts.

Fourth Step: Spread and Bake
Once all is mixed, spread it on a baking tray covered with a silicone baking sheet. You can also use a parchment paper if you prefer. Silicon sheet is great for this recipe because it will ensure that nothing will be stuck on a sheet once you are going to break the granola into smaller pieces.
Place it into the oven and bake.

Fifth Step: Break into smaller Pieces
Once the granola is baked for the first round, take it out and using either spatula or as I have used, cake decorating scraper, gently lift the Granola sheet and break it into smaller pieces. How small the pieces are, depends on how big clusters you would like to have in your Granola. Try to break the whole sheet into similar size clusters and spread it evenly on a baking sheet again.

Sixth Step: Bake again
Bake for the second time. Once baked, take it out and let it cool.

Seventh Step: Cool, mix, add Berries and Store
Once your Keto Granola Clusters have cooled down, place them into a mixing bowl, add Freeze Dried Berries and gently mix them into the Granola.
Fully Mixed, place all of the Low Carb Granola into airtight containers, best Mason Jars and store in your Keto Pantry for several weeks to come.

FREQUENTLY ASKED QUESTIONS AND ANSWERS
I’m not a fan of coconut, is it ok if I left out the coconut chips and shredded coconut or is that a big part of the flavor? Any substitutions?
It is not a problem at all. With this recipe, you can use any kind of nuts you like instead of coconut. For the flakes, I would suggest the almonds sliced into flakes to give it that granola feel.
My Granola is not Crunchy enough.
You have not baked it long enough or you have spread it too thick. Try separating your mixture into two separate baking sheets and bake.
How to store Sugar-Free Granola?
The best to store this Low Carb Granola to retain crunchiness is in an Airtight Container. I use Mason Jars for almost everything and they are perfect for this recipe as well. Store the Jars in your Keto Pantry for weeks to come.

How long can you store Keto Granola?
This Keto Granola Recipe can be stored for a very long time. From several weeks, for up to a few months. ( That’s what I have done).
If fully cooled and properly stored, they perfectly crunch at all the time.
Can Keto Granola be frozen?
It can, but they will lose the crunch. If you still prefer this method, you might need to place them into the oven once they de-freeze to regain the crunchiness.

Low Carb Granola

This Easy to make Homemade Crunchy Keto Granola Recipe will be a staple to your Low Carb Breakfast. Fully Sugar-Free, Grain-Free and Gluten-Free Granola will add extra protein for your so much wanted nutrient-packed Keto Breakfast.
Ingredients
- 50g (0,5 Cup) Almond Flour
- 40g (0,5 Cup) Shredded dry Coconut
- 50g (0,5 Cup) Ground Hazelnuts
- 120g (1 Cup) Whole Walnuts
- 50g (1 Cup) Coconut Chips
- 80g (0,5 Cup) Sesame seeds
- 30g (2 Tbsp) Sweetener
- 5g (1 Tbsp) Cinamon
- 25g (2 Tbsp) Coconut Oil
- 1 Egg
- 10g (0,5 Cup) Freeze-Dried Berries
Instructions
- Preheat the oven to 150C (302F)
- Cut the Whole Walnuts into smaller pieces
- Mix all the dry ingredients
- Mix one egg with a hand mixer and add it to the mixture
- Add Coconut oil and mix everything properly.
- Place it on a baking tray covered with a baking sheet and spread the whole mixture onto the tray.
- Press it with your hands and place it into the oven for 25 minutes.
- After they are baked, lower the oven temperature to 100 C (212F), take out the tray and properly mix the granola and break it into smaller pieces
- Once they are nicely spread on a tray, place it in the oven again for 35 minutes at a lower temperature to make them nice and crunchy.
- Once done, let it cool, add the Freeze-dried berries and enjoy.

Notes
If your Keto Granola is not Crunchy enough, you have not baked it long enough or you have spread it too thick. Try separating your mixture into two separate baking sheets and bake.
Add whatever Nuts or seeds you like to give your Keto Granola an additional Touch.
Sprinkle it with cinnamon or spices to add into the flavor.

Dear Zuzana, So, I made the granola again yesterday. I used double trays and did the first baking at 275 F and the second at 200 F. It came out very nice. I thought of something else that could have gone wrong my first time. I had used Brown Sugar Swerve instead of Confectioners Swerve. This time I used Confectioners Swerve as well as the temperature change and double trays. It's wonderful! Blessings, Sylvia

Hi there. I just tried this granola recipe and after 25 minutes in the oven at 302 degrees F, about half of it is burned. I'm not aware of my oven being hotter than it should be, as this has not happened with any other recipe. Please advise me on what could've gone wrong.

First of all, I am sorry for what has happened. I bake those regularly and always as per the recipe on the blog. The only thing I can think of is, that probably nuts were cut into tiny pieces and not enough of it? So it has spread thinly and therefore burned? This is just me fully guessing, but I have really no idea what could have happened.
