Years ago, I tried various recipes to make muesli, cereal, granola breakfast, or cornflakes for my daughter. Something she would like. But it never went into positivity. Even though I thought they were perfect, she never really liked any of them.
Then came last Christmas, when we went for a skiing trip to a hotel, where all the kids from our friends decided to eat different types of muesli and granolas for Breakfast. Every single day. And, of course, my daughter, seeing this, wanted to copy. So she kept asking for them more and more.
And I was adamant about getting it right for her.
Once we came from the trip, my trials started. And because I just got fresh walnuts from my mum, those were the main base to try it with. After a few attempts and some inspiration, I think I found the right one.
At least I can see that those are the best since my daughter has been eating them now daily already for the last three weeks. Yesterday I even tried to convince her to have something else for breakfast. Something she used to love before. Like those buns with bacon and eggs. Or pancakes for a change.
But NO WAY.
She wakes up every morning already talking about them, and as I see it, it will take a while until I convince her to give breakfast a bit of a change. The last time, I decided to double the recipe because of how quickly they were gone. The best part is that they are extra crunchy. That is something I have been missing before.

STEP BY STEP INSTRUCTION FOR LOW CARB GRANOLA MAKING
First Step: Prepare Ingredients
Cut all of the nuts into small pieces. Prepare all your ingredients for easy assembly.
Second Step: Mix Dry ingredients
Add all of the dry ingredients into a bowl and mix.
Third Step: Add Egg and Oil
Once all is fully mixed, take an egg and with your handheld Mixer mix it until fluffy. Add it into the mixing bowl with the dry mix. Add coconut oil and using your spatula, fully mix everything, making sure the eggs and coconut oil are spread fully and covering all of the nuts.
Fourth Step: Spread and Bake
Once all is mixed, spread it on a baking tray covered with a silicone baking sheet. You can also use a parchment paper if you prefer. Silicon sheet is great for this recipe because it will ensure that nothing will be stuck on a sheet once you are going to break the granola into smaller pieces.
Place it into the oven and bake.
Fifth Step: Break into smaller Pieces
Once the granola is baked for the first round, take it out and using either spatula or as I have used, cake decorating scraper, gently lift the Granola sheet and break it into smaller pieces. How small the pieces are, depends on how big clusters you would like to have in your Granola. Try to break the whole sheet into similar size clusters and spread it evenly on a baking sheet again.
Sixth Step: Bake again
Bake for the second time. Once baked, take it out and let it cool.
Seventh Step: Cool, mix, add Berries and Store
Once your Keto Granola Clusters have cooled down, place them into a mixing bowl, add Freeze Dried Berries and gently mix them into the Granola.
Fully Mixed, place all of the Low Carb Granola into airtight containers, best Mason Jars and store in your Keto Pantry for several weeks to come.

Coconuts substitution

It can, but they will lose the crunch. If you still prefer this method, you might need to place them into the oven once they de-freeze to regain the crunchiness.

Crunchy Keto Muesli Granola Recipe
Equipment
- 1 Spatula or Cake Decorating Scraper
Ingredients
- 0,5 Cup Almond Flour
- 0,5 Cup Shredded Dry Coconut
- 0,5 Cup Ground Hazelnuts
- 1 Cup Whole Walnuts
- 1 Cup Coconut Chips
- 0,5 Cup Sesame Seeds
- 2 Tbsp Sweetener
- 1 Tbsp Cinnamon
- 2 Tbsp Coconut Oil
- 1 Egg
- 0,5 Cup Dried Berries
Instructions
- Preheat the oven to 150 Celsius or 300 Fahrenheit
- Cut the Whole Walnuts into smaller pieces
- Mix all the dry ingredients
- Mix one egg with a hand mixer and add it to the mixture
- Add Coconut oil and mix everything properly.
- Place it on a baking tray covered with a baking sheet and spread t he whole mixture onto the tray.
- Press it with your hands and place it into the oven for 25 minutes.
- After they are baked, lower the oven temperature to 100 Celsius or 200 Fahrenheit, take out the tray and properly mix the granola and break it into smaller pieces
- Once they are nicely spread on a tray, place it in the oven again for 35 minutes at a lower temperature to make them nice and crunchy.
- Once done, let it cool, add dried berries and enjoy.

Okay, everytime I think I have the right ingredients to make these low-carb recipes, I run into a glitch. I have almond flour, is it the same thing as almond meal?

Almond Flour is almonds without skin (white in color) and is ground more finely. Almond meal is the same thing, but with the skins left, so the color is a bit darker. In this recipe, you can use any of those as long as they are ground almonds. Hope that helps.

This recipe is prepared in a way, that you can change your nuts options without a problem. Just keep the amount sam, so you do get the perfect results. But feel free to change the hazelnuts to any other nuts you prefer. Also, you have to consider recalculating your macros if it is important for you. That would definitely change a bit.
Hi there. I just tried this granola recipe and after 25 minutes in the oven at 302 degrees F, about half of it is burned. I’m not aware of my oven being hotter than it should be, as this has not happened with any other recipe. Please advise me on what could’ve gone wrong.

First of all, I am sorry for what has happened. I bake those regularly and always as per the recipe on the blog. The only thing I can think of is, that probably nuts were cut into tiny pieces and not enough of it? So it has spread thinly and therefore burned? So, I made the granola again yesterday. I used double trays and did the first baking at 275 F and the second at 200 F. It came out very nice. I thought of something else that could have gone wrong my first time. I had used Brown Sugar Swerve instead of Confectioners Swerve. This time I used Confectioners Swerve as well as the temperature change and double trays. It’s wonderful!
