LOW CARB SAUERKRAUT CHICKEN
Sauerkraut Chicken is one great dish with lots of health advantages not only from sauerkraut. Once tried, you will be making these again and again.
This lovely sauerkraut chicken was invented approximately 15 years ago when we used to have a second home in our car. The story is, that my older daughter Niki, at that time used to do swimming training 2 times a day and was in the water more than on a dry land. The school was 1-hour drive from our house and swimming pool used to be in the middle of the way. So I drove her every morning before the school for a training, then in the car on the way to school she had breakfast. And in the afternoon again back to the pool with lunch in the car on the way from school.
This dish is very easy to make. My daughter loved it. And as it is filled with lots of protein as well, that was a big advantage. Since then, this is one of the most popular food. Not only by older daughter but now also by our younger daughter and the whole family.
Sauerkraut is a fermented cabbage. It is one of the great addition for all of us. Filled with an unbelievable amount of calcium and magnesium, containing also live lactobacil and is very rich in enzymes. The fiber and supply of probiotics improve digestion and promote the growth of healthy bowel flora, protecting against many diseases of the digestive tract.

- 0,5 kg ( 18 oz) of Chicken
- 1 kg ( 35 oz) Sauerkraut
- 5 Tbsp Greek yogurt
- 1 Onion
- 1 Tbsp Coconut oil
- Heat the pan and add coconut oil
- Once the coconut oil is heated, add onion cut into a small pieces
- Cook onion until golden brown, add chicken pieces and cook it for circa 10 minutes.
- Once the chicken is little bit cooked, add the sauerkraut and simmer for approximately 20-25 minutes
- When you see that sauerkraut is already cooked and soft, switch of the heat and add 5 Tablespoons of yogurt.
- Mix well and serve
