This recipe came from precisely what the title says. I had no idea what to prepare for dinner, so I opened the fridge. 

Chicken breasts were ready to be used, and I found buffalo mozzarella and frozen spinach in the freezer. 

That was all I had, and I came up with a rolled chicken idea in a minute. 

Following the same steps, you can alternate with frozen veggies, shredded cheese, cream cheese, fresh leaves, or yogurt with broccoli or cauliflower rice. Once you open your fridge, you will have so many ideas. Trust me.

How To Make Stuffed Chicken?

Let’s dive deep into this easy-to-make recipe with full instructions. I have also made a video with steps to make this dish for those who prefer more visual guidance.

  • Sharp knife: You’ll use this to carefully slice open the chicken breasts and create a pocket for stuffing.
  • Meat hammer or pounder: Helps to flatten the chicken breasts evenly for easier rolling and cooking.
  • Casserole: A baking dish for cooking the stuffed chicken breasts in the oven, keeping them moist and flavorful.
  • Aluminum foil: Covers the casserole dish during baking to keep the chicken juicy.

STEP-BY-STEP INSTRUCTIONS FOR CHEESY SPINACH STUFFED CHICKEN BREASTS RECIPE

First Step: Prepare Ingredients

Gather all the ingredients for the recipe, including boneless chicken breasts, frozen spinach, mozzarella cheese, and any additional seasonings or spices you may want to add for flavor. 

Ensure the chopped spinach is thawed and drained and the mozzarella cheese is sliced or shredded and ready to use.

At the same time, preheat oven to 200 degrees Celsius or 400 degrees Fahrenheit.

Second Step: Cut Chicken Breasts in Half into Butterfly

Take each chicken breast and carefully slice it in half horizontally, creating a butterfly shape. Use a sharp knife for a great cut. This technique involves making a horizontal cut along the side of the chicken breast but not cutting all the way through. 

Once you open the chicken breast like a book, use a meat hammer or a rolling pin to gently pound it to an even thickness. This step helps tenderize the meat and ensures even cooking.

Third Step: Stuff and Roll

Lay the butterflied chicken breasts flat on a clean work surface. Stuff each chicken breast with a layer of thawed spinach, followed by mozzarella cheese slices or shredded cheese. 

Carefully roll up each chicken breast from the spinach and cheese filling end. Be generous with the spinach cheese filling, but make sure it does not overflow.

  • Spinach – If you use frozen spinach, thaw the spinach and drain any excess water before using it as a filling. I have used frozen spinach for this recipe, but you can also use fresh baby spinach leaves. 
  • Seasoning – Before filling, you can season the chicken breasts with salt, pepper, and other desired spices. 
  • Toothpicks -Secure the rolled chicken breasts with toothpicks or kitchen twine, if needed, to ensure the filling stays intact while baking.
  • Cheese – While mozzarella cheese works well in this recipe, swap it with parmesan cheese, cheddar, feta cheese, goat cheese, shredded mozzarella or cheese mixture. 
  • Herbs and spices – Add herbs like basil, oregano, paprika or parsley for extra flavors. 
  • Cooking time – Cooking times may vary depending on the thickness of the chicken breasts.
