I once made this recipe for a quick lunch, and it turned into a little adventure in the kitchen. I piled the saucy chicken into the lettuce leaves, but one wrap slipped out of my hand and landed on the counter, messy, but still delicious. After laughing at myself, I scooped it up, fixed another wrap, and decided that even the “oops” moments can make cooking more fun.

STEP-BY-STEP INSTRUCTIONS TO CREATE ASIAN CHICKEN LETTUCE WRAPS

First Step: Get the Lettuce Ready

Wash the large lettuce leaves under cold water, then dry them thoroughly with paper towels so they stay crisp. Lay the leaves flat on a plate, ready to hold the filling. Chop the celery into small pieces and set aside for topping.

Second Step: Mix the Buffalo Chicken

Sprinkle the celery pieces over each wrap for a crisp bite. Drizzle with either ranch or blue cheese dressing to balance the heat. Fold the lettuce gently around the filling and serve right away while fresh.

Zuzana’s Take and Tips:

The lettuce is the one part of this recipe that requires attention before anything else gets assembled. The first time I made these, I rushed the drying step and went straight to filling, and the wraps started slipping apart the moment the saucy chicken went in. A full dry with paper towels, then laying the leaves flat for a minute, gives you a wrap that holds together from the first fold to the last bite. For another way to use buffalo chicken that is just as fast to put together, my buffalo chicken dip is worth trying next.

  • Butter in the buffalo sauce is optional but it rounds out the sharp edge of the sauce and helps it cling to the chicken rather than pool at the bottom of the wrap.
  • Blue cheese dressing handles the heat better than ranch does, adding sharpness that pushes the flavor forward rather than just cooling it down.
  • Butter lettuce folds cleanly and holds its shape best. Romaine is sturdier but less flexible, and iceberg tears too easily once you start folding.
  • The filling works cold straight from the fridge the next day. The sauce thickens slightly overnight which actually makes it easier to keep inside the wrap.
