Fathead Dough Recipe
Making my fathead dough for the first time years ago changed my whole cooking process. I have never looked back or tried to find other alternatives for making keto pizza crust.
Fathead dough is the best-ever keto dough in the whole universe. And that is not only for making a perfect crispy from the outside and soft from the inside low carb pizza.
It is so unique that I have even dedicated the whole post to making fathead dough itself to use for various recipes.

After I have found my way of preparing this fathead dough to be every single time perfect, I have gone into exploring it for you. Made Sesame Crackers, Asparagus Quiche, Fiber Tortillas, Everything Bagel Crackers, Italian Breadsticks, Rainbow Pizza, and much more.
There are still so many recipes I have in my head I would love to make for you. Just wishing for more time.

And if you follow my steps in making it, you will never be disappointed.
Fathead is a documentary film that addresses another documentary, Supersize Me, where a person has eaten McDonald’s food only for the whole 30 days. It also addresses the Lipid Hypothesis.
The movie was published in 2004, and since then, not only has the film became very famous, but also the term.
Fathead name is used mainly in Keto and Low Carb lifestyle, where the dough (most famous Pizza) is replaced with Mozzarella cheese, cream cheese, almond flour, and eggs.
Different varieties are now found, where coconut flour is added, or baking powder, baking soda, oat fiber, etc. You can make almost anything from Fathead dough. Made right, it acts as a regular dough we have been used to in our previous lives, with better healthier advantages.
Fathead Dough without Cream Cheese
After baking several varieties of dishes using Fathead dough and experimenting with the best and easiest steps and ingredients, I have decided to stay with my version of Fathead dough I now use everywhere.
No Cream Cheese Dough
I have skipped cream cheese on several occasions and realized it does not makes a big difference having it there or not. All of my fathead dough recipes are made without cream cheese. I decided to skip it altogether.
Cooking method for fathead dough
The cooking method I have decided to go with is not a microwave. I could have never achieved the consistent result using a microwave.
Not that I dislike Microwave. We have it at home but use it seldom. But if the recipe calls for a microwave, I try it and make it there.
The best way to make anything Fathead where mozzarella cheese melting is involved would be in a pot. Any pot or a pan which you heat above the stove. You can control it perfectly, and it works every time for me.
Follow my steps, and you will always have the perfectly pliable fathead dough you need.
What type of Mozzarella to use for making Keto Fathead Pizza?
Some people use pre-shredded mozzarella, which works every time, but this is a big NO NO:
Did you ever read the labels of any shredded cheeses? They all contain some type of starch. But no wonder, otherwise all of the cheese will stick together.
I know it from my own experience. Once I shred the cheese, it is perfect, but only for a few minutes. Can you imagine how much starch is needed, so it stays the way it is for weeks in the supermarkets?
NEVER EVER buy pre-shredded cheese.
And since it does involve starch, the process is also easy. Because once you have even a tiny bit of flour or starch, the dough combines perfectly.
I always buy bulks and shred them all at home whenever I need them. And I always read labels. Please read labels all the time.
Keto Bacon Fathead Pizza Dough Recipe

Fathead Pizza Crust
- Mozzarella
- Almond Meal
- Egg
- Garlic Powder
Toppings
- Tomato Paste
- Bacon
- Tomatoes
- Mozzarella
- Olives

STEP-BY-STEP INSTRUCTIONS FOR MAKING BACON FATHEAD PIZZA
How to make Fathead Dough
First Step: Melt Mozzarella
While heating the pot, add the shredded mozzarella. Make sure the pot is heated on medium heat, so you do not end up with mozzarella sticking to the base or burning completely.
Look at the video, where I show the texture. On medium heat, let the mozzarella melt fully into a slimy like texture. Do not worry if you get extra liquid from it. Once an almond meal is in, it gets incorporated.
Second step: Add Almond Meal
Once the mozzarella is melted, add the almond meal and mix it all. I have in this step also added the garlic powder and a bit of salt needed for this recipe.
Keep the heat on while mixing it and slowly incorporating all of the almond meal in. Heating helps mozzarella to melt if still needed, and the incorporation of both of the ingredients is much easier.
Keep mixing using your spatula until you get one evenly looking dough. Once you are happy with the dough ( you can recheck the video to see how exactly the dough should look), switch off the heat.
Third Step: Add an Egg
Switch the heat off. Once adding the egg, you must ensure the egg do not cook before being mixed into the dough. And the only way to prevent this is by switching off the heat entirely.
Once you add an egg, keep incorporating them into the dough until you get an evenly and perfectly looking mixture.
Fourth Step: Mix and Knead
This step involves lots of hand kneading and mixing. The more you mix, the better the consistency you get. A little patience is involved here, but the result is worth it.
When you get the perfect consistency of your Fathead dough, you can use it for whatever you wish to as if you would use any other regular flour dough. As this recipe calls for pizza, we will make a Keto Pizza out of this.
Steps to make Bacon Keto Fathead Pizza:
Types of baking sheets:
Once the dough is ready, either use a baking sheet with parchment paper on or a pizza stone. I have used Emile Henry Pizza Stone. The pizza does not stick to the base at all. I do not have to use parchment paper, but I always slightly oil the base.
Sixth Step: Spread the dough and bake
Heat up the oven to 200 Celsius or 390 Fahrenheit.
Once the base of your sheet is oiled or covered with parchment paper, place the fathead dough on.
Using a spatula, spread the dough evenly in a round shape, exactly how Pizza is supposed to look.
We like a Thin Crust pizza; therefore, I make the Fathead Pizza crust always pretty thin.
Once the pizza is spread to your liking, take a fork and make small holes throughout the whole pizza dough. This will help pizza dough to bake evenly all over. Have a look at the video if you need more visual instructions.
Place the Fathead Pizza crust into the oven for 10 minutes.
Once baked, take out of the oven and get ready to use all of the toppings.

Seventh Step: Add Tomato Base
Once the Fathead pizza crust is baked, take it out of the oven and spread your sauce. I have chosen a tomato paste, but you can add whatever you like. Some people just add a bit of olive oil and garlic, and some do not add anything. It depends on your taste buds. My daughter, as an example, prefers just a plain crust without the tomato base.
You can also use Marinara Sauce as a base instead of a tomato paste.
Eight Step: Add ingredients
In this step, it is up to you what ingredients you add in. I have chosen our favorite. Bacon is a must, cheese as well. Additionally, I added tomatoes and olives to give it different colors. You can also add dried tomatoes for extra Italian flavor. And, of course, cover it with more bacon and cheese. I do not add salt since bacon, cheese, and olives are pretty salty.
Ninth Step: Bake again
Once all is spread and prepared, place it back into the oven for approximately 8 – 10 minutes. The baking process this time involves only warming the ingredients and melting the cheese. Watch for the cheese to melt slightly and once you see the perfect consistency you like, take it out of the oven.
Tips and Tricks:
- Extra fluffy – add a bit more baking powder
- Extra chewy – add a quarter teaspoon of Xanthan gum
- Allergic to almonds – try coconut flour instead, but half the amount for the best texture

How do you store Keto Bacon Fathead Pizza Dough Recipe?
Once the pizza is baked, and some parts are eaten, you can place the rest into the fridge for up to a few days. Later on, when you are ready to serve it again, just put it into the preheated oven for a few minutes to refresh and make the pizza perfectly hot.
I would not suggest using a microwave because the whole Pizza and the ingredients will get harder and stiff.
Can you freeze Keto Bacon Fathead Pizza Dough Recipe?
You can, but the best is to freeze just the base. I usually bake the base without anything, and once it is cooled, I cut it into the shapes I need for freezing. I always make sure to place parchment paper in between each piece. Otherwise, the dough will get frozen together. The pizza is pretty thin, and once you want to take it out of the freezer, it will be challenging to separate the pieces. The Parchment paper, in this case, helps big time.
Afterward, all you have to do is, let it unfreeze and place it into the preheated oven with your chosen ingredients.

Keto Bacon Fathead Pizza Dough Recipe
Equipment
Ingredients
Fathead Pizza Crust
- 2 Cups Shredded Mozzarella
- 1 Cup Almond Meal
- 1 Egg
- 1/2 Tablespoon Garlic Powder
Toppings
- 3 teaspoons Tomato Paste
- 1/2 Cup Bacon
- 1/3 Cup Sliced Tomatoes
- 1 Cup Shredded Mozzarella
- 1/4 Cup Olives
Instructions
Fathead Dough:
- Place a pot on the stove and switch on the medium heat
- Once the pot is heated, add shredded mozzarella and let it melt completely using spatula to mix from time to time
- When mozzarella has melted fully (check video), add almond meal and garlic powder and knead with spatula until both gets properly incorporated
- After you are satisfied with the dough, switch the heat off completely and add egg.
- Knead the egg into the dough to incorporate it fully with spatula
Pizza Crust:
- Heat up the oven to 200 Celsius or 390 Fahrenheit
- Either use the baking pan with Parchment paper or Pizza Stone Plate with a bit of oil.
- Using your spatula spread the dough throughout the whole surface in either round or rectangular shape. Make sure the thickness of the crust is even
- Using fork, make tiny holes all over the Fathead crust for the dough to bake evenly (check video)
- Place it into the oven for 10 minutes
Toppings:
- Once the Fathead Crust has been baked spread it first with tomato paste
- Add bacon, tomatoes, olives and shredded cheese
- Place it back into the oven for another 10 minutes
