BAKED LOW CARB ZUCCHINI
As we all know, zucchinis are one of the staples in the low carb lifestyle and they are used very often.
We always try and come up with recipes, which will be loved by our family, especially kids. With us, my daughter does not really like zucchini if they are added to a dish. The only way she has been eating them was dried like those Zucchini Chips Dehydrated.
But with this recipe, we have stepped again into a second level.
She eats the whole plate, which actually surprised me on one side and made me a bit sad because After I tried one, I was really looking forward to eating them on my own.
The most important is, we have another winner and I guess I would have to make them again and again.
As most of the recipes inventions, this came as a coincidence as well. I was making lovely Meat Balls ( recipe will come hopefully soon) and as I still had some crumbs left, I opened the fridge and looked at what else can I used it for.
And as Zucchinis are almost always in the house, I took one and tried it. And wohoo, it really is delish.
I make low carb bread crumbs from this Low Carb Yogurt Buns recipe. Every time I bake it, I slice a few buns and let it dry naturally. Then I grain them in the Magic Bullet and store them in a Mason Jar container, in the fridge for later.
Actually, you can use any type of vegetables you desire.

- 1 Whole Zucchini
- 1 Egg
- Breadcrumbs from 1 Bun
- Preheat the oven to 190C (374F)
- Wash and cut zucchini into 1 cm thick slices
- in a bowl mix 1 egg
- Fill another bowl with breadcrumbs made previously. I make breadcrumbs from this recipe, where I just slice few buns, let them dry and grain them in a Magic Bullet
- Each zucchini soak into the egg mixture and then cover with breadcrumbs
- You can add additional salt or pepper if desired
- Place it on a baking sheet and bake for circa 20 minutes.
