Who does not love blueberry recipes? I make blueberry desserts all the time. Fresh or frozen berries, dried, regular, wild, all.
I often use frozen blueberries because I always have wild blueberries in, which give you a much deeper color than any other blueberries.
And baking cakes with blueberries is not only extra nutritious but beautiful in color.
One great example is the wild blueberry cheesecake everyone wants to make, and you should also make it.
The idea of making a blueberry cake using farmers’ cheese came during our unwilling 2-month stay at home, where we only had groceries delivered once a week and had to live with what we had.
As delivery got messed up, I ended up with a fridge full of yogurt, which I used for our no-bake ripple chocolate cheesecake and quite a bit of farmer’s cheese.
Having too much of a farmer’s cheese in the refrigerator and my family refusing to have it daily, I had to do something.
And would you believe it?
Half of it was gone as soon as I baked this super quick and easy and yummy cake. It is the best cake I’ve ever baked.
This is the way to feed your family.
Farmers Cheese
Farmers cheese, curd cheese, topfen in German, or tvaroh in Slovak, has been one of the major ingredients for baking and cooking since I was a child. Moving to Austria and having at least 10 different varieties of farmers cheese in every single shop, did not make me reduce, but increase on baking with this wonderful Low Carb ingredient.
It always has its special place in our pantry – well refrigerator.
Just add a bit of sweetener to a bowl of farmers cheese or some berries and you have a great keto breakfast whipped up in seconds.
I sometimes make my homemade farmers cheese, which is unbelievably tasty once fresh, but when I bake in bigger quantities, I just buy.
It is as popular here in Central Europe, as is cream cheese in the US.
We normally make cheesecakes with farmers cheese instead of cream cheese.

STEP-BY-STEP INSTRUCTIONS TO MAKE BLUEBERRY BUNDT CAKE RECIPE
First Step: Prepare Ingredients
To make the cake, prepare all ingredients together. You can make farmers’ cheese and yogurt at home, and sweetener can be ground into powder form using a coffee grinder.
At the same time heat oven to 150 degrees Celsius or 300 degrees Fahrenheit.
Second Step: Egg Whites
In your kitchen machine, mix egg whites until fluffy and stiff.
Once mixed, place it on the side for later use.
Third Step: Egg Yolks & Sugar
If you have two bowls for your kitchen machine, swap the bowl and add egg yolks with sugar sweetener for mixing.
Keep mixing until you get a fluffy light yellow consistency.
Fourth Step: Farmers Cheese
Once you thoroughly mix the egg yolks, add additional ingredients.
I have also added four tablespoons of yogurt to soften the farmer’s cheese. As you can see, I have used the farmer’s cheese which is completely crumbly and dry.
Switch on the kitchen machine and keep mixing until all the farmer’s cheese is fully incorporated.
As you see in the video, I have also added a pinkish powder which is not required. It is my homemade dehydrated yogurt, together with wild blueberries, which I believed would color the cake, but this did not happen, and I have not seen any changes in adding it or not adding this ingredient.
Fifth Step: Egg Whites and Berries
Once you incorporate the farmer’s cheese into the mixture, take your bowl with egg whites and slowly fold all of the egg whites in. It is best to fold them manually to make the cake slightly fluffy.
After adding egg whites and mixing, fold in the blueberries dried, fresh or frozen. It is also optional, but blueberries add a fruity touch.
Sixth Step: Baking Form & Bake
Once you have mixed all, take your silicone form and pour the cake batter into it.
Bake the cake in the oven for 60 minutes or until a toothpick inserted into the cake comes out clean.
Once you take the cake from the oven, invert the cake onto the wire rack and allow the cake to cool.
Tips And Tricks To Make This Cake:
Cover – I suggest covering the cake pan for the last 15 minutes of baking with aluminum foil to prevent the whole cake from burning on the top and not being fully baked in the middle.
Cake Form – I have used silicone baking form for this cake, just because that is what we love, and that is what I use most of the time.
Blueberry Pound Cake – If you have a simple pound cake form or a bread loaf form, you can certainly use those as well.
Yogurt – adding yogurt depends on how dry your farmer’s cheese is. If it is not very dry, you can skip yogurt entirely.

What Bundt Pan Can I Use for Keto Cakes?
I have used silicone form for this cake, just because that is what we love and what I use most of the time.
But if you have a simple pound cake baking form or just a bread loaf form, you can use those as well.
The most important is to use silicone if possible.
I have had many bad experiences with baking keto desserts in different forms, and they got either fully stuck, burnt or had extreme difficulty taking the keto cakes out.
With silicone forms, especially in our lifestyle baking, everything goes smoothly, and you can remove the cake intact every single time.
Can I Use Cream Cheese or Sour Cream Instead?
You can certainly use different types of cheese for this batter, but it will not be as dense looking in a good way and crumbly as it looks in the images.
If you want to use cream cheese or sour cream for this recipe, skip the yogurt altogether, as the consistency is much more liquid. For extra cake texture, you can cream the butter and sugar sweetener and fold in the whipped eggs later.
Can I Use Fresh Blueberries or Frozen Blueberries?
You can use any blueberries you have on hand. Apart from fresh or frozen blueberries, you can even alternate with different berries, such as cranberries, raspberries or chopped strawberries.
Can I Make Lemon Blueberry Bundt Cake With Glaze Out of This Recipe?
As lemon and blueberries go together, it is a great idea to transform this recipe into a lemon bundt cake.
You have a few alternatives to enhance this cake with extra lemon flavor.
Add a bit of fresh lemon juice into the batter, top with lemon glaze or curd, and sprinkle a bit of lemon zest on top of the cake.
Whether you choose one or all, those ideas will make you the perfect lemon blueberry cake you have tried.
How Can I Store Homemade Cake?
You can store the cake in the refrigerator for 4 to 5 days. If longer, I suggest freezing it in an airtight container.
Can I Freeze Fresh Blueberry Bundt Cake?
You can undoubtedly freeze this beauty. Cut the cakes into separate pieces and freeze them as a single serving. You can store it in an airtight container or cover it with aluminum foil and place it directly into the freezer. Once you would like to consume the cake, take it out of the freezer the night before and let it thaw naturally.
