Best Gluten Free Recipes

I know we all crave real bread from time to time. The bread we have been used to eating before our transformation to low carb lifestyle. And it is pretty normal.

I stop sometimes just by walking around the bakery. That smell of fresh-baked bread gets me every time. But this lasts for about a second until I realize what it contains and why my family and I have changed.

The benefits of the ways we eat are different, and I would never go back to ordinary eating habits. And therefore, I always make sure we have a replacement for healthy alternatives in our house.

So far, I have made a perfect farmer’s bread unrecognizable from a regular loaf. Developed various snacks just in case we need to nib on something crunchy and special. I also have already made an extensive collection of pastas to choose from.

Fathead Dough Garlic Breadsticks Olive Garden Style

Most of all, I have fallen in love with fathead dough, which I use in today’s recipe. It is so versatile you can make almost anything you can imagine. After lots of trial and error, I have developed my variation, which we all love and use with all my fathead recipes, especially as a gluten-free pizza crust.

Those soft and fluffy garlicky keto cheese sticks are so simple and extremely fluffy, almost like a real thing. Soft breadsticks on the inside with a crispy crunch from the outside.

Gluten-Free Flour Blend

As you might have realized, my blog is all about reducing carbohydrates, staying with a low-carb lifestyle and making sure all recipes are gluten-free.

This gives me the advantage to introduce you to a various gluten free flour blends that are not only gluten free, but also with carbs in mind. I use different flour replacements, xanthan gum, psyllium husk and more, which you can read more about in the article.

Even though I have made simple three ingredients, only egg-free breadsticks already, I have never tried to make a fathead dough with coconut flour.

Reason? Still trying to figure it out. I hardly use coconut flour. My guess is that because, at the beginning of our journey, I made a few recipes with coconut flour, which could have been better. That made me stop using coconut flour almost entirely.

When I started experimenting with fathead dough, I used only almond flour.

But you can check the differences of almond flour vs. coconut flour.

And then magic happened. I was lucky enough to see that my dear friend Maya from Wholesomeyum has published her first book. And I tell you. It is filled with so many fabulous recipes that I will spend the next few months making quite a few of them. 

Like right now. Not tomorrow.

What struck me there were her lovely-looking Italian bread sticks made with fathead dough, including coconut flour. So here I went and said:” One more trial and then decide.”

How to Make Gluten-Free Breadsticks?

I have made some alterations to the recipe, mainly in the process of making this recipe and the sequence of it. Otherwise, everything else, including all ingredients, stays the same.

STEP-BY-STEP INSTRUCTIONS ON MAKING THE BEST KETO ITALIAN BREADSTICKS

Keto Italian breadsticks recipe made with fathead dough and a mixture of herbs are a simple, easy, cheesy and fluffy replacement for your snack. Gluten-free and grain-free garlic bread sticks served with your favorite dips or just simply along with soup or as an appetizer with a meal. A perfect addition to your meal preps.

First Step: Prepare All Ingredients

Prepare all of the ingredients needed for making the best homemade gluten-free breadsticks. I always like to segregate all into small glass jars, but you can combine dry ingredients and wet ingredients into two separate glass containers.

Second Step: Mozzarella

Shred the mozzarella and place it into the nonstick pot. Heat it, and while mixing it slowly with a spatula, ensure all mozzarella is fully melted.

Be sure to use the prepackaged mozzarella cheese in this recipe. Fresh mozzarella contains too much water, and your breadsticks won’t turn out as they should.

Third Step: Cream Cheese and Butter

Once your mozzarella is soft, add butter and cream cheese and combine while still hot.

In this step, I switch off the heater and mix it thoroughly until I am satisfied with the dough.

If you still feel the mozzarella needs to be fully melted or combined, switch the heat to a low temperature and keep mixing.

Fourth Step: Other Ingredients

Switch off the heat and slowly, one by one, add all of the other ingredients. Mix best with a plastic spatula, combining all ingredients into a soft gluten-free dough.

Fifth Step: Eggs

At this stage, add all of the eggs. You can mix them into fluffiness beforehand using a stand mixer if you wish, but this is also not necessary. I added them straight into the dough and kept mixing until all came together.

It might take a few minutes, but being patient is worth it. The better your fathead dough is mixed, the easier it will be for you to roll the long breadsticks.

Sixth Step: Shape and Form

Once all is combined, separate the fathead dough into eight pieces. Take each part and, with your hand, roll it into tiny buns. In this step, you can still work each of the buns into a smoother consistency for you to be able to roll the breadsticks easier. Once done, let the dough sit at room temperature for 15-30 minutes. You can chill the dough in the fridge for this time if it is too difficult to work with.

In the meantime, heat the oven to 218 Celsius or 350 Fahrenheit and prepare your baking sheet covered with parchment paper or a silicone sheet.

Roll each bun into a log and place it onto a prepared baking sheet.

Seventh Step: Season

When you split all the fathead dough into 8 logs, season it with extra Italian herbs and coarse salt. In addition, you can brush with melted butter for an extra touch. 

Bake the breadsticks for approximately 15 minutes or till golden brown and enjoy.

TIPS AND TRICKS TO MAKE GLUTEN FREE BREAD RECIPE

  • Seasonings – pick your favorite, and add freshly chopped herbs, dried tomatoes, nutritional yeast or seeds. 
  • Yeast – if you wish, you can add instant yeast or active dry yeast. 
  • Butter – can be replaced with extra virgin olive oil.

FREQUENTLY ASKED QUESTIONS AND ANSWERS

What Do I Serve Keto Breadsticks With?

  • Use your favorite dip as an appetizer
  • Add them as a side dish with your salad
  • Use them together with one of the soup recipes

  • Enjoy them for breakfast spread with butter

Can I Replace Coconut Four in Fathead Dough?

Yes, you can. The best replacement here will be almond flour, but you must ensure you add much more. Coconut flour is very absorbent and dry; therefore, you need very little of it.

On the other hand, if you use almond flour or ground almonds, you must add much more. It is not a 1:1 substitution. Generally, a great place to start is using 4x as much almond flour as coconut flour.

Can I Make the Fathead Dough and Freeze It Until Use?

I recommend baking it and then freezing rather than freezing the uncooked fathead dough.

Any dough involving cheese or cream cheese changes the consistency, and you might have difficulty shaping it once it is unfrozen.

It is much more convenient for you later as all you have to do is heat it and enjoy it.

Do Leftovers Breadsticks Need to Be Refrigerated?

Yes, they are heavy in dairy, so store them in an airtight container in the fridge.

Do These Freeze Well?

They do if you store them fully covered. Once you remove them from the freezer, let them soften and reheat in the oven for crispiness. If you warm them in the microwave, they will become very soft.

  1. I just made these yesterday despite not having a non-stick pot and they are a big hit! You would not know they were not real bread. Having leftovers with chicken piccata tonight. Thanks for all of your great recipes! I went out and bought a non-stick pot today.

      Thanks a lot for checking that out. This recipe is not mine and I have taken the nutrition Facts directly. But now after a bit of research and my own calculation, it really depends on what type of Coconut Flour you use. Some of them are pretty high in Carbs for some reason. I have checked the one I use (100g-22 Carbs) and with the entire calculation in My fitness Pal that comes to a total of 4 grams of Carbs per stick with 3g of Dietary Fiber. Thanks for your comment and I am going to change that.
