Today’s easy low carb almond bread recipe is not for a whole family. It is a relatively smaller loaf, but enough to get you eight beautiful thick slices.
Nutritions are so great that one would not believe you can achieve this with just a few ingredients.
One thick slice of bread comes to only 1 gram of carbs, 121 calories, and 5 grams of protein. Pretty low in carbs I would say.
Make Your Almond Flour To Make Bread
Another excellent tip for baking with almond flour, as seen in my recipe, is to use regular almonds. Almonds are among the best nuts for flour because of their natural flavor, which does not overpower the taste.
And you do not even need to buy almond flour to make keto almond flour bread, which is usually much more expensive than if you would have made your own.
I have used almond meal in this recipe, which I made by just grounding almonds with the skin. If I do not care about the white look, I always love to use nuts with skin like almond meal because of the additional fiber it gives you. You can check the difference between almond flour and almond meal to know what is best to use.
If you do have time, to make the best flour, use activated almonds. And if you want to make four white-looking cakes, get the skinless pieces.
By grinding your nuts in a magic bullet, blender, or kitchen machine, you have flour ready quickly, much cheaper than store-bought.
Quick Bread Recipe With Almond Flour
Using few ingredients and less than an hour of your time gets you this fabulous blanched almond flour sandwich bread. To make this bread, you only need a smaller loaf pan, in my case, 20×11 centimeters or 8×4 inches. Using a silicon form ensures that your loaf comes out clean every time, which might happen in baking wheat bread, but not by using almonds.
And using just a bit of baking powder makes this quick almond flour bread rise even without needing yeast.
Simple Bread With Almond Flour

STEP-BY-STEP INSTRUCTIONS TO MAKE ALMOND FLOUR BREAD RECIPE
First Step: Prepare all ingredients
Prepare all of your ingredients. Eggs and cream cheese are best at room temperature. Sweetener is optional.
At the same time, heat your oven to 170 degrees Celsius or 340 degrees Fahrenheit.
Second Step: Whisk eggs
Mix whole eggs with a pinch of salt in a kitchen machine until foamy. This helps to get that perfect fluffy almond flour bread once baked.
Third Step: Mix dry and wet ingredients
While your eggs are whisking, mix together the almond flour with all the dry ingredients in a bowl.
At the same time, mix cream cheese with oil and water in another bowl.
Fourth Step: Prepare bread dough
Once your eggs are whisked with fluffy consistency, reduce the speed of your machine by half.
Start adding the dry mixture spoon by spoon, which the dough is mixing. Add about half to 3/4 of the bowl.
Next, add your wet mixture step by step to properly combine the dough.
Finish up with the rest of the dry mixture.
Fifth Step: Bake
Using a spatula, scrape all the dough from the container, give it the final mix, and pour it into the baking loaf. I prefer using silicone baking sheets because they never stick to the surface, which happens mostly when using almond flour in baking.
Make sure the dough is spread evenly in a pan.
Bake for 30 minutes in a preheated oven or until the bread is golden brown.
TIPS AND TRICKS FOR HOMEMADE BREAD:
- Sweetener – is optional in this recipe. The amount stated gives you just a slight flavor, but still great for savory sandwiches. If you prefer to try this recipe on the sweet side, add a bit more.
- Cream cheese – can be replaced with sour cream or yogurt.
- Baking powder – you can also use baking soda instead.
- Protein – gives this recipe a nice texture, and I would not skip it.
- Silicone baking forms – I prefer using silicone baking sheets because they never stick to the surface, which happens mostly when using almond flour in baking compared to regular or wheat flour.
- Bigger loaf – you can double the recipe exactly as it states; the baking time should be extended to about 10 to 15 minutes longer.

Substitute for Almond Meal
For this recipe, you can substitute an almond meal with almond flour or make your own blanched almond flour by grinding fresh activated almonds or nuts.
Coconut flour is the only exception I would not use in substituting almond flour as it is very dry, and you only need about 1/4 amount compared to a regular almond meal.

I do not own a bread maker and have not tried using it. I doubt almond flour bread made in a machine will work.
How Do I Store Paleo and Gluten Free Bread?
Paleo or gluten-free almond flour bread recipes last much less than traditional bread because they need preservatives and stabilizers in processed bread.
You can store this bread in an airtight container in the fridge for 2 to 3 days or freeze for up to 3 months.
Same as all of my bread recipes, you can freeze this loaf. I prefer to portion it before freezing, making it much easier later.
Whenever needed, take required pieces out of the freezer the night before and let them thaw naturally.
