Fathead Dough, AKA Pizza Dough
With fathead dough being the most popular dough in our family, I have already made several recipes.
As a start was our super easy bacon fathead pizza dough recipe, which led me last summer to our asparagus quiche and beautiful rainbow pizza made with different colors of tomatoes, followed by Italian breadsticks and, finally, our best-ever crunchies of all sesame crackers.
As so many of you have asked for something without eggs, I have experimented with eggless fathead dough that is unbelievably pliable to fit all our needs. It is probably even better to work with one, including eggs.
Easy Cheesy Breadsticks
Even though I had already made our Italian breadsticks, they were a mixture of far more ingredients, including coconut flour and eggs.
I wanted to experience once more with way fewer ingredients for the best-ever fathead dough, and it worked. Our new recipe requires only three ingredients.
Additionally, I have added butter with turmeric powder to spread on top of the breadsticks instead of eggs and, of course, sesame seeds, which gives that additional taste we all love.
What Is the Fathead Dough Made Of?
For those new to the fathead dough, the name Fathead came from the documentary film Supersize Me.
Fathead dough has been around for years and is the most famous replacement for dough in keto and low-carb lifestyles.
The base ingredient of this homemade dough is mozzarella cheese, which is either melted on the stove or in a microwave. Into it, you add one of the keto flour, mostly almond flour or coconut flour.
Eggs or their substitutes, together with the spices, are added, and all of this is kneaded into a beautifully soft dough, which you can use for almost anything you can imagine, but mainly for homemade pizza crust recipes.
What Can I Substitute for Eggs on the Keto Diet?
There are various ways you can substitute eggs in cooking and baking.
I am adding nine substitutes you can look at if you have an egg allergy or do not want to use them as often as required.
9 Egg Substitutes in the Kitchen:
The measurements below equal a portion of 1 medium egg.
- Chia Seeds – ground one tablespoon + three tablespoons water, mix and let it soak.
- Baking Soda and Vinegar – 1 teaspoon of soda and one tablespoon of vinegar
- Greek Yogurt – ¼ cup
- Carbonated water – ¼ cup
- Flax Seeds – ground 1 tablespoon + 3 tablespoons water – whisk
- Nut Butter – 3 tablespoons
- Avocado – half of the mashed avocado
- Peanut Butter – 3 tablespoons
- Agar – 1 tablespoon + 1 tablespoon water
- Baking Powder – 2 teaspoons baking powder with two tablespoons water
Making Breadsticks Egg Free
To my surprise, there was no need for a replacement for eggs. I just skipped it and added butter on top instead of egg whites. That was it.
How To Make Homemade Cheesy Breadsticks

- Medium size Non–Stick Pot
- Baking tray
- Parchment paper or Silicone Baking Sheet
- Pizza Cutter

STEP-BY-STEP INSTRUCTIONS FOR THE BEST CHEESY BREADSTICKS RECIPE
First Step: Prepare Ingredients
Prepare all ingredients for easy assembly. Mozzarella is best bought as a whole block and shredded before using it. This way, you will avoid additional starches in the pre-shredded store-bought packages.
Almond can be ground at home using either Magic Bullet, a stand mixer, Nutri Bullet or a simple coffee grinder. If you care about having your breadsticks light in color, pick almonds without skin.
At the same time heat up oven to 200 degrees Celsius or 400 Degrees Fahrenheit.
Second Step: Mozzarella
Prepare your mozzarella block and shred the cheese into smaller pieces.
Do not buy pre-shredded mozzarella, as it contains the starch to separate the shreds. The best way is to do it fresh with a mozzarella block.
Place the shredded mozzarella into a nonstick pot and heat up while mixing slowly.
Make sure you melt the mozzarella entirely.
Third Step: Almond Flour
Once your mozzarella is melted, slowly add almond flour or ground almonds.
Using your spatula, integrate almonds fully into the mozzarella until the dough is soft and without any visible lumps of almond flour.
Fourth Step: Baking Powder
Having your stove switched off, add baking powder, and using your spatula, mix that again into the fathead dough.
Fifth Step: Melt and Mix
Keep mixing the dough until you end up with a beautifully soft and silky fathead dough to work with.
Sixth Step: Kneading
Time to make the dough.
Transfer the dough onto a silicone sheet and, with your hands, knead the dough for a few minutes until you get a beautiful smooth consistency. Press the dough and knead for a few minutes until you feel the texture is soft and ready for rolling.
This might take 5 to 10 minutes, but it is worth it.
If you plan to make a smaller batch, you can take half of dough out and store it in the fridge or freezer. It is a great way to have ready homemade pizza dough ahead of time when needed.
Seventh Step: Rolling
Once your dough is smooth and ready, you can roll the dough evenly into a rectangular shape, which will go onto the baking tray.
As you see in the pictures, I have folded the corners again and tried to roll the dough in to make everything perfect.
For the beautiful look, it helps if you turn the dough upside down before baking it.
Eight Step: Brush up
Once you spread the dough on a silicone sheet or a piece of parchment paper, brush the dough with melted butter mixed with turmeric powder. This will give your breadsticks beautiful color and shine.
Ninth Step: Cut and Sprinkle
Cut the dough along the narrow side into long stripes using a pizza cutter and sprinkle with sesame seeds.
Place it into the oven and bake the breadsticks for 7 to 9 minutes or until golden brown.

TIPS AND TRICKS TO MAKE CHEESY BREADSTICKS
- Melting – after so many trials of making fathead dough for various recipes, I have discovered the best way to soften the Fathead dough is on a stove directly and not microwave. Using the microwave is not only my least preferred option but has always made it challenging to get the best dough. It did work on some occasions, but on some not. With the stove instructions, I always get the perfect dough for whatever I need.
- Seasoning – add parmesan cheese, garlic powder, fresh basil or herbs of your choice. You can also top it up with pizza sauce before baking.
- Perfect shine – eggs are one of the options for breadsticks or any crackers made with fathead dough. I have decided to mix butter with turmeric powder to give those yummy breadsticks the same look and feel. And it is now much more preferred by my husband as the egg spread was.
- Pizza Crust – you can use this recipe for a basic pizza cheese bread. Shape onto the pizza stone or pizza pan, add more shredded cheese on top of the pizza and cut onto rectangle shapes after baking.
- The dough is tough to the touch – if you experience that your fathead dough is already challenging to spread and roll, heat it again, and it becomes much softer. Knead it a bit again, and you can continue with the steps.

Place them into the sealed container, which should last a few days in the refrigerator.
Can I Freeze Cheesy Breadsticks?
You can undoubtedly freeze leftover breadsticks without any issues.
Cover cheesy breadstick with parchment paper and place them into the freezer container.
To unfreeze, take a batch of breadsticks from the freezer the night before and let them thaw naturally.
If you find them too soft, place them in the oven for a few minutes to get the crispiness back.
