Caprese Chicken with Tomatoes and Mozzarella
This recipe idea came in when I finished making our favorite rainbow keto pizza recipe with beautiful colorful tomatoes, which I managed to purchase in our vegetable market.
I suddenly realized there were still so many tomatoes left that I had to create something unique. And since tomatoes go together with the summer season and lots of dishes with tomatoes come from Italy, I have decided to make an Italian dish with a bit of Caprese flair.
Cast Iron or Skillet Italian Chicken
As for some following me, you might have realized I have started using cast iron more often.
I purchased my first one only a few months ago after seeing and hearing so much about it. And I have to say, do not regret a second of it. I now use it as much as possible and suggest it to all my friends.
The food tastes much different than if you use a regular pan. And I love the simplicity of it, where you can start on the stove and finish your dish in the oven without having to move your dish into an oven-safe pan.
If you do not have a skillet, you can also use a standard baking sheet or bake this chicken in a baking dish. For example, please look at our stuffed Caprese chicken Hasselback for inspiration.
What Type of Chicken is best?
For our recipe, boneless skinless chicken breasts are part of the chicken which works the most. But if you have thighs, drumsticks, or any other part, please add those in. You can even cut your raw chicken into pieces. You might have to adjust the baking time slightly depending on the type and thickness of your chicken.
Italian Baked Chicken Recipe
Let us dive into the best Italian oven-baked chicken recipe. No need to marinate or season the chicken beforehand.

- Chicken

STEP-BY-STEP INSTRUCTIONS TO MAKE ITALIAN JUICY CHICKEN BREASTS
First Step: Prepare Ingredients
Prepare all of your ingredients. Wash and dry the chicken breasts. Chop onion and slice all of the tomatoes. Garlic is best sliced into 1/4 of an inch thick sizes.
At the same time, preheat your oven to 200 degrees celsius or 400 degrees Fahrenheit.
Second Step: Heat the Pan
One of the essential steps in using cast iron is heat. Apart from adequately conditioning the skillet with oil, it must be thoroughly heated.
Be careful if you are not used to the skillets because the handles are burning hot once heated.
Once the skillet is hot, add butter and let it melt.
Third Step: Onion
Cut your onion into small squares and add it to the melted butter. Cook it until golden brown and ready.
Have our Bone Broth prepared on the side.
Once you feel your pan needs a bit of liquid, pour bit by bit from the bone broth into the dish.
Fourth Step: Chicken
Pick a similar size chicken breast for them to cook and bake evenly.
Once the onion is browned, place the chicken breast into the skillet and cook chicken for about 7-10 minutes, turning it a few times.
Fifth Step: Spices
Once turned, add your spices and salt and pepper. Do not forget turmeric, which I add to almost every dish.
Turmeric has got great health benefits and can not be forgotten.
Add a bit of bone broth if you feel like the dish needs more liquid.
Sixth Step: Tomatoes
Use colorful cherry tomatoes for the refreshing look of this Caprese chicken breast and spread them around dish.
Cut them into halves for the tomatoes to release their own liquid and flavor once baked.
Seventh Step: Garlic and Mozzarella
Add mini mozzarella and baby garlic and fill it with the remaining broth you have already used.
Eighth Step: Bake
Continue to bake in the preheated oven. Bake the chicken for 20 minutes. You do not need any thermometer to check for the internal temperature because, in 20 minutes, your chicken is fully baked.
Finish it up with fresh basil and serve.
TIPS AND TRICKS TO MAKE THIS RECIPE:
- Seasoning – if you want to elevate the Italian flavors even more, add some Italian dressing, Italian seasoning, and garlic powder and top up with shredded parmesan cheese.
- Crispy – if you want to add more crispiness, broil the chicken for a few minutes.

What To Serve With Italian Boneless Chicken Dish?
This easy baked Italian chicken is great o enjoy on its own. If you want to add some side dishes, I suggest frozen cauliflower rice or salads such as tabbouleh, green goddess salad, or potato mayo salad.
Can I Use Different Cheese?
Try and experiment with your favorite cheese variation. It would not be Caprese anymore, but still a great chicken dish.
I would go next with blue cheese for a change. Or a piece of camembert added to the dish. Yum. Drolling already.
Can I Make Italian Baked Chicken Thighs With This Recipe?
You can use thighs or any other chicken part for our recipe. Let the chicken bake slightly longer because of the bones and thicker chicken pieces.
How To Store Leftover Chicken?
This baked Italian chicken recipe is perfect for meal prep as well.
If half of the dish is left, I usually store it in the fridge with the whole skillet. I then reheat the skillet in the oven and serve it as usual.
Store the chicken in the airtight glass container for 3-4 days if only one piece is left.
Can I Reheat Tomato Mozzarella Baked Chicken?
You certainly can. Place it back into the oven for proper reheat.
You can also cut the chicken breast into smaller pieces and reheat it straight on the pan.
Or use a third option – not my favorite – microwave. Be careful that the chicken does not get really hard after reheating.
This is also an option, but I would not recommend it. Once unfrozen, tomatoes and cheese will get soggy, and the taste will be completely different.
I usually like to freeze just pieces of chicken breast. Those are always taken out and cooked straight.

Turmeric is always in my dishes. Try to add it to everything possible.
This looks like a great recipe. However, unless it is done in an enamel cast iron, I would not recommend it. The acid from the tomatoes will destroy any seasoning built up on a regular cast iron.
