Fathead Dough Keto Recipes

Have I told you already that we are in love with anything fathead?

And in case I have not, yes, we love fathead dough because it is the only dough I know in a keto diet so versatile. You can make almost anything you wish.

Some add cream cheese for extra cheese flavor, and some swap almond flour for coconut flour or a mix. There are so many variations. 

You can see that I have become obsessed with this perfect dough texture and keep adding more and more recipes for you to enjoy.

We have made simple Italian breasticks, egg-free keto breadsticks, bacon fathead pizza, and asparagus keto quiche. Another rainbow summer pizza, pretzels and now comes those perfectly easy sesame keto crackers.

As I am writing this, I have not made anything sweet. Have to change that soon. Watch out.

Have to mention how the fathead name has become so popular in keto friendly lifestyles.

This recipe is super crunchy, easy to make, low carb, gluten-free, grain-free, and almost everything else free. They are better as the usual crackers, made out of fathead dough, and topped with sesame seeds, which makes you love and enjoy any time of the day.

How Many Carbs per Serving Are in Low Carb Keto Crackers?

Because of using only keto-friendly ingredients, the carb content of crackers is the best news. Depending on how big you cut your crackers and how many crackers you will be able to make, carb content can change slightly. As you see in my video, I cut them pretty big and got approximately 50 pieces. Divided this into 8 portions, each of which came to about 6 to 7 crackers.

Having this in mind, a whole portion gets 2 grams of carbs. Considering fiber to calculate net carbs per serving, you get 1 net carb for 6 crackers. How awesome.

How To Make Low Carb Crackers?

As you might have seen in my previous posts, I do not use the microwave for making the fathead dough. I prefer to make it on the stove. That way, I can control the temperature and speed of cheese melting. And the fathead dough comes every single time perfect.

Let us go straight into this easy, great recipe for keto crunchy crackers with our step-by-step guide:

Kitchen gadgets needed:

  • Cooking pot
  • Rolling pin
  • Parchment paper
  • Baking tray
  • Pizza cutter

Ingredients needed:

  • Mozzarella 
  • Almond flour or meal
  • Eggs
  • Garlic powder
  • Sesame seeds

STEP-BY-STEP INSTRUCTIONS TO MAKE KETO CRACKERS WITH SESAME

First Step: Ingredients

Prepare all ingredients for crispy crackers. 

2 ingredients in fathead dough are essential: cheese and flour. Everything else can be altered. I have even made breadsticks not using eggs. 

I use almond flour in most fathead recipes because of its light texture and minimal flavor.

Second Step: Prepare the Fathead dough

Melt the mozzarella cheese in a pot until smooth and fully melted. Check the video for a better understanding.

Third Step: Add Almonds

Add almond meal or flour.

Combine the almond flour with your spatula until the almonds are combined fully and properly into a soft dough. At this time you can add herbs, garlic in our case.

Fourth Step: Add Egg

Once your cracker dough is blended, add an egg and keep incorporating it into the dough. It takes a while to mix it all, but the time is worth it.

Fifth Step: Roll out the dough

Once you have worked the dough, place it onto a piece of parchment paper or a silicone sheet and roll it with your baking roller until completely thin. I like to shape it into one big square, which is much easier to cut into smaller pieces.

Make sure the square is not bigger than your baking sheet. Otherwise, you would have some left-out pieces.

If you can not get the perfect shape, no worry. Just take the piece which is sticking out and roll it into the dough again until thin.

Sixth Step: Brush with Egg

Once you are happy with the square shape, take a small bowl and add 1 egg to it. With your fork, mix it thoroughly, and with a baking brush, brush it all over the entire dough.

Seventh Step: Sprinkle sesame seeds

Now it’s time to sprinkle the sesame seeds. I do not save on those, as we love baked sesame seeds. I try to cover the rolled-out dough fully. It will help if you press the seeds onto the dough, so they do not fall out after baking.

With the egg mixture on top of the dough, most of them are already holding.

Eighth Step: Cut the Fathead dough

Make the shapes and sizes you wish with your pizza or pastry cutter. I love making little diamond shapes, but triangles or squares are also delicate. Here, it depends on your imagination. Just try to cut crackers into even shapes.

Ninth Step: Bake

Move the dough onto a baking sheet and bake in your oven.

Once baked, let the crackers cool completely, and break them into pieces with your hands. They are already pre-cut, so this is not a problem, and they break easily.

Tips and Tricks for Almond Flour Crackers

  • Almond flour – If you grain almonds yourself, I suggest using already peeled almonds. That way, you will get perfectly light dough to work with.
  • Cheese – As you see, I have used hard white cheese, but you can experiment with cheddar cheese or parmesan cheese for that extra sharpness. 
  • Do you want to make everything bagel crackers? Add some garlic powder, onion flakes, hemp hearts, caraway seeds, poppy seeds, sea salt, and sesame seeds.

SUBSTITUTIONS

Can I Use Different Seeds To Make Crackers?

Of course, you can. Add any seeds you like, be it chia, sunflower, poppy, hemp, or anything you love. It will not be any more sesame keto crackers recipes but your own.

You can even sprinkle them with our blend of everything bagel seasoning and make perfect everything bagel crackers.

Can I Substitute Almond Flour for Coconut Flour?

Some people are allergic to tree nuts or almonds; therefore, you can swap it for coconut flour or any seed flour.

Just be careful with the amount. Coconut flour is way drier, and you only need a quarter of it instead of almond flour.

And as a benefit, it is low in carbs, mainly because you add much less.

Can I Swap Cheese for Cheddar?

You can swap mozzarella for cheddar, parmesan, or any other hard cheese without a problem.

What To Serve With Easy Keto Cracker Recipe?

My Fathead Dough Is Too Sticky To Roll. What To Do?

I suggest adding more almond flour. In this case, knead the dough a little longer until it comes together. 

Another suggestion is to use parchment paper on top of the dough to roll it out. In that way, it will not stick. Once rolled, gently peel the top parchment paper.

Can I Make This Gluten Free Cheese Cracker Recipe Using Dehydrator?

I once had this question from one of our readers, which made me think of adding it here, in case you wonder.

You can make crackers in the dehydrator, and I have also made some crackers there. But not those particular ones.

Here I would be cautious about the eggs in the mixture. They would not bake, and your crackers might be soft and mushy. But I have also made a fathead dough without eggs, and I suggest using those recipes.

Can I Make a Low Carb Cracker Using a Microwave?

Not with this recipe, since mozzarella is involved, it will melt mozzarella again, and you will lose shape. If you leave it longer, it will harden fully, and the softness will disappear.

How Do I Make Make Those Crackers Crispy Even More?

Every oven is different, and therefore your crackers might not be crunchy at the end.

But don’t worry, Just put them back in the oven for a bit longer at a lower temperature. This will take the moisture out and make it crispy keto crackers.

Also, your dough might have been rolled thicker, so you would need more time in the oven. Keep watching it, so you do not miss that one second when they become burned. (talking from my own experience)

Although not very healthy, one perfect idea is to deep fry them after cutting them for a few seconds. This will give them complete crispiness if that’s what you aim for.

My Fathead Crackers Have Become Soft.

Are they not crunchy anymore? Not a problem. Just pop them again into the oven for a few minutes. I always do this when I need to remember to store them properly.

How Do You Store Sesame Keto Crackers?

Make sure you store them in an airtight container. Otherwise, they will soften in no time.

If stored properly, they last for a very long time. I had some batches kept even for a month or longer, and they still came out perfectly crispy.

Ingredients

Fathead Dough:

  • 200 grams (2 Cups) Shredded Mozzarella
  • 100 grams (1 Cup) Almond Meal
  • 1 Egg
  • 1/2 Tablespoon (5 grams) Garlic Powder

Toppings

  • 1 egg
  • 1/2 Cup Sesame Seeds

Instructions

  1. Prepare all ingredients for crispy crackers. 
  2. Melt the mozzarella cheese in a pot until fully combined. Check the video for better understanding
  3. Add almond meal or flour. Combine the almond flour with your spatula until the almonds are combined fully and properly into a soft dough. At this time you can add herbs, garlic in our case.
  4. Once your cracker dough is blended, add an egg and keep incorporating it into the dough. It takes a while to mix it all, but the time is worth it. In the meantime heat up the oven on 200C or 390F
  5. Once you have worked the dough, place it onto a piece of parchment paper or a silicone sheet and roll it with your baking roller until completely thin.
  6. Once you are happy with the square shape, take a small bowl and add 1 egg to it. With your fork, mix it thoroughly, and with a baking brush, brush it all over the entire dough.
  7. Now it's time to sprinkle the sesame seeds.
  8. Make the shapes and sizes you wish with your pizza or pastry cutter.
  9. Move the dough onto a baking sheet and bake in your oven for 8-10 minutes.

Notes

  • Almond flour - If you grain almonds yourself, I suggest using already peeled almonds. That way, you will get perfectly light dough to work with.
  • Cheese - As you see, I have used hard white cheese, but you can experiment with cheddar cheese or parmesan cheese for that extra sharpness.

  1. Hi, I am definitely going to try your way of melting the mozzarella cheese on the stove top, til now I’ve always been melting it in the microwave. A couple of questions 1. I noticed you don’t use any cream cheese in your fathead dough. I have t watched that documentary that you mentioned about fathead dough yet but I will perhaps the answer will be in it? Also I hate rolling anything out with a rolling pin it’s never been something that I’ve been able to do. I found an alternate way that your other viewers may find helpful if they are like me. I use silicone rounds and I have a 7” tortilla press and what I do is take a handful of the dough and make a baseball size ball out of it and then I put it inside the tortilla press between the two silicone rounds and then press lightly and it produces a perfectly thin circle of dough every time! Then o just pick it up and place it on my silicone padded tray and I will either cut it like a pizza producing nice triangle shapes or if very creative you can make diamond shapes really any shape of cookie cutter u have u can make the shape and then scoop up the leftover dough and add it into the next ball of dough. I’ve also been able to place my circles of dough on a rectangular pan a d make a large rectangle Pizza by joining the pieces and reshaping slightly with my olive oiled hands. I always find the dough easy to handle with my hands greased with coconut or olive oil. One other comment when I find my dough exceptionally sticky instead of adding more almond flour…I will add a teaspoon up to a full tablespoon of coconut flour working the addition in well before adding more because coconut flour is very thirsty and loves to absorb all the extra moisture that may be making your dough sticky. It usually caused when I use extra large eggs instead of large or we have high humidity in the home can also cause it. But that has been a great solution for me without adding a lot of extra carbs. Hope my suggestions help other readers. The tortilla press really was my saving grace when it came to making this dough super thin…a lot thinner then anyone would be able to roll it out to uniformly….it creates it as thin as u like which means more crackers and less carbs. Win-win in my books!

      First of all thanks a bunch for your lovely comments.
      With Stove Top, I have realized, that my dough will never go wrong. With the microwave, I had so many times, where the dough was just not good enough to roll. Stove choice is always 100% right. And I always roll it with a silicon roller. Otherwise, it sticks. But love your Tortilla Press tip as well. Have to try it.
      You do not really need the cream cheese in there. I have seen some people using it, but have skipped it a few times and realized, it is really not needed. One ingredient less. 🙂
      With regards to your second message about the pop-up, I am sorry to have those issues. I guess the problem for not seeing the x sign was the background color being very similar. I have now changed it and hope it would be more visible. I have in the plan to change the settings completely so it would be much easier to navigate. With regards to mobile use, I have Safari as well and all is resized as per the classifications. Could you maybe email me your screenshot, so I can have a look at it?

      I have already replied to you on Instagram with the Photo. But in general, any type of mozzarella should work with this recipe. I even tried the one soaked in the water and it worked just fine.

      For me, by 30 minutes they got already burned. Sometimes each oven is a bit different so everyone finds their right time. Happy it worked at the end.

  2. In one of your comment responses you mentioned you believe any style of mozzarella would work.. I’m wondering if you or any readers have happened to try using any vegetarian mozzarella? And what the outcome was. I plan to try it this weekend if no one responds telling me it’s a bad idea. I plan to use a “mozzarella” style cheese that’s made with almonds..

    TYIA for any tips/suggestions/etc.

    • I have not heard yet of anyone using vegetarian mozzarella and I have not tried it myself either. Let uss hope someone might chime in to see if it works.
