And just incase I have not, Yes, we do love Fathead dough because it is so extremely versatile, that you can make almost anything you wish.
Fathead Dough
You definitely see with me, if you are following our blog for a bit longer. I have become obsessed with this perfect dough texture and keep adding more and more recipes for you to enjoy. We have already made a simple Egg-Free Keto Breadsticks, Bacon Fathead Pizza, Asparagus Keto Quiche, where the crust is made from Fathead dough, Another Rainbow Summer Pizza, and now comes those perfectly easy Sesame Keto Crackers.
As I am writing this, I have not made anything sweet. Have to change that soon. Watch out.

I can not forget to mention the story of how Fathead name has become so popular.
Thanks to our one and only, super famous Journalist Tom Naughton, who has made a documentary film called Fat Head. I strongly urge you to watch it, if you have not done so as yet. The best film ever, after which you would be convinced everything Fathead is a win-win.

Let us go straight into this perfectly craved easy Sesame Keto Crackers Recipe with our step by step guide:
How To make Sesame Keto Crackers?
As you might have seen in my previous posts, I do not use Microwave for making the Fathead dough. I prefer to make it on the stove. In that way I can control the temperature and speed of melting the cheese. And the Fathead dough comes every single time perfect.
First Step: Prepare the Fathead dough
Melt the mozzarella cheese in a pot until fully combined. Check the video for better understanding.

Second step: Add Almonds
Add either almond meal or flour or just grain your peeled almonds in the grainer. I do prefer to grain it myself.
Keep mixing it together with your spatula, until the almonds are combined fully and properly into a soft dough.

Third Step: Add Egg
Once your dough is combined, add an egg and keep incorporating it into the dough. It takes a while until all combined, but the time is so worth. You will get a perfect Fathead dough, which could be used for anything you wish for.

Fourth Step: Roll the dough
Once the dough is done, place it onto a parchment paper or a silicone sheet and roll it with your baking roller until completely thin. I like to shape it into one big square, which is then much easier to cut into smaller pieces.
Make sure the square is not bigger as your baking sheet, otherwise, you would have some left out pieces.
If you can not get the perfect shape, no worry. Just take the piece, which is sticking out and roll it into the dough again until thin.

Fifth Step: Brush with Egg
Once you are happy with the square shape, take a small bowl and add 1 egg into it. With your fork mix it fully and with a baking brush

Sixth Step: Sprinkle sesame seeds
Now its time to sprinkle the sesame seeds. I do not save on those, as we really love baked sesame seeds. I try to fully cover the rolled-out dough. It will help, if you slightly press the seeds onto the dough, so they do not fall out after baking.
With the egg mixture on top of the dough, most of them are already holding.

Seventh Step: Cut the Fathead dough
With your Pizza or pastry cutter, make shapes and sizes you wish to. I love to make little diamond shapes, but triangles or squares are fine as well. Here, it really depends on your own imaginations.

Eighth Step: Bake
Move the dough onto a baking sheet and bake in your oven.
Once baked and cooled, with your hands, break the dough into pieces. They are already pre-cut, so this is not a problem and they break easily.

BAKERS TIPS for Fathead Crackers
- If you grain almonds yourself, I would suggest
to use alreaddy peeled almonds. In thatway you will getperfectly light dough to work with. - If you do not have a proper roller to cut the dough, I would suggest cutting it before you sprinkle them with sesame seeds.

Can I use different seeds?

Can I substitute Almond Meal?
Some people are allergic to tree nuts or almonds, and therfore coconut flour can be replaced here.
Just be careful with the amount. Coconut flour is way more dry and therefore less than half should be added instead of almond flour.
And as benefit, coconut flour is lower in carbs, especially because you are adding much less of it.

FREQUENTLY ASKED QUESTIONS AND ANSWERS
My Fathead dough is too sticky to roll. What to do?
In this case, I would suggest kneading the dough a little longer util it comes together. Maybe add a bit more almond flour. But just a bit,

Another suggestion is, to use a parchment paper on top of the dough to roll it out. In that way it will not stick. Once rolled, gently peel the top parchemnt paper.
Make sure you are not using wa paper as the dough will stick also while baking.
Can you make a low carb cracker using dehydrator?
I had this question once from one of our reader and that made me think adding it in here, just incase you wonder.
You can make crackers in the dehydrator and I have already made some crackers in there as well. But NOT those particular.
Here I would just be cautious about the eggs in the mixture. They would not really bake and your crackers might be soft and mushy. But I have also made a Fathead dough without eggs, and I would suggest to use those recipes.

Can you make a low carb cracker using a microwave?
Not with this recipe, since mozzarella is involved and it will melt mozzarella again and you will loose the shape. If you leave it longer, it will harden fully and the softness will be gone.
My Crackers are not crispy.
Every oven is different and therefore your crackers might not be crunchy at the end.
But no worry, Just put them back into the oven for a bit longer on a lower temperature. This will take the moist out and make it crispy.

Also, your dough might have been rolled thicker and therefore you would need more time in the oven. Keep watching it so you do not miss that one second when they become burned. (talking from my own experience 🙂
One perfect idea, although not very healthy is to deep fry them after cutting for a few seconds. This will give them full crispiness if
My Fathead Crackers became soft.
Are they not crunchy anymore? Not a problem. Just pop them again into the oven for a few minutes. I do this all the time when I forget to store them properly.
How do you store Sesame Keto Crackers?
Make sure they are stored in the airtight container. Otherwise they will soften in no time.

How long do Keto Crackers last?
If stored properly, they last for a very long time. I had some batches kept even for a month or longer and still came out perfectly crispy.

Sesame Keto Crackers Recipe is super crunchy, easy to make, Low Carb, Gluten-free, Grain-free, and almost everything else free. They are better as the normal crackers, made out of Fathead dough, topped with sesame seeds, which makes you love them any time of the day.
Ingredients
Fathead Dough:
- 200g (2 Cups) Shredded Mozzarella
- 100g (1 Cup) Almond Meal
- 1 Egg
- 1/2 Tbsp (5g) Garlic Powder
Toppings
- 1 egg
- 1/2 Cup Sesame Seeds
Instructions
FATHEAD DOUGH:
- Melt the mozzarella cheese in a pot until fully combined. Check the video for better understanding
- Once melted, add almond meal. Keep mixing it together with your spatula, until the almonds are combined fully and properly into a soft dough.
- Once your dough is combined, add an egg and keep incorporating it into the dough.
- In the meantime heat up the oven on 200C or 390F
CRACKERS:
- Once the dough is done, place it onto a parchment paper or a silicone sheet and roll it with your baking roller until completely thin. I like to shape it into one big square, which is then much easier to cut into smaller pieces. Make sure the square is not bigger as your baking sheet, otherwise, you would have some left out pieces.
- Once you are happy with the square shape, take a small bowl and add 1 egg into it. With your fork mix it fully and with a baking brush, brush it all over the entire dough.
- Now its time to sprinkle the sesame seeds. I do not save on those, as we really love baked sesame seeds. I try to fully cover the rolled-out dough. It will help, if you slightly press the seeds onto the dough, so they do not fall out after baking.
