Keto Biscuits
Our Cheesy Keto Bread Bites came up as an inspiration when I was preparing Keto Biscuits for you.
As I have mentioned in the post, the Keto Biscuits remind me so much of our famous Slovak soft bread called Pagace.
And as we also have Pagaciky, a mini version topped up with shredded cheese, there was nothing more I could think of.
Made them unique to the ordinary keto biscuits you can find.
My biscuits, as well as those bread bites, are filled with a paste of Homemade Scratchings.
Cheesy Keto Bread Bites
Those Cheesy Keto Bread Bites give you a perfect mixture of flavors not only from scratchings but using a combination of almond flour together with coconut flour as well as sour cream with lard.
They are soft, delicious, fluffy, crunchy, and everything you can imagine good bread bites have.
Our extraordinary bread bites are not a replica of Domino’s Parmesan Bites.
They are not even made from Fathead dough, which would be easy.
Those bread bites are extraordinary and different. Different from everything you have been used to till now.
Well, not everything. If you are a Slovak or have ever tried our Pagaciky, you know exactly what I am talking about. Unforgettable taste.
Keto Rolls
The most challenging part was finding an English name to get as close to what I mean.
I was first thinking of Keto Mini Biscuits. I even considered calling them Mini Keto Rolls or Keto Roll Bites. But in the end, I have decided to go with Cheesy Keto Bread Bites.
Because that name describes it all, they are super cheesy, taste like soft bread, and are the size of a bite. And, of course, they are entirely Keto, Low Carb, Gluten-Free, Grain-Free, and perfect for Diabetics.
How many Low Carb Bread Bites can you get from the recipe?
Depending on what size of round cookie cutter you are using will also depend on the number of keto bites you will make from this recipe.
I used the smallest round-shaped Cookie Cutter I had at home, approximately 2 centimeters or ¾ of an Inch in diameter, and managed to make a perfect 60 pieces of those keto bread bites.
How many Keto Bites are in one Portion?
As those keto bites are bite-sized snacks, I have calculated for you the portion to be six cheesy bites.
Even though I feel that six might be a bit more than I would want for a portion, with the nutrition values being so perfect, let us indulge fully once in a while.
One portion, which is six pieces of cheesy keto bites, contains 2 grams of carbohydrates and 1 gram of Fiber, which will calculate into a total of one Net Carb for six pieces.
Awesomeness.
What can you add to Bread Bites?
Even though I believe there is nothing needed in terms of additional ingredients as our scratching paste and cheese give you all of that perfect flavor you need.
There is always space for improvement or additions.
You can transform them into:
- Garlic Bread Bites – add freshly chopped garlic
- Parmesan Bread bites – swap cheese for grated parmesan
- Garlic Parmesan Bites – add fresh garlic and parmesan on top
- Bacon Bites – mix in bits of bacon before baking

STEP BY STEP INSTRUCTIONS FOR MAKING THE BEST KETO BREAD BITES
First Step: Ingredients needed for Keto Bread Bites
Prepare all of the ingredients for making your cheesy keto bread bites.
Pork scratchings could be mixed into a paste using a magic bullet or a coffee grinder.
Regarding shredded cheese, you can use any of your hard cheese.
Please make sure you shred it yourself at home as usually, a store-bought pre-shredded cheese contains additional starches and carbohydrates.
Second Step: Mix Dry Ingredients
In a big mixing bowl, start adding all of the dry ingredients, which are, in our case, baking powder, almond flour as well as coconut flour.
Mix them all together using a whisk.
Third Step: Add in all wet ingredients and mix
Into the mixture, start adding all of the wet ingredients which are sour cream, egg, and melted lard.
Mix it all until you get a dough consistency.
Fourth Step: Refrigerate
It is best to refrigerate the dough before making the low-carb bread bites.
Shape the dough into a loaf and cover with a cling film which is in my opinion the best way to store it in your fridge.
Store it for at least 2 to 3 hours, if not overnight.
Fifth Step: Spread Scratching Paste
As in the following steps, we are already going to be baking low-carb bread bites.
Heat the oven to 180 Celsius or 350 Fahrenheit.
Take out the dough from the fridge and roll it onto parchment paper or a silicone sheet.
As you can see in the video, you can use parchment paper to properly roll the dough into a nice longer sheet.
Spread your scratching paste onto the dough and fold it in half.
Sixth Step: Work out the dough with the paste
Keep folding and rolling the dough until all of the paste has been incorporated into the mixture.
Shape into a rectangular shape approximately half an inch or 1 1/2 cm thick.
Seventh Step: Cut Out Shapes
Using a small round-shaped cookie cutter, start cutting the small bread bites and placing them on the baking sheet covered with parchment paper.
Eighth Step: Egg Wash
Once all of the bites are on the parchment paper, mix your egg yolk, and using a brush, spread the egg yolk on each of the bread bites.
This will help your shredded cheese to hold as well.
Ninth Step: Shredded Cheese and bake
On each low-carb bread, bite, and add a little bit of shredded cheese.
Place into your oven and bake for 10 to 15 minutes until golden brown.

- Cream – You can swap Sour Cream with yogurt, cheese cream, or buttermilk
- Additional Flavors – you can add bacon bits, garlic, or spices of your choice
