Is Pumpkin Keto Friendly?
For some reason, I have always believed that Pumpkin is not part of our Low Carb Lifestyle, not to mention Keto.
Years ago, as I started with our blog and did much more searching and learning about ingredients, I found out pumpkins are a big part of everyone’s life, especially for people who are doing Keto or Low Carb Lifestyle.
I made a few recipes, calculated the carbohydrates, and realized that they are fully Low Carb. And if you do the planning and correct calculations, they can also be a part of the Keto Diet.
Carbs in Pumpkins
Most pumpkins are very similar in the number of carbohydrates, so there is not a big difference in which ones are best and which ones are worst. Of course, the sweeter they are, the more carbohydrates they will contain.
The most important part is the amount of pumpkin you use in a particular recipe. More pumpkins, more carbohydrates will that cake, cookie, or dish have.
Just to compare a few:

- Buttercup – 12g

One of the significant advantages of adding pumpkins to your Low Carb Lifestyle is the amount of Beta Carotene it contains. These great antioxidants give the pumpkins their beautiful orange color and get transformed into Vitamin A once consumed.
Additionally, pumpkins contain a great amount of Fiber, potassium, and vitamin C.
With a minimum amount of carbohydrates and 0 Cholesterol, there is no reason to postpone your decision to make superb recipes out of this beautiful Autumn Vegetable. In some cases perceived as a fruit.

STEP BY STEP INSTRUCTIONS ON HOW TO MAKE KETO PUMPKIN MEATBALLS
First Step: Clean and Cut
For our recipe, you will only need half of the Pumpkin. Wash and clean the inside and cut one
Second Step: Shred the Pumpkin
The other quarter of a Pumpkin needs to be shredded with a Cheese Grater or using your kitchen machine if you wish.
Third Step: Combine and Shape

Fourth Step: Spread and Spray
Once all of your balls are shaped and ready, spread them on a baking dish you have chosen. Using a parchment paper underneath is a big advantage you will realize while washing the dishes. You can skip the parchment paper if you like, but it helps to keep more moisture in as well as the cleaning process afterwards.
Once the Keto Pumpkin Meatballs are spread around the baking dish, add in between the pieces of a Pumpkin squares you have cut before.
Lightly spray the whole tray with Extra virgin Olive Oil.
Fifth Step: Rosemary and Roast
In the end, add a few branches or fresh rosemary on top of the baking tray to add that wonderful aroma which will fill up the whole kitchen once the roasting process starts.

- Heat Up the Oven to 180C or 350F
- Wash and clean the inside of a Pumpkin and cut one quater of a Pumpkin into smaller squares. Place into a bowl and set aside.
- The other quarter of a Pumpkin needs to be shredded with a Cheese Grater or using your kitchen machine if you wish.
- In a big bow combine minced meat with all of the ingredients. Add the Grained Pumpkins into it. With a spatula or using your hands, mix the whole lot properly and using your hands to shape smaller size bowls preferably all the same size.
- Once all of your balls are shaped and ready, spread them on a baking dish you have chosen. Using a parchment paper underneath is a big advantage you will realize while washing the dishes.
- Once the Keto Pumpkin Meatballs are spread around the baking dish, add in between the pieces of a Pumpkin squares you have cut before.
- Lightly spray the whole tray with Extra virgin Olive Oil.
- In the end, add a few branches or fresh rosemary on top of the baking tray.
- Bake for 40 minutes and enjoy.

I usually do a mix of beef and por, but turkey or chicken is gret as well. With sauce, sage butter sauce or cheese sauce would be great option. Although we usually have it with a bit of pesto on top.
