Making Sausage
Making Sausage came to my mind because I wanted to make a Sausage Gravy. But I could not get a proper sausage in the supermarket. So I thought of making my own.
It’s funny what this blogging will take you to. I have never done anything even close to making homemade sausages or kielbasa. And here I was researching and getting ready.
Making your own Sausage
To my surprise, it is much easier than one would have thought so.
I knew I needed some seasoning and, of course, decided to make my own homemade seasoning for sausages.
The next step was to find a natural casing.
This was pretty easy. Went into the first butcher shop and got enough to supply the whole family with a few pennies.

Then came the next challenge, which was the equipment.
As I have never done anything similar, I thought I needed special equipment.
I believed I had it, as my Kitchen machine is equipped with everything a person needs.
I had an extension for making minced meat and all but have realized I do not have the exact extension for filling the sausages. The stuffing horn, as some call it.
Sausage Making
And here comes the tip.
You do not need anything special. I looked around the kitchen and found quite a few little gadgets I could use for filling.
The first idea was a funnel. That was too thin.
Then came an idea to use the long tube from the cookie press set. That was too thick.
In the end, I have decided to use a little metal tube I have for making sweet cream horns. And that worked awesome, as you can see on the video.
But I am not going to bore you anymore with my story. I just wanted to share it all with you to see that if I can make it, anyone can.
Sausage Natural Casing
As already mentioned, in this recipe, I have used a natural sausage casing, which I picked up at the butcher shop for a few pennies.
What is Sausage Casing made of?
Sausage Casing is the skin from animal intestines into which you fill your minced meat together with spices to make a perfect sausage.
The natural casing contains mainly natural collagen, and therefore it is an excellent addition to our lifestyle.
Because all of the natural casings are thoroughly washed, flushed, and scrubbed with salt, they do not contain any outer fat or inner mucosa lining.
Considering that our recipe for homemade sausage is filled with only minced meat and sausage seasoning, I made it on my own in the kitchen. Those sausages are entirely Keto. They do not contain any carbohydrates per link.
When buying a sausage, read the labels carefully, as most store-bought links contain various additives and glucose or any type of sugar.
One link of sausage made with our recipe contains exactly 0 carbohydrates. 0 carbs per sausage.
Net Carb Count? Complete zero.
That is fantastic news as you do not even have to think of carbs using sausages for various recipes.
Using my calculation of 2 pounds of minced meat and four tablespoons of homemade seasoning, I managed to make a beautiful ten medium-sized brats using the natural casing seen in the video.
The amount of protein came to 26 grams per sausage.
Is it difficult to make your own sausages from scratch?
To make your own sausages from scratch is not difficult at all. It might seem complicated, but as I have described, I have made them without any problems. They are super easy to make.
Type of Sausage
You can create so many different sausages using the same method and just changing the type of meat, casing size, and spices.
I have to frankly say that now, as I have realized how easy it is to make homemade sausages, there is no way I am buying them anymore. I know exactly what goes in and make sure they are as fresh as I can make them.

My favorite of all is maybe, to your surprise, the last sausage. Blood sausage or a black pudding is my childhood memory. We even used to get those sausages mixed with rice, which was out of this world. I may be making some keto style with cauliflower rice soon.

STEP BY STEP INSTRUCTIONS FOR MAKING LOW CARB HOMEMADE SAUSAGE
First Step: Prepare all ingredients for sausage making.
If you have already made sausage seasoning beforehand, it is super easy to prepare all other ingredients.
All you need is ground meat of your choice and fresh, natural casing you get from the butcher shop.
Second Step: Wash your casing
Wash your natural casing.
Ensure it is washed and cleaned thoroughly, even though they usually do this before selling it in the butcher.
As you see in the video, I let it run through the inside of the casing with flowing tap water.
Third Step: Season the meat
Using a big mixing bowl, start seasoning the meat.
Place your ground meat into the mixing bowl and add homemade sausage seasoning.
Mix it until all of the spices and herbs are incorporated into the meat.
Fourth Step: Prepare casing for filling the meat.
I believe, by now, you have already picked the funnel you’re going to use for stuffing the sausage. If you have your sausage-making kit, make sure it is all prepared.
Oil your funner or add water for the casing to slide easier on and off.
Take one end of the casing and gently roll all of it onto the funnel.
Using a threat, tie the end of the casing before starting to fill up and make the sausages.

Fifth Step: Fill casing with ground meat
Whatever gadgets you’re using to fill your sausages, start gently filling them.
You can either make small sausages and keep tying them one by one, or you can do one long link, which could be later on twisted and prepared as per your requirements.
Sixth Step: Tie at the end.
Once you’re finished filling the sausage, tie the end with a string.
Seventh Step: Twist
Twisting your sausages into a specific size is optional. You can also keep the whole long sausage depending on what you’re going to use it for.
As you see in the video, I have made some single sausages, where I have twisted the sausage and tied it from each side with a string and then cut with scissors.
I have also made one long sausage to use for later on.
Tips and Tricks:
- Sausage Seasoning – I have used my homemade seasoning mix, but you can use whatever spices preferred
- Sausage Making Kit – if you have one, perfect. If not, you can improvise using a tube either from a funnel, cookie press, or any other tube that will fit.
- Funnel – apply freshwater or oil over the funnel for the casing to slide easier.
- Twisting – you can tie with a string at the twist from each side and cut into small sausages or just leave it twisted if all goes for baking.
- Mexican sausage – use enchilada seasoning instead.
