What kind of Avocado to use for salad?
For salads, the best is if you get lucky and your avocados are perfectly ripe. The smooth and creamy consistency will just add into the salad deliciousness.
If you are like me, whenever I see a nice avocado in the shop, I never buy just one. I normally always take at least 5 pieces, if not more.

The only problem is, that they normally become ripe all at the same time. And then comes suddenly time, when you have in one go more ready to eat avocados as you have been anticipating.
And therefore comes this perfect recipe for our creamy delicious healthy Keto Avocado salad.
In this post I will show you how easy and quick it is to make this gorgeous Keto salad.
How to make Keto Avocado Egg Salad?
You will need:
- Ripe Avocado
- Cooked Eggs
- Greek Yogurt
- Lemon
- Chives
- Extra Virgin Olive Oil
- salt & Pepper

Easy steps on how to prepare Avocado Egg Salad the easy way.
Step one: Avocado
Slice avocado in half and cut it into small square shaped pieces. This will allow you to easier mix the avocados into the spread. Place it into the medium size bowl, where you will be mixing the whole salad afterwards.

Step Two: Add Eggs
For this recipe, I have used pre-boiled eggs, which I have left to cool down. You do not want to add eggs that are still warm, because at the end this salad is suppose to be refreshing and the heat from the eggs might make avocado brown quickly before adding lemon in.
As you see on the image I am using a little gadget I got from my mum. This is suppose to be for cutting cooked potatoes into squares, but since we have long time got rid of potatoes, I still use it, if I need to cut more then one egg. It goes much faster and you can have a bowl small egg squares in seconds.

Step Three: Add Chives
I am so much in love with Chives and when the season comes, I just add them into every dish possible. In y garden they grow rapidly, so that is also another excuse to use them all the time.
Cut Chives into small pieces and add them into the bowl.

Step Four: Add Greek Yogurt
Adding Greek yogurt into this Keto Avocado salad will give more creaminess and replace mayonnaise for some that are use to it. Yogurt is a healthier way to make this salad just perfect.

Step Five: Lemon
Squeeze whole half a lemon into the mixture, especially over the avocados. This will make the avocados keep their beautiful green color and you will have no problem of browning them at all.

Step Six: Add Extra Virgin Olive Oil
Add a generous amount of Extra Virgin Olive Oil of your choice into the bowl. We do not have a particular favorite brand. Every time we travel, there is a must that we bring few bottles of olive oil with us. This way we always try new brands and have enough of oil at home at all times.
My daughter is ready to drink Olive oil on a daily basis and therefore we make sure we have the best ever available at all times.

Step Seven: Mix and taste
Finish it up with a dash of salt and pepper and properly mix the whole salad. Try, if you are needing to add maybe more of lemon, salt or pepper and serve.

Does avocado egg salad turn brown?
Our Keto Avocado Salad does not turn brown at all. The reason and secret ingredient Is Lemon. I always make sure to pour the lemon on the cut avocados as soon as possible to keep the color at its best.
How long does avocado egg salad last?
Since all of the ingredients are really fresh, I would suggest to consume this salad as soon as possible. But if you still want to store it, in an Air tight container, inside he fridge it will be perfect for the next 2-3 days.

Can you freeze avocado egg salad?
I personally would not suggest freezing this salad. This is also the reason, that I have made the recipe with only one avocado, to not have lots of it and being able to consume quick and fast.
The problem with freezing is, that all of the ingredients used in this recipe will make the salad thaw after de-freezing and it would not taste as great as fresh salad does.

Keto Avocado Egg Salad

Ingredients
- 1 Avocado
- 3 Eggs Boiled
- 2Tbs Greek Yogurt
- 1/2 cup Chives
- Juice from half lemon
- EV Olive Oil
- Salt
- Pepper
Instructions
- Slice avocado in half and with knife cut into small squares.
- Add into a medium size bowl
- Cut already pre-boiled eggs into squares and add them in
- Take chives and cut them into small pieces - adding them in as well
- 2 Tablespoons of Greek Yogurt goes in as well
- Squeeze juice from half lemon directly into the bowl. Try to cover avocado mostly to avoid browning
- Sprinkle it with a bit of extra virgin Olive oil
- add salt and pepper as per your liking.
