As our Frozen Treats Section is growing with super easy, yet extra delicious recipes, I could not have missed the one that is close to my heart.
From extra healthy Avocado Popsicles, Mini Popsicles, through Cheesecake Fat Bombs, I always have in our freezer, up to a Homemade Coconut Keto Ice Cream, I have made from a complete scratch, making first Coconut Shreds, followed by Coconut Milk, and then even using fresh coconut shells as Ice Cream Cups.
And after I had finally managed to bring our Ice Cream Cones to perfection, this recipe needed to follow.
Sugar-Free Ice Cream Sandwich
This is the Ice Cream I have been loving since my childhood. A Sugar-Free Ice Cream Sandwich as most of you might call it, has been in ( and it still is) my country one of the most popular Ice Creams as a kid.
We called it a Russian Ice Cream.
As it originally arrived from Russia, as most of everything did at that time, that is the name it got. You can still buy those frozen sandwiches in almost any supermarket under various brands, always called Russian Ice Cream.
What I loved most about it was the not-so-sweet, but extra creamy consistency.
Carbs in Ice Cream Sandwich
After we have moved to our lifestyle, every time I went to the supermarket to look for some Ice Cream, after studying all of the nutrition, the Russian Ice Cream came out as the one with the most fat intake and the least calories.
And that made me decide that it would not be me, not reconstructing this deliciousness into a keto version with the addition of our Ice Cream Cone Wafers.
With 0g of carbohydrates and 12g of Fat, this Keto Ice Cream needs to be on top of the list for recipes to make.
Do you know, there is a National Ice Cream Sandwich day on August the 2nd?
We have to make some kind of celebration for sure.
Best Sweeteners for Ice Cream making
Since we all use various brands and Types of Sweeteners in our Keto Baking, I felt the need to address the best sweetener for making Ice cream, just in case you might not be aware.
My go-to sweetener is for a reason Allulose.
Allulose compared to other sweeteners, will give any of your Sugar-Free Ice Cream that extra creaminess and smoothness we are all trying to achieve.
Using pure Erythritol will always make any of the ice creams a tiny bit gritty and any mixture of sweeteners just does not get you to the level of smoothness as Allulose does.
In case you do not have Allulose on hand and are using Xylitol, that would be my second option.
But there is a solution to everything.
If you do not have allulose or Xylitol, no worry.
A pinch of Xanthan Gum will smooth it up a bit more.
Sugar-Free Ice Cream Cones
As you see in the video, I have used the recipe from our Sugar-Free Ice Cream Cones and transferred it into a wafer, which is actually simpler than one would think.
Make the wafers and instead of rolling them into the cone shape, cut them into squares, which will give you a perfect thin wafer for the bottom and top of our Ice Cream Sandwich.

STEP BY STEP INSTRUCTIONS ON THE BEST SUGAR-FREE ICE CREAM SANDWICH
First Step: Ice Cream Wafers Ingredients
As this recipe includes making your own sugar-free ice cream wafers, I have added the steps of them as well.
Prepare all of the ingredients for ice cream cones to make your wafers.
Whisk all of the ingredients together and as of last add Xanthan Gum.
Xanthan Gum helps to hold the whole mixture compact and holds the wafers together.

Second Step: Prepare Wafers
Using a Pizzelle Maker make wafers one by one as you see in the video.
Immediately when one of the wafers is ready using scissors, cut them into a square shape as they harden and are more difficult to cut later on.
Third Step: Actual Ice Cream Making Ingredients
Prepare all of the ingredients for the actual ice cream sandwich making.
Fourth Step: Heavy Cream & Sweetener
First off, whisk a heavy cream together with sweetener until a stiff peak forms and place it aside.
Fifth Step: Egg Whites
In another bowl, whisk egg whites until fluffy.
Sixth Step: Egg Yolks & Sweetener
Lastly, whisk egg yolks together with sweetener until you get a beautiful light yellow fluffy consistency. Once done, place aside.
Seventh Step: Mix all
Using a big bowl, place heavy cream, egg whites, and egg yolks into it and gently combine them all together.
Eight Step: Assemble & Freeze
Once both, the ice-cream wafers and actual ice cream are prepared you can start the assembly.
Prepare a square baking pan preferably silicone as that is much easier to take out from once frozen.
As a suggestion, you can use a cling film to layer the base for easier removal as well as cleaning.
Place 4 square wafers onto the bottom of the baking pan.
On top of the wafers, gently scoop out the mixture.
Using a spatula make sure the whole mixture is spread evenly and covers all of the wafers.
On top of the mixture place another 4 square wafers and cover with cling film.
The cling film helps to avoid the air getting into the ice and forming frozen particles.
Place into the freezer overnight.
Ninth Step: Cut & Enjoy
Once your sugar-free ice cream sandwiches are fully frozen and you’re ready to serve, take them out of the freezer. Let the Ice Cream Thaw for a while and place it onto a cutting board, and cut it into smaller portions.
It is very easy to cut through and you can decide whether you would like eight bigger pieces or 16 smaller.
If you serve them immediately, bear in mind that this ice cream melts pretty fast.
If you’re not planning to consume all, pack each piece into the cling film and place it into the freezer for later.
Tips and Tricks
Sweeteners – Allulose is the first choice, but Xylitol or adding a pinch of Xanthan gum should solve the need.
Cling film – cling film helps to avoid the air getting into the ice and forming frozen particles
Cutting – do not cut the sandwiches immediately if too hard. Let the Ice Cream Thaw slightly and then cut it.
Fast melting – because of its lightness, those Ice Cream Sandwiches melt pretty fast.
