Whey Protein
Adding Whey Protein into those Low Carb Ice Cream Sugar Cones is for various reasons.
The one and the most important is Protein.
We all need more protein we can consume. And that applies not only to adults.
Especially with knowing, that one cone contains 9g of Protein.
I try my best to get as much natural protein to my daughter as I can. Not always it is possible and because I do not want her to start drinking Protein Shakes, I try and add them into my recipes.
I regularly make Natural Whey Protein Drink for Breakfast. I always have in the freezer our Yogurt Buns and Fiber Bread Rolls.
And as a dessert, I have to mention our favorite Challah Bread or Smores Chaffle. Every time I make one of those, My family is ecstatic.
Crispy Keto Dishes
The second reason, I add Protein into my dishes is the crispiness this wonderful ingredient can achieve.
And as I knew Protein Powder or Egg Whites adds crispiness into our recipes, I have decided to try either one or both. And of course, after few trials have decided to stick with both of them.
In our Keto and Low Carb lifestyle, the type of protein we use is very important. There are brands, where added sugar just increases the carbohydrate content and is not needed for us at all.
And then there are brands, which are not the best, or not natural, which we do not want to use as well.
After experimenting with various brands, I have picked Jay Robbs and use this brand for several years already.
There might be some, probably newer brands I am not aware of, since I am really happy with what I am used to and keep ordering the same in various flavors.
Natural or Vanilla Whey Protein
With regards to our Sugar-Free Ice Cream Cones, I have certainly experimented with various options.
After I guess 7 or 8 trials I have made my decision, but you can pick your favorite.
Vanilla Whey Protein
Using Vanilla Whey Protein in our Keto Cones gave me the best and crunchies texture overall. But. To me, the amount of protein, I wanted to use, those Ice Cream Cones were too sweet to my liking. If I have reduced the amount, the mixture was too liquid to shape.
Natural Whey Protein
In the end, I have decided to use Natural Whey Protein, where I was then being able to add my Sweetener and the amount I wanted for the perfect Ice Cream Cones.
They still got super crispy, it just took them a bit longer time, which is no problem at all.
How to DIY Keto Ice Cream Cones?
Kitchen Gadgets Needed:
Ingredients needed:
- Egg White
- Natural Whey Protein
- Sweetener
- Almond Flour
- Butter
- Heavy Cream
- Xanthan Gum
- Vanilla Extract

STEP BY STEP INSTRUCTIONS FOR CRISPY SUGAR-FREE CONES
First Step: Ingredients
First of all, prepare all of the ingredients for easy preparation.
With regards to Whey Protein, you can either choose unflavored, where you have to add the sugar sweetener and vanilla extract or you can pick Vanilla Whey Protein, where those additional ingredients are included and therefore you can skip sweetener and vanilla.
Second Step: Egg Whites
Using your electric hand blender or mixer, place egg white in and whisk it until fluffy.
Third Step: Sweetener & Heavy Cream
Once your egg whites are whisked, add sugar sweetener if you have not picked Vanilla Whey Protein and heavy cream and whisk it again.
Fourth Step: Rest of the Ingredients
One by one keep adding all of the other ingredients except Xanthan Gum and continue whisking until everything is fully combined.
Fifth Step: Mix – Xanthan – Mix
As of last, Xanthan Gum comes into the mixture. Whisk everything fully.
Do not be surprised as your butter might get a bit slimy which is OK. That holds our cones together once rolled with the cone shaper.
Sixth Step: Spray – Batter – Press
Heat your Pizzelle Maker. Slightly spray with oil and get ready for the Wafer making.
Add 1 tablespoon of batter into the middle of the iron, let it melt for few seconds, and press the pizzelle maker with slight pressure.
Depending on your Wafter or Pizzellel maker, let it cook for approximately one minute.
You can check that your wafer is ready by gently lifting the Pizzelle maker. If the batter does not stick anymore your ice cream cones are ready to be rolled.
Seventh Step: Wrap & Shape
Gently lift the edges of the wafer making sure, nothing is stuck.
Using a wooden cone shaper or made on your own (please read DIY below) Wrap and shape the wafer around the cone shaper and let it cool slightly for about 2 to 3 minutes. You can see the exact steps in the video attached.
Let the wooden cone shaper inside the Wafer until you’re ready to move forward with the next ice cream cone.
Cones need to be left on a kitchen counter for a while to get perfectly crispy. Let them fully crisp until the following day.
Tips and Tricks
Whey Protein – If you decided to use Vanilla Protein, you can skip sweetener as well as Vanilla Extract from the recipe.
No Pizzelle Maker – use the oven at 160C or 325 F for approximately 10-15 minutes
Chocolate Cone – as you see in some pictures, you can make Chocolate Ice Cream Cones as well by adding 1 Tbsp into the batter.

Before I have bought a wooden cone shaper for a few bucks, which I am glad, I did, I have been making my cone shaper for years.
It is so easy to DIY your cone shapers using only one kitchen gadget we all have at home.
Aluminum Foil
Aluminum foil is perfect for so many DIY ideas around the house and one of them is cone shears for Ice Cream cones.
Depending on the size of cones you would like to have, take a substantial amount of aluminum foil and start crisping it together and shaping it into the cone.
Once done, use it as you would any other cone shaper.
Can you make Ice Cream Cones without a Pizzelle Maker?
Not owning a pizzelle maker or a waffle iron is not a problem at all.
- You can use any other round shape wafer maker without deep ridges.
- Crepe-making pan is perfect as well, where you might need the tiny wooden crepe roller to spread the batter.
- The oven heats up at 160C or 325F is the third idea. Shaper wafers on a baking sheet covered with parchment paper and place into the oven for approximately 10-15 minutes. Roll and shape immediately while still hot.
How do you store Keto Waffle Cones?
After weeks of experiments, I have realized, it is best to keep your keto ice cream cones in a basket on the kitchen counter. They fully crisp into perfection the next day and stay like that for weeks.
You can, later on, place them into a zip log bag and store them. Just in case they would be slightly soft, place them into the oven and dry back to crispiness on very low heat.
How long can you store Low Carb Sugar-Free Cones for?
From my own experience, you can keep those Sugar-Free Wafer Cones on a kitchen counter for up to a month.
If stored in a container or a zip log bag, I would check regularly as outside moisture might mold them.

I would make these without the sweetner and use them to make a sandwich or as bread.
Not a bad idea, but I would suggest more Chaffle Recipes for Sandwiches. They are extra tasty and you have much more crunchy batter to bite on
I love this recipe! I was looking for keto pizzelles and every recipe I tried they never really crisped up. Somehow I ended up on your site and since I had Quest vanilla milkshake powder I used that. Wow!! I had to try all iterations – half plain/half Quest powder, fresh egg white, carton egg white you name it. It was the opinion of hub and I that using all vanilla protein powder (Quest has 3g carbs in 28g serving), fresh egg white, cream and butter was the winner. I had probably 2 dozen from the various versions and I think we’ll be having peanut butter sandwiches with them for a while 😀
