Since I am in love with our Sugar-Free Meringue Cookies, which took me a few years to develop, having a go with those super chewy Sugar-Free Marshmallow Recipe was just a question of time. The moment I made Keto Meringue, I knew my next adventure would be Keto Marshmallows.
Because, who loves Meringues, most definitely loves Marshmallows as well. They are pretty similar not only in making but in taste buds as well.
Sugar-Free Marshmallows
I LOVE Marshmallows. I loved them in our previous life and I could not live without them with our Low Carb Lifestyle.
Almost all the kids love them, especially when Grilling time comes. In our family, this is the tip of the evening when we get together and Grill.

For years, I used to buy ready-made Keto marshmallows. Some of them I liked, but some not.
Most of the store-bought Marshmallows are covered with powdered sugar or chocolate and that is what I never liked. Do not let me start on mentioning all of the unnecessary ingredients they mostly contain. But I had no choice.
Sugar-free or Keto Marshmallows are extra easy to make with only a few ingredients needed.
Most of the marshmallows need a type of sugar or sugar sweetener plus Gelatin or Agar – Agar and a bit of water.
Some of the recipes involve adding flavors like mint, apple, lemon or banana.
Vanilla essence is a perfect idea as well and can be added if you wish to.
Instead of water, you can also add some liquid from berries, which will then color your marshmallows if you would like to have them extra colorful.
Keto or Sugar-Free Marshmallows are with almost no calories and completely fat-free.
They are a perfect snack if you have that sweet tooth.
Just be careful to not overeat on them, as they contain almost only sugar sweetener which for some might make tummy problems.
Once you follow our step-by-step instructions on how to make sugar-free marshmallows you will realize how easy, quick,
All you have to do is get your sweetener, a bit of gelatin, a bit of water, and mix it all together until the fluffiness evolves.
Then you just pour it into a square-shaped container or
Once you make your Sugar-Free Marshmallows you would have to let them harden a little bit to be able to roast them.
Once you cut them they are already perfectly shaped but for roasting you would need a few more hours.
You have to let the squares harden a little bit and then place it onto a stick and get ready for your Keto barbecue night.
If you’re planning to roast Sugar-free Marshmallows, I would suggest making them the day before, cut them in the morning into the desired shapes and let them harden on the kitchen counter until the evening when the grilling starts.
To make a Keto Marshmallow Fluff from this recipe is super easy. All you have to do is reduce the number of gelatin sheets to half and follow the same rule and steps as down below in the recipe.
You can then use your fluff for whatever you wish. Fill it up with some keto cookies, add the fluff into cannoli or just eat it as it is.
For this recipe, I have for the first time on my blog used Xylitol as a sweetener.
I normally do not like to use it as it is one of the sweeteners with a few carbohydrates.
But I always have it at home because it is the easiest sugar sweetener found around in any shop.
The second reason is that Xylitol is the one sugar alcohol, which is closest to the actual sugar taste.
And the third reason is that every time I try and develop recipes I use it for the trials because it is the cheapest in the market.
And this was the exact
But for this recipe, you can also use Allulose or liquid Sukrin, which I used for our Sugar-Free Meringue Cookies.
I do not suggest using pure Erythritol, as sugar-free marshmallows are in general pure sugar and erythritol will give you a really strong cold aftertaste.
But if you do not have any other choice and have only Erythritol in the house and want to use it, then I would suggest mixing it a little bit with Stevia which will balance the sweetness.

How To Make Sugar-Free Keto Marshmallows
This is how to make Sugar Free Keto Marshmallows quick and easy
Kitchen Gadgets you might need:
- Kitchen Maschine
- Cooking Pot
- Square Dish
- Cling Film or Plastic Wrap
Ingredients needed:
- Grass-Fed No Sugar Gelatin
- Sugar Sweetener
- Water

STEP BY STEP INSTRUCTIONS FOR SUGAR-FREE MARSHMALLOWS
First Step: Ingredients
First of all, prepare all of your ingredients.
For the sugar sweetener as I have already mentioned, I use Xylitol. The best is a powdered version as this will easily dissolve in the water.
If you do not have a powdered Xylitol, but only a crystallized version all you have to do is grind it inside the coffee grinder or magic bullet.
For the gelatin type, I have used Gelatin sheets as they are the easiest to work with and do not contain any added sugar.
And the third is a bit of water.

Second Step: Gelatin
If you’re using gelatin sheets, place them into the water for a few minutes to soften.
If you use any other gelatin or Agar, please follow the instructions on the package.

Third Step: Melt and cook
In a cooking pot melt sugar together with water and place it onto the stove for boiling. Let it boil for 2-3 minutes and add your gelatin sheets.
Make sure that gelatin is completely dissolved.

Fourth Step: Pour and Mix
Once your liquid is prepared and the gelatin is fully dissolved, pour everything into your kitchen mixer and start mixing.
Do not worry if the liquid is too hot. It will cool down while mixing.
This will take a few minutes at a high speed.
Keep mixing until the liquid triples in the size and the marshmallow fluff forms.

Fifth Step: Whipped Marshmallow Fluff
Here you see the picture of how the marshmallow fluff is supposed to look.
In this step, you have to work really fast as the marshmallow mixture gets thick very easily and quickly.

Sixth Step: Fill, smooth even and store
Have a square container or any container prepared in advance and covered with Cling Foil.
Pour the whole marshmallow fluff into the container and make sure everything is smoothed evenly.
Let it sit on her kitchen counter for approximately eight hours, the best overnight.

Seventh Step: Cut and enjoy
Cut into the desired shape and enjoy it.

Tips and tricks:
Thickens too quick – If your marshmallow fluff gets thick too quickly, no worries. All you have to do is warm it up again or place it into the microwave and back into the kitchen mixer to get the fluff ready once again.
Grilling tip – If you want to use the marshmallows for grilling I would suggest cutting the marshmallows into the desired shape and let them sit on the kitchen counter for a few hours so everything hardens up. In that way, you will get a perfect brown fire effect with still super smooth and soft marshmallow inside.
Reshape – If you come up with shapes you do not like there is no worry as well. All you have to do is place the marshmallows back into the microwave to warm it up and again whip it in your kitchen machine.
Avoid extra hardening – To avoid the marshmallows getting hard after cutting them, you can coat the marshmallows in the extra sugar sweetener.
Coloring – If you would like to have colorful marshmallows all you have to do is replace the water with the liquid you get from one of the berries.

How to store Sugar-Free Marshmallows?
The store sugar-free marshmallow is the best to keep in the fridge as a whole piece covered with cling film. This will prevent the marshmallows from hardening from outside.
Once you’re ready to serve or eat, cut them directly and enjoy.
How long can you keep Keto Marshmallows?
I would suggest keeping the Keto marshmallows only for a few days as they really get hardened very quickly.
It is not that they become bad, but the sugar sweetener hardens so much that you would not be able to enjoy them anymore and therefore the best is to consume them within 1 to 2 days.

Can you dip Marshmallows in the Chocolate?
You can certainly dip your marshmallows in the hot chocolate ganache or sprinkle it with chocolate.
The best is to cut the Sugar-Free Marshmallows into your desired pieces and either let it harden a bit for a few hours or place them into the freezer so they’re hard before dipping.

WoooHoooo!!!! I tried FOUR different recipes with ALL different sugar alternatives. They all failed to deliver. (yes I followed all the directions meticulously!) I ordered xylitol as a last resort (instead of constantly having to buy VERY PETITE bags of sugar free marshmallows off Amazon) I googled a marshmallow recipe and yours came up. I had to make some conversions but I am so excited!!!!! At first I was worried about how little the recipe seemed to make. And then I read that solution tripled in size. As soon as the fluff started to form I knew it was a WINNER!!! :) For those in the US, I used 1 packet of gelatin with 1/4 cup of COLD water, mixed it up and let it bloom. I also added a little vanilla. (I love vanilla!!!) But THANK YOU THANK YOU THANK YOU! This recipe is a winner!!!!

Dear Veronika,
I would not suggest pure Erythritol as it will give you a really strong aftertaste as Marshmallows are almost all sugar only. If Xylitol is making problems, try Allulose instead.
