Making Keto Bread Crumbs, which are needed for our recipe, has never been easier.
I have made them the exact way ordinary Bread Crumbs are made.
From dry, older bread slices, which can still be lightly baked to make them crunchier and Panko style.
I have a big Mason Jar or two filled with Keto Breadcrumbs all the time stored in the fridge.
And I always say, do not ever throw old keto bread. It can always be reused.
Keto Bread Recipes for making Breadcrumbs
It does not matter what type of keto bread you make. Once you realize it is not as fresh as you would like, slice it into thin loaves, place them into the oven to dry, and grind in a Magic Bullet, blender, or a Food Processor.
My favorite Keto Bread recipes to make breadcrumbs from are our Farmers Bread, Fiber Bread Rolls, or Low Carb Buns.
But I have already used our Keto Croutons as well, which saved me some time as they were already super crispy, fried, and flavored. Just blend them in the food processor, and you are good to go.
Baked Zucchini
Our Baked Zucchini recipe has been a big winner in the family.
For my kids, who are not really in love with zucchinis, I try to come up with recipes where zucchinis are involved, and they will enjoy it.
I already had a winner with our zucchini chips and added them into our mini burgers.
But with this recipe, we have stepped into a second level.
They ate the whole plate, which surprised me on one side and made me sad because I was looking forward to eating them on my own after I tried one.
Baked zucchini in the oven has been a great addition to our meal planning ideas.
Incase you want to try something easier Air Fryer zucchini and squash is a great alternative.

Baked Low Carb Zucchinis are perfect for taking for a BBQ party as well. You can prepare them in advance and add them onto a BBQ grill or serve it already made, cold as an appetizer. Perfect idea as well.

I have used one whole zucchini for this recipe and have split it into two portions.
This comes to about 20 zucchini slices.
For a portion, which is 10 oven-baked zucchini slices with breadcrumbs, you get only 3 grams of total carbohydrates.
Adding 2 grams of Fiber, our net carbs come to a beautiful 1g, which is almost unbelievable.
Twenty minutes in the oven will get you a perfect panko style crispy, low-carb zucchini slices using our breaded recipe.

Using a homemade yogurt or a mixture of your favorite dressing would be as tasteful as making a proper keto dips or sauce to go with those zucchini slices.

STEP BY STEP INSTRUCTIONS FOR MAKING A HEALTHY ZUCCHINI BAKE RECIPE
First Step: Prepare Ingredients for Breaded Zucchini Slices
Prepare all of the ingredients for baked zucchinis.
At the same time, heat your oven to 190 Celsius or 375 Fahrenheits.
Clean and slice your zucchini into approximately one-centimeter thick slices.
If you do not have breadcrumbs, simply slice your keto bread, bake it in the oven to dry, and let it run in your food processor.
Second Step: Whisk eggs and fill bowls.
Prepare three bowls. Into one, place an egg and whisk with a fork.
Into the second bowl place your breadcrumbs and into the third sliced zucchinis.
Third Step: Soak Zucchini in egg
First, soak your zucchini slices in the egg mixture. Turn them a few times, making sure each zucchini slice is coated with eggs.
Fourth Step: Coat with breadcrumbs
Using a fork, move the egg-coated slices into the breadcrumbs mixture.
Coat the breadcrumbs thoroughly onto each of the slices.
Fifth Step: Place on a baking tray and bake
One by one, place each of the coated zucchini slices onto the baking tray covered with either a parchment paper or a silicone baking sheet.
Bake for approximately 20 minutes or until golden brown.

- Zucchini shapes – try slicing them into fries looking stripes and follow the same instruction
- Alternatives to zucchini – you can use almost any low-carb vegetables available. Be it mushrooms, bell peppers, cucumbers, celery, eggplants, rutabaga, turnip, radish, kohlrabi, or even pickles.
- Extra spicy – sprinkle a bit of peri peri sauce over the top.

They are best to take out the night before and let thaw overnight.
