For this cookie recipe, I am using a silicone mold made of food-grade silicone, a flexible and non-stick material that makes it easy to release the formed cookie shapes. Silicone baking forms are my favorite, especially when baking low-carb recipes.
I have a few cookie cutters and shapers from my kitchen gadgets and tools, but I specifically used this one because I made soft cheesecake-like cookies. For some reason, I have never been able to keep the shape if I baked them in a metal form.

- Silicone Teddy Bear Mold
- Tablespoons
- Piping Bag
Ingredients Needed:
- Eggs – the ingredient that combines everything together.
- Sweetener – choose your favorite low-carb sweetener to add the right sweetness.
- Oil – adds moisture to the cookies and helps create a tender texture.
- Hot Water – helps to dissolve and combine the ingredients, ensuring a smooth and consistent cookie mixture.
- Almond Flour – this low-carb almond flour ingredient is what gives structure to the cookies without the extra carbs.
- Ground Almonds – provide additional texture and flavor to the cookies.
- Baking Powder – helps the cookies rise and become light and fluffy.
- Farmers Cheese – adds moisture to the cookies and contributes to a tender crumb.
- Cocoa – gives a rich chocolate flavor to the cookies. It also adds a deep color, making the cookies visually appealing.

STEP-BY-STEP INSTRUCTIONS TO MAKE BAKED TEDDY BEAR COOKIES
First Step: Prepare Ingredients
First, preheat your oven to 350°F (180 °C).
Prepare all of the ingredients together to have everything ready to assemble before starting.
Make sure all your ingredients are at room temperature.
Second Step: Whip Eggs and Cheese
Start by mixing the ingredients. First, add eggs into the mixing bowl and whisk until fluffy.
Add the farmer’s cheese and mix until the consistency gets smooth and thicker.
Third Step: Add Dry Ingredients And Mix
Add all the dry ingredients, including 3-4 tablespoons of hot water and a little oil.
Let all mix in the mixing bowl until you get a smooth consistency. Make sure to combine everything by scraping the sides of the mixing bowl.
Fourth Step: Shape Bear Hands And Feet
In a small glass container or bowl with cocoa powder, scoop a little of your cookie dough into the cocoa and mix until it looks like melted chocolate.
Get your piping bag ready, transfer the cocoa mixture, and create a little tip.
Start shaping the teddy bear’s mini ball hands and feet with chocolate in the cookie shaper. It should look like chocolate candy hands and feet.
If your cookie mold includes the bear’s nose, you can also put chocolates there. Mine doesn’t have a nose shape.
Fifth Step: Attach Body and Bake
Add the cookie mixture and fill the mold using a spatula to shape their bodies and bear faces. Make sure there is no space so you get a perfect bear shape. To flatten them, gently hit the mold against the kitchen counter few times.
Place your silicone molds on a prepared baking sheet with parchment paper.
Bake the cookies by popping your teddy bear friends into the oven for 25 minutes and wait until they turn into golden bears.
After baking, place on a cooling rack and let the cookies cool completely.
