Shortbread cookies are traditional buttery Scottish biscuits that beautifully crumble after a bite. Made with a mixture of sugar, butter, and flour, they usually do not contain any gluten-binding agent.
Because they were pretty expensive around the 12th to 16th century, they were made only for special occasions such as Christmas or weddings.
The name shortbread came from the shortbread texture, where short means crumbly, crispy texture rather than soft and stretchy.

The collection of various flours we can use in keto baking is bigger than anyone would have thought of. But there is always one favorite keto flour for all.
For me, it is low carb almond flour.
Cooking with almond flour is the winner in our house. Most of my recipes are made with almond flour. I sometimes combine it with coconut flour, but only on rare occasions.

Different variations on shortbread cookies
Those sugar-free almond flour shortbread cookies are so versatile you can bake them every time, a bit different.
Add a few ingredients into the dough for other ideas:
- Dip them in a melted chocolate
- Add chocolate chips in
- Add dry cranberries
- Top us with colorful sprinkles
- Sprinkle shredded coconut or toasted nuts on top
- Sprinkle them with chopped nuts
- Make them as thumbprint cookies and fill them with our strawberry jam or lemon curd recipe.
- Add vanilla extract and almond extract for extra flavor
- For lemon shortbread cookies, add a pinch of lemon zest in
- Add ginger spices for a Christmas cookie flavor
- Sprinkle them with cinnamon for snickerdoodles
- Poppy seeds are the ones I have tried, and they were fabulous

How do you make almond flour shortbread cookies?
The easiest recipe of all. Combine, mix, shape and bake. That is all you need. In about 20 minutes, you can have your cookies on the table from start to finish.
Our recipe is also perfect as your tart base or a pie crust. Just make sure you bake them for about 15 – 20 minutes. And make tiny holes with your fork throughout.

Ingredients you will need to make low-carb cookies
STEP-BY-STEP INSTRUCTIONS FOR THE EASY KETO SHORTBREAD COOKIES
First step: Prepare the ingredients
Prepare all of the ingredients into smaller bowls to ease your mixing. Take one big mixing bowl, preferably a glass one, where you will combine them all.

Second step: Whisk egg
In a glass bowl, add an egg, and with your whisk, mix it into a smooth consistency.

Third step: Add coconut oil and mix
Once the egg is mixed, add coconut oil and mix it in thoroughly.
You can also use butter in this step instead of coconut oil if you wish.

Fourth step: Add all dry ingredients and mix
Time for all of the dry ingredients.
First, add a sugar substitute and make sure it is thoroughly mixed into the egg–oil mixture.
Subsequently, one by one, continue adding almond flour and soda, mixing it fully in between. Make sure all are thoroughly mixed into a thicker dough.

Fifth step: Chopped almonds
Once that is done, you can follow by adding chopped almonds.
Use the almonds without skin, as that will change the color of your keto cookies. I like to chop slivered almonds into small sizes, which is needed in the recipe.
Using a silicone spatula, gently incorporate those into the dough. Make sure it is spread evenly.

Sixth step: Scoop, roll, press
Time for rolling.
Using a cookie scoop, start making cookies.
Scoop from the dough and roll in your hand into a bowl. Place the cookies on a cookie sheet with parchment paper. Press on each bowl to make the cookie-size bites.
Those keto shortbread cookies do not increase in size in the oven, so make sure you shape them precisely to your liking.
The thinner they are, the crunchier they will become.
If this is a bit time-consuming for you, you can also use a method where you will roll the whole dough into a loaf. Place it in the refrigerator for half-hour and slice with your knife. Using a cookie cutter is another option to form cookies.

Seventh step: Bake and enjoy
Once you are happy with the shapes, place those sugar-free shortbread cookies into the oven and bake.
Once they are baked, let the cookies cool fully. They need to harden during the cooling process. Once warm, they are very soft, and your cookies might break.

- Blanched almond flour – I like to use blanched flour or grind almonds without skin for this recipe. The reason is primarily visual. Skinless almonds will give you that beautiful light, color of shortbread cookies.
- Extra buttery keto shortbread cookies – You can add butter to flour instead of coconut oil if you wish.
- Baking time – depends on the size and thickness of your cookies.
- Extra crispy – For extra crispiness, try to press them pretty thin. If you like bigger and thicker keto cookies, adjust the baking time.
- Easy shaping – Form the dough into logs. Freeze or chill for half-hour and cut into slices.
- Cool down – Let your shortbread cookies to cool fully. They are very soft to the touch once taken out of the oven. They need to cool down to harden. Otherwise, your shortbread cookies may break apart.

What to serve with keto shortbread cookies?
Our shortbread cookies are great as a snack or breakfast with your warm beverage. But you can serve them with cold brew coffee or infused tea for that extra special summer morning snack.

I would not suggest replacing coconut flour for almond flour in our recipe. It acts entirely differently in baking than almond flour does. Coconut flour is also very dense and will make your cookies very dry.
Can I substitute coconut oil with butter for shortbread cookies?
You can add butter into the flour instead of oil, which I also suggest if you prefer butter a bit more. The consistency stays almost the same as if you use coconut oil instead of butter.
Can I skip an egg in the keto shortbread cookie recipe?
You could skip the egg, but the cookies will be crumbly and harder to shape. But on the other side, the keto cookies will be much more crispy. So yes, and it is your choice.
How do you store keto shortbread?
You can simply place them into a bowl on the counter for a long time. They do not need to be stored in the refrigerator or an airtight container. I have made these cookies several times, and they always last more as expected.

How long do keto almond cookies last?
As with most shortbread cookies, those last for approximately 1-2 weeks. My recipe is made for a small batch because we still prefer fresh ones. You can double the recipe and store the rest of the dough in the freezer for later use.
How to freeze low carb cookies?
I would not suggest freezing whole shortbread cookies, as they get pretty soft once unfrozen. But if you have stored them in the freezer, simply placing them into the oven for approximately 5 minutes should retain the crunchiness again.
If you want to freeze, I suggest freezing already pre-made dough. That could be stored without a problem, and you can bake cookies whenever you are in a hurry.
