We have them in our kitchen in various ways and shapes. And I guess there is nothing left that we do not have.

The sweetness of a Shortbread Cookies
Any shortbread Cookies, whether they are Keto or not, do not have that extra sweetness in them. They are normally semi-sweet and that is how our cookies are as well.
We love them this way, all of the shortbread cookies are this way.
But if you for some reason want to add a bit more sweetness, do it without any hesitation. Nothing will happen to the structure of the dough.

How to make Almond Flour Keto Shortbread Cookies?

STEP BY STEP INSTRUCTIONS ON THE BEST KETO ALMOND SHORTBREAD COOKIES
First Step: Prepare the Ingredients
Prepare all of the ingredients into smaller bowls to ease your mixing. Take one big mixing bowl, preferably glass one, where you will combine them all.

Second Step: Whisk Egg
Into a glass bowl add an egg and with your whisk, mix it fully into a smooth consistency.

Third Step: Add coconut oil and mix
Once the egg is mixed, add coconut oil and mix it in fully.
You can also use butter in this step instead of Coconut Oil if you wish.

Fourth Step: Add all dry ingredients and mix
Time for all of the dry ingredients.
First, add a sugar substitute and make sure it is fully mixed into the egg – oil mixture.
Subsequently, one by one, continue adding almond flour and soda, mixing it fully in between. Make sure all are fully mixed into a thicker dough.

Fifth Step: Chopped Almonds
Once that is done, you can follow with adding chopped almonds.
Use the almonds without skin as that will change the color of your Keto Cookies. I like to cut slivered almonds as they give me the real small size which is so needed in the recipe.
Using a silicone spatula, gently incorporate those into the dough. Make sure it is spread evenly.

Sixth Step: Scoop, Roll, Press
Time for rolling.
Using a measurement scoop or a cookie scoop, which will give you the same size for every cookie, start making cookies.
Scoop it from the dough, roll in your hand into a bowl and place on a baking sheet with parchment paper. There press on each bowl to make the cookie size bites.
Those Keto Shortbread Cookies do nor raise in its size in the oven, so make sure you shape them exactly to your liking.
Thinner they are, crunchier they will become.
If this is a bit time consuming for you, you can also use a method, where you will roll the whole dough into a loaf, place it in the refrigerator for half-hour and cut with your knife.

Seventh Step: Bake and enjoy
Once you are happy with the shapes, place those Sugar-Free Shortbread Cookies into the oven and bake.
Once they are baked, let them cool fully. Once warm, they are very soft and need to harden during the cooling process.

Tips for Keto Shortbread Cookies:
- Use Blanched Almond Flour – I like to use blanched flour or just grind almonds without skin for this recipe. The reason is mostly visual. Skinless almonds will give you that beautiful light color of your keto Cookies.
- You can use Butter instead of Coconut Oil if you wish with the same results
- Check for the baking time – depending on the size and thickness.
- I normally make smaller size cookies as that is what we like. Also, I try to press them pretty thin for extra crispiness. If you do like bigger and thicker keto Cookies, you might need to adjust the baking time to a bit longer.
- You can form the dough into logs – freeze or chill for half-hour and cut into slices if you like
- Let the cookies cool fully. They are very soft to the touch once taken out of the oven. They need to really cool down to harden.

FREQUENTLY ASKED QUESTIONS AND ANSWERS
You can and that is what I also suggest if you do prefer butter a bit more. The consistency stays almost the same.
You could, but the cookies will be more crumbly and harder to shape. But on the other side, the Keto Cookies will be much more crispy. So yes and your choice.
You can simply place them into a bowl on the counter for a long time. They do not to be stored in the refrigerator or in an airtight container.
I would not suggest freezing whole Shortbread cookies, as they get pretty soft once unfrozen. But if you have stored them in the freezer, simply placing them into the oven for approximately 5 minutes, should retain the crunchiness again.
If you really want to freeze, then I would suggest already made dough. That could be stored without the problem and you can bake your cookies whenever you are in a hurry.
As most of the Shortbread Cookies, those last for approximately 1-2 weeks. My recipe is made for a small batch because we still prefer fresh ones. But you can double the recipe and store the rest of the dough in the freezer for later use.
