Dinner, at least in our family, is the only time we all meet around the table and chat. I must have meals on the table that are loved by all as well as easy to make. 

Since we are in the zone of stuffed recipes, I need to mention the stuffed Caprese chicken Hasselback recipe you must make.

Stuffed vegetables, tomatoes, and eggplants are favorites for the evening. 

And if you are planning to have guests, our stuffed zucchini mini bites or mushrooms are so beautiful everyone talks about them all the time. 

What are Stuffed Peppers?

Stuffed peppers are simply peppers stuffed with ground meat and other ingredients. You bake some and cook some in a sauce. This all depends on which part of the world you come from and what is your family’s favorite. 

Are Stuffed Peppers Keto?

Depending on the ingredients peppers are stuffed with, they also make the keto cut or not. 

For example, the recipe I am sharing is made traditionally with regular rice and is far from keto friendly. But with a few alterations, as you can see, this dish belongs and is a big part of our lifestyle.

Keto Rice

Keto rice, a part of various pasta alternatives in our lifestyle, has changed my cooking. 

Using Shirataki variations in your kitchen, like our shirataki chicken noodles recipe, makes the keto cooking extra fast. 

No need to pre-cook your pasta, you just must thoroughly wash them before adding to any dish you desire. They soak the flavor of your dish, and nobody will ever know.

What kind of Keto Rice can you use for Stuffed Peppers?

The type of keto rice to use for your stuffed peppers varies.

  • Shirataki rice is the easiest, and it only needs a proper wash.
  • Cauliflower rice is another excellent option if you have time to prepare it. You do not need to cook cauliflower as it will soften while cooking the whole dish. I have an entire post on how to make cauliflower rice in seconds.
  • Palmini rice is the third option I have yet to experiment with.

European Keto Low Carb Stuffed Peppers

One of my favorite childhood dishes, those stuffed peppers are filled with only the best and are a perfect match for your easy dinner or to warm you up during cold evenings. 

Very popular in most of Europe and my favorite.

Till now, every time I come for a visit, my mum makes sure one big pot is waiting for me in the kitchen.

Variations of European Stuffed Peppers

  • You can swap Shirataki rice with cauliflower rice.
  • Some families omit rice altogether and make stuffed pepper without rice.
  • You can replace ground beef with turkey, chicken, or pork. 
  • Swapping fat-reduced almond flour with a tiny amount of Xanthan gum or Guar gum to thicken the sauce.

European Stuffed Peppers

Banana Peppers

Banana Peppers are lighter in texture as well as taste. 

Their skin is really thin compared to the bell peppers. This makes them the perfect vegetable to cook with. 

They also contain fewer carbohydrates, a big plus we always look for. 

Widely available in Europe, banana green peppers are a trendy vegetable. 

Especially in the summer, as almost every garden has few stems growing.

How Many Carbs are in Low Carb Stuffed Peppers?

As you see, my keto recipe is for the whole neighborhood but with an outstanding carb count. I have used 12 big peppers, out of which each filled with all of the goodies is a big portion. 6 grams of carbohydrates and 2 grams of fiber brings you to a generous serving with only 4 grams of net carbs.

Some of you might already be familiar with me cooking most of the time in big pots (so I can save time for everyday cooking).

Our keto stuffed peppers with Shirataki rice are no exception. 

It comes in a huge pot, but since this dish is perfect for freezing or reheating, there goes your weekly menu preparation. 

It is also easily stored in the freezer for days when you are in a hurry.

How to Make Keto Stuffed Peppers?

STEP-BY-STEP INSTRUCTIONS FOR THE BEST KETO STUFFED PEPPERS RECIPE

First Step: Prepare Ingredients

Prepare all of the ingredients. 

Clean raw peppers and cut the stems and top of the peppers. Using your knife, clean all of the insides without breaking the peppers. Place aside and allow the peppers dry.

If you are using Shirataki rice, make sure you wash them thoroughly under warm water. They usually come packed in a liquid that has a very unpleasant taste. Later, the rice will absorb all of the flavors from the dish. 

You can mix ground beef with ground turkey or pork.

Second Step: Stuffing

Add in ground beef, eggs, washed shirataki rice, and dry ingredients into a big mixing bowl. Using your hand or a spatula, mix them all fully.

Third Step: Filling

With your hand, fill each of the pre-cleaned pepper with a stuffing beef mixture to the top of the pepper. Make sure you stuff the peppers gently but firmly so they will not spread while cooking. 

In case of some more filling left and no more peppers, not a problem. Just form balls similar in size to the ones you did fill the peppers for equal cooking time.

Fourth Step: Sauce

Using a big pot, caramelize your onion with a bit of oil until golden brown.

Fifth Step: Tomatoes

Add tomato sauce and juice into the pot and bring it to a boil.

Sixth Step: Stevia and thickeners

Add stevia tabs, fresh stevia, or any of your favorite sugar sweeteners.

At the same time, add a bit of fat-reduced almond flour and cook for another 5-10 minutes.

Seventh Step: Hand blender

Using your hand blender, blend the whole sauce. It will not only ensure all of your onion gets combined, but with this step, the color of your tomato sauce lightens up and gets into a beautiful red shade.

Eight Step: Peppers and cook

One by one, add filled peppers into the mixture and cook for approximately 1 hour.

TIPS AND TRICKS:

  • Type of rice – You can swap Shirataki rice with cauliflower or palmini rice.
  • No Rice – Some families omit rice all together.
  • Ground meat – You can replace ground beef with turkey, chicken, pork, or a meat mixture. 
  • Sauce – can be thickened with coconut flour or a tiny amount of Xanthan gum or Guar gum instead of fat-reduced almond flour. 
  • Flavor – You can add some sour cream or marinara sauce for extra flavor.

What to Serve with Keto Stuffed Peppers?

Because rice is already included, you serve this dish on its own. Our fathers used to add a few slices of bread to any dinner meal, and our farmers bread or fiber buns work great. 

Can I Use Ground Chicken Instead of Beef in Keto Recipe?

Of course, you can use any ground meat you prefer, be it chicken, ground turkey, beef, veal, Italian sausage mixed with Italian seasoning, or anything else. 

What if I Run Out of Keto Peppers?

Not a problem, and that is what we do all the time.

Once you fill up all of your peppers and you will be left with the extra mixture, shape it into bigger minced balls, trying to get a similar size of your peppers so that it will cook evenly. 

My kids prefer this dish without the pepper; therefore, the stuffed balls are their favorite.

What if I do not have Keto Rice?

Stuffed peppers without rice are a great option as well. Use bell peppers if you prefer, and make luscious Italian keto stuffed bell peppers.

Can I make Stuffed Peppers Beforehand and Reheat them?

Absolutely. This is a dish, as you see, I cook in a big pot for more than one day. Make it beforehand and reheat it whenever ready to serve. 

How do you store Keto Stuffed Peppers?

Leaving peppers in the pot, store the leftovers in the fridge. Those perfect stuffed peppers will last for up to 3 to 4 days. No longer.

Can you Freeze Stuffed Peppers with Tomato sauce?

Absolutely yes.
 I use Mason jars, as always. Depending on the size of your mason jar, fill them with single, 2, or 3 peppers and top them up with tomato sauce. It will be a perfect portion plan for the day when you need a quick dinner.

      This dish is pretty popular in Eater Europe. I as a kid loved it, well I still do, but since we have change our lifestyle into low carb, I had to come up with something similiar.

  1. We love stuffed peppers and I make many versions of them. I like to use cauliflower rice, which is available in the US. It has a few more carbs for the total but adds that flavor. I like the tomato juice idea as I do love the saucy dishes the best. I would like to try this with stuffed cabbage as well. Thanks for sharing!

  2. We definitely have stuffed peppers in the US, many kinds and no special name. I’ve never made them baked in red sauce, but right now have a batch of yours in the oven for dinner, modified using diced bacon for meat, added mushroom powder and Parmesan, with half Shirataki rice, half cauliflower rice, in a marinara sauce. Serving with sockeye salmon, salad, and keto garlic cheese rolls (from AllDayIDreamAboutFood)! Cooking nice meals will help me get through this coronavirus semi-isolation.
