Lecso is my favorite dish either for breakfast or dinner. Every time I make it, memories of my childhood come back. We used to have it quite often, mostly for breakfast in the summer, when all the lovely tomatoes and pepper were just growing in the garden.

And when I have made it last time for my friends and they all asked for the recipe for this awesome Keto Stew, I had to share it with you all as well.

What is Lecso?

Lecso, if I can describe it right for those who have no idea, is a thick stew made with vegetables only. Peppers and tomatoes together with onions are the main vegetables in here and thicken with eggs afterward, this superb Vegetable Stew is something you can not stop eating.

Lecso is something similar to Italian Peperonata which is made out of sauteed vegetables as well.

Lecso is originally from Hungary, but very popular in my country as well as Austria. My husband loves it, my daughters love it, so if I make it, a big quantity is a must

In my country, Lecso is so popular and common dish, that you will hardly find it in the restaurant because everyone just knows and makes it at home. 

Because the eggs are involved, this is the meal mostly popular for Breakfast. But it is also eaten during lunch or dinner as a low carb vegetable side dish or just when you need a quick snack. 

How to make a Vegetable Stew – Lecso?

Even though this low carb vegetable stew recipe is pretty easy and quick to make, I am still going to describe the whole process for the ones, who would like to try it for the first time.

Ingredients needed:

  • Oil
  • Onion
  • Garlic
  • Green Pepper
  • Tomatoes
  • Eggs
  • Salt & Pepper

STEP BY STEP INSTRUCTIONS ON HOW TO MAKE LECSO

First Step: Heat pan and oil

Prepare all of the ingredients. Make sure you cut all of the vegetables into really thin slices for a better taste.

Heat up the pan and add oil.

Second Step: Onions and Garlic

Once the pan is fully heated, add onion slices and cook halfway. Add Garlic and cook both fully until the onions and garlic browns up.

Third Step: Peppers

Once the Onions are caramelized, add all of the Green pepper slices and mix. Close the pan with the lid and lower the heat a bit making sure, the vegetables do not burn in the process. Cook until peppers gets soft. This might take a while since peppers are taking always the longest time to soften.

Fourth Step: Tomatoes

Once your peppers are soft, add thinly sliced tomatoes, mix all into the veggies and close the lid again for cooking. 

Cook fully until all of the tomatoes are soft again.

Fifth Step: Spices

Once all of the veggies are cooked, make sure you switch off the heat. This is very important for your eggs to stay smooth in the cooking dish. 

Let the heat be off for a few minutes. In the meantime, you can add Turmeric powder, thyme, salt, and pepper.

Sixth Step: Eggs

Once the baking pan has been switched off for a few minutes, take your eggs and with the whisk, mix egg yolks and egg whites in the glass before pouring. Make sure the eggs are mixed in to smooth consistency.

Seventh Step: Mix

Slowly pour the whole mixture onto the vegetables and start mixing the eggs in with your wooden spatula.

Do not switch the heat on anymore. The eggs will cook themselves inside the vegetables even without the heat. 

Keep mixing until eggs thickens and that is the time you can serve. 

If you switch the heat on in this process, the eggs will curd up because of the acidity of the dish.

Tips:

  • Eggs – never add them when Lecso is still boiling. Switch the heat off and wait a few minutes. And only then add the eggs and mix. 
  • Onions – you can add dry onions if you need more.

What do you serve with Vegetable Stew Stew?

As already mentioned, Lecso goes perfectly with any meat dishes. Serve it next to the sausage or Cauliflower rice. Spread it onto the Keto Farmers Bread for a perfect Breakfast option.

Can Lecso Vegetable Stew be made Vegan?

It can with omitting the eggs. 
Even though Lecso and eggs go together, there are some countries and families, which do not add eggs into this dish. 
How do you eat Lecso Vegetable Stew?
Lecso can be served either hot or cold, on its own, with meat or even as a pasta sauce.
This Vegetable Stew is perfect as a side dish with your dinner or you can top it up onto your steak. Yum. 

Can you freeze Lecso Vegetable Stew?

You can freeze lecso without the problem. The best is to fill your mason Jars for serving portion control.
Once you decided to freeze this vegetable stew, I would suggest, freezing it before adding the eggs. The same way as preserving or canning it. Eggs should be added only once the lecso is ready to be eaten which heating up. 

How to store a Stew?

Once you make this perfect Keto Vegetable Stew dish, you can store it in the refrigerator for a couple of days. 

Preserving or Canning lecso is very popular in Central Europe, especially in the summer, when all of the veggies are growing and the families are Canning for the whole winter.
To preserve Leso, it is best made without the eggs. They are added only once the jar gets opened and lecso gets heated up.

Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • Oil
  • 2 Big onions
  • 5 Cloves of garlic
  • 3 Green pepper
  • 4 Tomatoes
  • 4 Eggs
  • Turmeric powder
  • Thyme
  • Salt
  • Black Pepper
  • Chili - optional

Instructions

  1. Cut onions, garlic, pepper and tomatoes into a thin slices
  2. Coat the bottom of the pan with olive oil,
  3. Heat the pan on medium high heat until the oil is shimmering.
  4. Add the onion slices and garlic and stir to coat them with the oil. Spread the onions and garlic out evenly over the pan and let cook, stirring occasionally.
  5. Once a bit brown, add pepper slices and cook until soft
  6. Add tomatoes slices and continue cooking, stirring occasionally
  7. Add salt, pepper, thyme and turmeric powder and mix well
  8. Once all the vegetables are soft set the pan aside
  9. Once aside, add eggs and keep stirring, until eggs are completely cooked in the mixture.
  10. You can then add Chili if you do prefer it spicy or omit it completely.
  11. Bon appetite

Notes

Adding Eggs - before adding eggs into the vegetable stew, make sure you have switched the heat off. Let the stew sit for few minutes and only add eggs after. Fully mix them in and they will cook in no time.
