My favorite Baked Sausage and Sauerkraut Recipe made with Homemade Low Carb Sausages, and Sauerkraut with its tanginess is one dish you will enjoy even if you are not fond of actual sauerkraut. Homemade Sausages

Even though this recipe is perfect with almost any kind of sausage, I do prefer and suggest making your own. 

After making our Low Carb Sausages with Sausage Seasoning for the first time and realizing how super easy it is, I will for sure not be buying any in the shop. 

I know exactly what goes in and can use it for various other sausage recipes such as Sausage Balls, Sausage Gravy, and today’s Oven Baked Sausage and Sauerkraut Recipe.

Sauerkraut Recipes

Sauerkraut is one of the ingredients in our kitchen we all love. As we live in Europe, sauerkraut has been widely popular and used in dishes since kids. 

My parents used to make, and they still do their own sauerkraut from cabbages grown in the garden. Fermenting the cabbage mainly was to prevent the cabbage from spoiling quickly. 

Our Sauerkraut Soup is a must on the Christmas table, and wherever in the world we lived, it was a must. 

I even remember our St. Lucia Christmas, when my husband and my brother were sweating from eating a bowl of hot Sauerkraut Soup. 

But it had to be eaten, otherwise … well, no Christmas.

The second recipe I made for all of you is Sauerkraut Chicken, which I combined with yogurt and let me tell you. Everyone fights to get a bigger portion whenever this is on the table. 

I always have at least 2 to three bags of fermented sauerkraut in the kitchen, and from now on, you should have it too. Sauerkraut casserole is another delicious meal you should try.

What is Sauerkraut?

I have written a lot about sauerkraut in my Sausage Sauerkraut Soup Recipe, but to briefly summarize it all, I will add a few words here. 

All of Eastern Europe and Germany, from where the name comes, are preparing sauerkraut dishes you can find in almost every restaurant. 

The most popular time to serve sauerkraut is around autumn, when all of the fresh summer vegetables stop growing and heavier, winter dishes are prepared. Sauerkraut goes perfectly not only with sausages but also with pork or duck. 

Bratwurst and Sauerkraut have become worldwide famous for serving it yearly during Oktoberfest, but frankly, it is used all over Europe. 

Sauerkraut is perfect as a filling for savory pockets. In our case, fathead dough I fill them into at all times. 

How Healthy is Sauerkraut?

Sauerkraut is fermented cabbage with as many health benefits as every fermented veggie is. Some of the Benefits of sauerkraut are listed in this article. 

How does Sauerkraut taste?

Sauerkraut has a distinguished flavor and aroma, which not everyone loves. 

Its sour and tangy taste is something you will learn to love over time. 

You can even buy sauerkraut juice in my country, which is excellent as your daily breakfast drink to start your day. 

I am in love with anything sauerkraut. Every time I open a package, I squeeze at least half of the glass with liquid to drink myself. 

What to do with the smell and intense taste of sauerkraut?

You can always juice all of the liquid from sauerkraut by squeezing as much liquid as possible.

To eliminate the sour and tangy taste, you can also wash the sauerkraut under tap water.

But frankly, all of the goodies and healthiness are in the liquid and natural, not washed sauerkraut. 

If you can learn how to like it, considering how healthy it is, you will soon start loving the taste. 

What to do with the liquid from Sauerkraut?

In my recipe, I have used all of the sauerkraut together with liquid as this is the best tasting Sauerkraut and Sausage dish there is. And you would not have to use extra water to prevent sauerkraut from burning. 

Do not ever throw liquid from sauerkraut. It is so nutritious. 

They are even selling pure sauerkraut juice here, and I love to buy it. Every time I cook sauerkraut. I pour a bit of juice for myself. I love it to bits. Especially knowing how healthy and nutritious this is.

What type of sausage can you use?

In general, anything from our Homemade Sausage to store-bought in various shapes, fillings, raw, or smoked. You can pick from:

  • Bratwurst – german recipe of baked bratwurst and sauerkraut
  • Polish Sausages
  • Kielbasa
  • Homemade Sausages
  • Smoked Sausage
  • Oktoberfest Sausage
  • Summer Sausage
  • Italian Sausage
  • Breakfast Sausage
  • Black Pudding Sausage

Is it difficult to make your own sausages from scratch?

To make your own sausages is not difficult at all. After making them myself, I have realized anyone can make them without any issue.

How long does it take to bake sausage and Sauerkraut?

The length of baking your sauerkraut and sausage depends on the actual sausages you are using. 

If you will make our homemade Low Carb sausages, which are made from raw minced meat, you will for sure need to bake sausage in the oven for at least 40 minutes as prescribed.

But just in case you will use sausages, which are already smoked or Kielbasa, or already baked sausage links which can be eaten as it is, then all you have to do is kind of warm-up your sauerkraut. 

Therefore, you might need approximately ten to fifteen minutes for the whole dinner. 

What can you add to a Sausage sauerkraut dish before baking?

Our recipe is made purely from homemade sausage, which is already perfectly seasoned with homemade seasoning and only sauerkraut to get the most flavor from the sauerkraut, so I have not added anything else. 

But you can go ahead and experience with adding:

  • Brown Sugar
  • Bacon Bits
  • Chopped Onions and Garlic
  • Caraway Seeds – Caraway seeds are a vital ingredient in all sauerkraut recipes. Still, I am not fond of them, so I have decided to skip them altogether. 
  • Chopped Zucchini instead of apples for our lifestyle

How To Bake Sausage and Sauerkraut?

Here comes the full recipe for sausage and sauerkraut broken into steps, tips and tricks as well as gadgets and ingredients needed.

STEP BY STEP INSTRUCTIONS TO MAKING THE BEST OVEN BAKED SAUSAGE AND SAUERKRAUT

First Step: Ingredients for Baked Sausage Sauerkraut

It is super easy to prepare two ingredients only for our baked sauerkraut and sausage recipe.

All you need is a sausage which, as I have mentioned above, you can either choose a store-bought one or if you would like, you can make your own with our homemade sausage recipe.

Regarding the sauerkraut, you can either use everything together with the liquid coming from the sauerkraut.

If you do not like the taste or it is too sour for you, you can store the water for later on and squeeze as much liquid from the sauerkraut as possible.

You can also wash the sauerkraut, but I don’t usually suggest this, as the liquid contains all of the great healthiness you get from the fermenting vegetables.

At the same time, preheat the oven to 180C or 350 Fahrenheits.

Second Step: Roast the Sausage

Using a cast-iron or any pan that could be placed into the oven, start roasting the sausages.

Make sure you roast them from each side to stay perfect and compact.

Third Step: Add Sauerkraut

Next is to add the sauerkraut.

In my video, I have not washed, squeezed, or thrown the liquid. We love it that way.

Place all of your sauerkraut around the sausages. And add the liquid.

Fourth Step: Cover and Bake

Cover your cast-iron with aluminum foil, as I have done since I do not have a cover, or use a lid for the particular pot you are using. 

Place into the oven and bake for 40 minutes at 180 Celsius or 350 Fahrenheit.

The timing is for the homemade sausage I have made, where the sausage is completely raw and not cooked or smoked beforehand.

If you’re using a store-bought sausage that is already smoked or pre-cooked, you do not need to leave the dish in the oven for 40 minutes.

Tips and Tricks:

  • Wash – drain and wash the sauerkraut if you do not like the strong fermented flavor.
  • Sausage – you can use either a homemade sausage recipe or pick from a few suggestions I have mentioned above in the article.
  • Baking time – 40 minutes is the time if you are using homemade or any other raw sausages. If you have a sausage already pre-cooked or smoked, 20 minutes would be sufficient.

You can perfectly freeze this keto meal. I would suggest a single portion of it into the glass container to be easier later on while thawing.
