And once I made the cut and the melted mozzarella cheese just floated out of the slice, I got hooked and decided to share this meatloaf recipe with you.

Using ground beef in recipes to make keto or low carb comfort food is one of the easiest ways to get all of the Protein in without compromising on carbohydrates. You can transform an ordinary ground beef recipe into a unique wholemeal dish everyone loves with just a few simple ingredients. 

After our special keto meatloaf recipe, my second favorite is making Mini Burgers. Apart from the ground meat, you can hide as many vegetables as pleased, and nobody will ever know. 

My latest obsession is making Homemade Sausage and Bolognese Sauce, which I make regularly.

Not to mention our super easy Taco meat, which is filled with the best Mexican flavors and used in all of our Taco Recipes.  

And just in case you still have some minced meat left, our Portobello Keto Burgers made with  Bunless Bacon Burger is also a must.

What type of Ground Beef is best for Meatloaf?

Frankly saying, as long as you have the best quality meat, it doesn’t matter what type of meat you will use to make meatloaf. Be it beef, pork, turkey, veal, chicken, or a mixture of some. The dish will always come super delicious. 
I love combining lean meat with fatty parts so the meatloaf sticks together.

How many carbs are in meatloaf?

An ordinary meatloaf recipe filled with regular breadcrumbs will skyrocket your meatloaf carbs even though you might not think so.
But the great news is that with our Low Carb meatloaf Recipe, the carbs in a meatloaf are really minimal. One slice of this greatness gets you 3 grams of carbohydrates together with 1 gram of fiber. 
Total Net carbs are 2 grams of carbs per a pretty thick slice of ketogenic meatloaf. 

What do you use for keto meatloaf binding?

Once you have the mixture of lean and fatty ground meat, there is not so much you need for a low-carb meatloaf binder. 
I only used whisked eggs in our recipe, which was more than enough.

How To Make Low Carb Meatloaf

  • Dried Marjoram

  • Buffalo Mozzarella
  • Leeks
  • Dry Garlic – optional
  • Salt & Pepper

STEP BY STEP INSTRUCTIONS FOR MAKING THE BEST LOW CARB MEATLOAF RECIPE WITH CHEESE AND LEEKS 

First Step: Prepare Ingredients

Prepare all of the ingredients needed for our low-carb meatloaf recipe.

In our case, it is minced meat, eggs, leeks, dried marjoram, salt, pepper, and, if needed, dry garlic. 

At the same time, heat the oven to 180 Celsius or 356 Fahrenheit

Second Step: Prepare Leeks

Clean and cut the lower white part of the leek (approximately 10 centimeters), chop it into small pieces, and add it to the bowl with minced meat. 

The rest of the leeks separate into single leaves as they would be used for packaging the meatloaf.

Third Step: Add other Ingredients

Add eggs and herbs into the mixing bowl with minced meat and chopped leek. Combine all.

Fourth Step: Cook Leek

Place a big pot with water to boil. Once boiling, add leaves from leek and cook for 3-4 minutes.  Remove the leak leaves from the water, pour cold water over them to set the color, and set them aside to dry a bit.

Fifth Step: Layer your meatloaf

Start layering your meatloaf dish. Arrange the leek leaves on the bottom of the pan with the sides leaning over as described in the video. 

Once your sheets are layered, fill half of the pan with mixed meatloaf and add two mozzarella bowls into the middle. Cover it with the rest of the meat mixture.

Finish up by covering the whole dish with the leek ends and, if needed, add more leaves, so the entire dish is covered.

Cover with aluminum foil, place it in the oven, and bake for 40 minutes.

Once 40 minutes are done, take out the aluminum cover and bake for an additional 10 minutes.

Tips and Tricks:

  • Ice cold water – should be poured over the cooked leek to retain the beautiful green color
  • Aluminum Foil – cover the loaf pan before baking to retain the green color of the leeks
  • Flavors – add your preferred seasoning, ketchup, or mustard.

Our recipe with cheese and leeks is a complete comfort dinner, and there is nothing much you can add to the plate.

But if needed, I would suggest:

Simply placed in the glass container, this meal stays perfect in your refrigerator for 3-4 days. 

Can you freeze Keto Meatloaf?

You can undoubtedly freeze our Low Carb Meatloaf.

I would suggest portioning it before freezing for easier meal planning.

Once ready to consume, it is best to take it out of the freezer the night before and let it thaw naturally in the fridge.

    This has quickly become a family favorite. My daughter tops hers with a mixture of barbeque sauce and ketchup and always wants to make a meatloaf sandwich with leftovers the next day.
