What are Chia Seeds?

Chia seeds are tiny, edible, oval white seeds with small gray and black spots. Placed into the liquid, they thicken it with a gelatinous structure around each seed. 

Each chia seed can absorb up to 20 times the liquid they are soaked in. As each seed expands, the thickening process results in a pudding-like texture.

Therefore, it is trendy to make various desserts, smoothies, energy bars, and cereals without additional thickeners.

Even though black chia seeds are most known and popular, white chia seeds exist as well, and I love using them for my recipes.

They do keep the color of a pudding brighter. Especially in our rainbow recipe, each of the pudding shades retains the particular color of either berries, matcha, or other natural colorings.  

Chia seed pudding for weight loss has been one of the most popular. You only need a liquid of your choice and a few tablespoons of chia seeds. 

They can be used as a whole or grounded in the grinder into a powder for smoother consistency in the end recipe. 

Are Chia Seeds Keto?

Even though chia seeds have a bit more carbohydrates than expected, their high fiber intake makes them a perfect addition to the keto lifestyle. 

One tablespoon of chia seeds contains 5 grams of carbohydrates. With its 4 grams of fiber, our net carbs calculation comes to a perfect 1 gram of net carb per tablespoon of chia seeds. 

Is Chia Pudding Keto?

Making chia pudding from chia seeds, one of the milk alternatives and sweeteners makes any pudding fully keto chia seed pudding. 

What Milk alternatives can you use for keto chia pudding?

Making chia pudding fully keto is not difficult at all. Even though you might think there are not a lot of options to use instead of milk, I have to tell you, that is not true at all. 

Even though I prefer almond milk to make chia puddings the most because of its neutral taste, many other nuts or seed milk alternatives are available.

Whether you pick our second favorite coconut milk or even make milk for the actual chia seeds, I can confirm your pudding will taste delicious every time. 

And if you will not have enough ideas, pick milk made from walnuts, hazelnuts, pecans, macadamia, brazil nuts, sunflower seeds, pumpkin seeds, hemp seeds, or sesame seeds.

What sweetener is best for making keto chia pudding?

Even though I do not sweeten my chia pudding at all, because I just love the taste of natural chia pudding, you can pick from one of the sugar alternatives I use and suggest for our lifestyle and prepare a sugar-free pudding. 

As keto chia pudding does not need to be cooked or baked, you can use any of the sweeteners you have in the kitchen. 

Apart from the familiar erythritol, Monk Fruit, stevia, and Allulose-based sweeteners, you can also use one of our homemade low-carb sweetener with some liquid alternatives.

Calories in Chia Pudding

Making chia pudding with almond milk and seeds only, makes Chia Seed Pudding Calories very minimal. One serving of chia pudding contains 120 grams of calories, which is perfect for filling you up for longer first thing in the morning.  

Just watch out for the portions, as this pudding can get addictive. I had a stage where I could eat 5 cups a day every single day. And then, of course, the calories add up, and we all know what comes next.

You get a perfect pudding consistency with my basic calculation of using ¼ cup of chia seeds for 2 cups of milk alternatives or 3 tablespoons to one cup of liquid.

Rainbow Chia Pudding 

Getting closer to making our super colorful chia pudding, I will offer you some ideas and options. 

Without needing to use sweetener, you can flavor your chia pudding using various berries, which each adds a perfect color to make a beautiful rainbow. 

Blueberry Chia Pudding

I have used frozen wild blueberries for blue chia pudding. You can also use blue spirulina for natural coloring. 

Regular Blueberries give you a beautiful deep bordeaux color.

Raspberry Chia Pudding

Matcha Chia Pudding

But we do not stop there. You can even make a Matcha Chia Pudding using your pre-made concentrated matcha tea for a perfect green pudding.

Other berries you can use are strawberry, cranberry, bilberry, blackberry, sea buckthorn, cowberry, goji berry, gooseberry, black currants, red currants, or mulberry.

Once you are done with your favorite choice of low-carb chia seed pudding, the next comes to make it even prettier to serve.

As you can see in one of the photos, I have even made mini rainbow chia pudding cups for our party and decorated them with pieces of berries and mint leaves.

How do you make Chia Pudding?

If you omit the coloring part, this is the easiest and quickest way to make something delicious even when you do not have much time for breakfast or a quick snack during the day.

I always make one big badge, keep it in a glass container in the refrigerator and take out a bit every time I have a sweet tooth. They last in the fridge for more than a week.

STEP-BY-STEP INSTRUCTIONS FOR MAKING THE BEST AND EASIEST RAINBOW KETO CHIA PUDDING

First Step: Ingredients needed

Prepare all of the ingredients, in our case, almond milk and chia seeds. If you plan to make colorful chia pudding, prepare berries of your choice.

Second Step: Prepare Basic Chia Pudding

Using our chia pudding ratio of 3 tablespoons of chia seeds to one cup of almond milk, place it all into the bowl and mix. After about 10 minutes, remix it as some of the chia seeds might accumulate together and form thick uneven balls. 

For a faster thickening process, you can place a mixing bowl into the fridge mixing from time to time to separate all the seeds into one consistent thick, smooth mixture. 

The bigger the batch is, the longer it will take for the whole pudding to form. This should take approximately 15 to 30 minutes. 

If you are planning to only make white chia pudding, you can stop here and enjoy it.

Third Step: Cooking your Berries

For making our rainbow palette, pick your chosen berries and bring them to boil. Cook them on medium heat, ensuring most of the water evaporates, and you have thick consistency left. As additional liquid might hinder the thickness of your pudding, try to get your sauce as thick as possible.

Fourth Step: Coloring with sauce

Pour your cooked berry sauce each separately into a glass jar through the sieve to get rid of all the skin and seeds from the berries. 

Depending on the number of colors you have chosen, split your white base chia pudding into glass jars and fill each with the berry sauce selected. Mix until the sauce is incorporated into the pudding and forms a beautiful color.

Fifth Step: Layering

To start layering, pick your colors and, one by one, start layering your colored chia pudding into the serving glasses. The layering choice is really up to you, and I have tried to add some pictures for you to look at which one you like the best.

Sixth Step: Decorating

Once your glass is layered with chia pudding, you can decorate it with berries or chosen toppings I have mentioned above.

Tips and Tricks:

  • Stir – while the pudding is thickening, stir it every 10 minutes to avoid clumps of chia seeds forming.
  • Too thick – If your pudding is too thick, add a few tablespoons of almond milk and stir again.
  • Too liquid – On the other side, if your pudding is too runny, add 1 to 2 teaspoons of extra chia seeds, mix, and wait 10 minutes.
  • Smooth – If you would like to make your pudding smooth, place it all into the blender and blend.
  • Additions – For extra nutrition, you can also add collagen, protein powder, or MCT oil.
  • Warm breakfast – If you prefer warm pudding, simply warm it up in your microwave before serving. 
  • Berries – choose strawberry, raspberry, blueberry, bilberry, blackberry, sea buckthorn, cowberry, goji berry, gooseberry, currant, and mulberry.
  • Alternative – you can use flaxseeds to make flaxseed pudding using the same steps and instructions.

How do you store Keto Chia Seed Pudding?

Storing our base Chia Pudding in the refrigerator is a perfect option for meal planning as it will last for up to a week. Make a big badge and use it throughout the week.

If you are coloring with fresh or frozen fruits, keep those separate as with fresh fruits, the pudding will last only for about 2 to 3 days. 

Can you freeze Chia Pudding?

You can certainly freeze your chia pudding. Once you take it out of the freezer, it is best to let it thaw naturally overnight in the fridge. Mix well before serving.

      I promise you will get addicted to it. I have to stop thinking about it, otherwise, I get into doing 2 liters in one go, have it in the fridge and eat every time I am hungry.

  2. Is it true if you eat these seeds in this form do you lose weight. I see these chia seeds in this form in advertisements to buy a diet pill. If this is true,what have I’ve been putting off. I have a whole unopened bag to afraid to eat.

      Chia seeds are very healthy and great as an addition to a low Carb or Keto Lifestyle. But they are definitely not associated with some diet pills. We do not support losing weight with pills or anything else. The best way is to choose the proper food low in Carbohydrates. But chia seeds alone will not do the magic. In the end, it is still the calories that count.
