After I have posted my super Easy Homemade Keto Gnocchi for the first time, I could not believe how many people have tried and made them. The emails and messages I got made my every day extra special and filled me with so much drive to invent even more recipes you would love.

Having been able to make various shapes of Gnocchi with this recipe, I have followed with our Spinach Gnocchi as well as Bacon and Cream Gnocchi Recipe. Well, we all need bacon in our life.

And then I got one more idea

Keto Gnocchi Tomato Basil

A perfectly craved Keto Dinner for your Italian evening with the flavors of Basil Pesto, Garlic, and Fresh Cherry Tomatoes. Sprinkled with fresh basil leaves at the end, just made our evening extra special. We have enjoyed our dinner with our favorite Italian music and glass of wine and talked about all of the trips we have made. 

How fabulous one evening can be if you put just a tiny bit of effort into it?

Fusilli Pasta Shape

For this recipe, I have decided to go with the Fusilli or Spirelli shape for our Gnocchi as this beautiful shape catches the garlic together with Basil Pesto the most. 

But as you see in our Keto Gnocchi post, you can experience basic Gnocchi shape or Orechiette as well.

Because we are having an Italian evening here, pesto is a must in our recipe. You can try making them with our Wild Garlic Pesto if the season allows or you can get hold of it, but frankly, Basil is one Herb, that gives you this special Italian feel.  

And as tomatoes are involved, Basil Pesto is a must.

This is the question, I have gotten from quite a few people. 
I can honestly say, that even if you are not fond of coconut flour or its taste, there is not a single trace you will taste. If I would not tell you what are they made of, you will never realize Coconuts are involved. 

For some reason, by combining all of the ingredients together, the flavor of coconuts is completed diminished.

STEP BY STEP INSTRUCTION ON HOW TO MAKE ITALIAN KETO GNOCCHI

First Step: Keto Gnocchi

If you already have your Keto Gnocchi prepared, skip to step 4.

Mixing all of the ingredients for Keto Gnocchi, start preparing the dough.

If you have not made them before, it is better to have a look at the post I have written, where the whole video and steps are attached for easier understanding. 

Once your dough is fully combined, separate it into four pieces and roll each into a thin log. 

With your cake scraper or a knife, cut small identical pieces out of the log until you’re finished with all of the dough.

Second Step: Shape Fusilli

Using the wooden gnocchi board, start shaping your fusilli. For a better understanding look at the video with step-by-step instructions.

You can prepare your gnocchi a day or two in advance and have them stored in the refrigerator.

Third Step: How to cook Gnocchi

Once you have your gnocchi prepared in the shape of a fusilli, take them out of the fridge and place them into the salty boiling water where you have added 1 tablespoon of extra virgin olive oil. 

Olive oil helps greatly in our homemade Gnocchi not sticking to each other.

Cook for approximately five minutes and using your sieve, take them out of the boiling water as you normally would with any pasta.

Fourth Step: Ingredients

Prepare all of your ingredients together.

Fifth Step: Garlic

For the sauce, heat up your pan and add extra virgin olive oil together with crushed garlic. Cook it until golden brown.

Sixth Step: Tomato & Pesto

Add your cherry tomatoes cut into smaller pieces together with half a tablespoon of basil pesto. Mix and cook for a few minutes.

Seventh Step: Gnocchi & Fresh Basil

Once you see that your tomatoes are getting softer, add fresh basil and pre-cooked gnocchi into the pan.

Eight Step: Mix

Mix, cook for a few minutes and serve immediately.

Tips and Tricks

  • Shape – As you see I have decided to use fusilli shape Gnocchi since this catches the garlic and pesto the most. You can pick your own shape.
  • Serving size – The whole recipe is calculated into three servings. Bear in mind that even if the portion looks too small, gnocchi are extremely filling and you might not be able to finish the whole dish.
  • Gnocchi – You can prepare your gnocchi a day or two in advance and have them stored in the refrigerator.

How do you store Keto Gnocchi?

You can store our keto gnocchi in a glass container in the refrigerator for approximately 3 to 4 days.

I would suggest storing gnocchi separately and make the preferred sauce fresh on that day.

Can You Freeze Keto Gnocchi?

You can certainly freeze our keto gnocchi as you would freeze normal french fries or gnocchi. 

Once you shape your gnocchi place them into a Ziploc bag and freeze.

Whenever you’re ready to use them for your cooking, take them out of the freezer the night before and let them thaw naturally.

Cook them only after they are unfrozen.
